Number Of Ingredients 10

1 teaspoon each cumin, and dried oregano dried basil
salt and pepper, to taste
3 cup canned crushed tomatoes
2 lbs lean ground beef
1 tablespoon chopped garlic
2 cups chopped onion
2 cups chopped green bell pepper
2 tablespoons vegetable oil
1 lb box elbow macaroni
2 to 3 cups grated cheddar cheese

Steps:

  • Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and sauté until soft. Add the ground beef and sauté until browned. Add the tomatoes, salt and pepper to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. Spread this mixture into a 9 x 13-inch baking dish. Top with the cheese and bake at 350°F for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.
  • Cook's Note: Ground turkey or chicken can be used in place of beef, if desired.

1 pound ground beef
1 (10.25 ounce) can condensed tomato soup
1 (11.5 ounce) can tomato juice
1 (10 ounce) can whole kernel corn, drained
1 ½ cups shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, brown the ground beef until no pink shows; drain excess fat. In the large pot, combine macaroni, beef, tomato soup, tomato juice and corn; heat through. Stir in cheese.

1/2 cup chopped onion
2 cans (8 ounces each) tomato sauce
1 cup water
1 package (7 ounces) macaroni
1/2 cup chopped green pepper
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet over medium-high heat, cook beef and onion until the meat is no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until macaroni is tender, stirring occasionally, 20-25 minutes. Add more water if needed.

  • 1. Place chopped onions, bell peppers, and ground beef in large skillet that has been sprayed with Pam. Cook until ground beef is well done.
  • 2. Cook elbow noodles in water for 9 minutes.

8 ounces medium pasta shells
3 tablespoons unsalted butter
1 small onion, chopped
1 tablespoon tomato paste
1 tablespoon chili powder
8 ounces ground beef
2 tablespoons all-purpose flour
1 cup low-fat (1 percent) milk
2 1/2 cups shredded Mexican cheese blend (about 8 ounces)
2 tablespoons breadcrumbs (preferably panko)
2 scallions, thinly sliced

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. Spread over the beef mixture. Mix the remaining 1/2 cup cheese and the breadcrumbs; sprinkle over the pasta mixture and broil until golden. Top with the scallions.

This tastes so much better than any canned or frozen Beef-A-Roni, and it's so easy to make! This recipe makes a lot and I freeze individual portions for quick lunches/dinners down the road. If you don't want such a large quantity, the recipe is easily halved. Oh, and P.S. - as with most recipes of this type, it tastes even better the second day!

1 1/2 lbs lean ground beef (or use ground turkey or even ground chicken)
1 medium onion, peeled and chopped
2 garlic cloves, peeled and finely chopped (or press through a garlic press)
2 (28 ounce) cans whole tomatoes, whirled in blender for just a few seconds (should resemble "chunky" tomato juice)
1 (14 ounce) can chicken broth
1 3/4 teaspoons kosher salt (if using table salt, use about 1 tsp.)
1 teaspoon chili powder (optional)
1 3/4 cups elbow macaroni, uncooked

Steps:

  • Cook ground meat in a large Dutch oven type pot over medium heat, breaking meat apart during cooking.
  • Drain off any accumulated grease or fat.
  • Add and stir in onion, garlic, salt, chili powder, tomatoes and chicken broth.
  • Cook about 30 minutes, stirring occasionally, until onion is no longer "crunchy".
  • Stir in the macaroni and continue cooking for about 12 minutes or until pasta is just al dente.
  • Turn off the heat so macaroni doesn't contine to cook and get all mushy.
