2 halibut fillets
2 tablespoons butter
2 tablespoons finely chopped tarragon (or other herb of your choice) or 2 tablespoons finely chopped dill (or other herb of your choice)
salt and pepper, to taste
1 teaspoon olive oil

Steps:

  • Make little aluminum foil trays sized to fit each fillet.
  • Wipe the bottom of each tray with olive oil.
  • Put the fillets ugly side up (skin side even if the skin is now removed) on the trays.
  • Mix the butter with the chopped herbs throughly.
  • Place 1 tablespoon of the butter on the halibut.
  • Broil for 4 minutes.
  • Carefully turn each fillet over, not spilling any of the melted herb butter.
  • Broil for 4 more minutes.
  • Remove and plate, pouring the melted sauce over each fillet.

2 teaspoons soy sauce

  • In a small saucepan, combine the first six ingredients. Cook and stir until butter is melted. Remove from the heat; set aside., Grill halibut on greased rack, covered, over medium heat or broil 4 in. from the heat until fish just begins to flake easily with a fork, basting frequently with butter mixture, 4-5 minutes on each side.

I made these quick and easy halibut fillets for my husband's birthday as halibut is his favorite fish. It's really important that the halibut is seared over really high heat. Serve with rice and green beans.

4 tablespoons melted butter
4 tablespoons liquid honey
1 large lemon, juiced
4 teaspoons liquid aminos
1 teaspoon ground black pepper
4 cloves garlic, minced
1 (2 pound) halibut fillet, cut into 4 pieces

Steps:

  • Combine melted butter, honey, lemon juice, liquid aminos, pepper, and garlic in a small bowl; mix to combine.
  • Brush both sides of the halibut fillets with the butter sauce.
  • Heat a cast iron skillet over very high heat. Add halibut filets and sear on each side for 90 seconds. Reduce heat to medium-high and cook on each side until fish can be easily flaked with a fork, 2 to 3 minutes per side.

4 (3 -4 ounce) halibut fillets, cut into 3 - 4 oz portions
1 cup butter, melted
1 teaspoon seasoning salt, Johnnys
1/2 teaspoon black pepper
1 teaspoon garlic powder
2 cups Ritz crackers

Steps:

  • Preheat oven to 400 degrees.
  • Cut filets into 3 - 4 oz portions. (Fist size).
  • Melt Butter.
  • Crush Ritz Crackers into crumb size pieces.
  • Mix together dry ingredients.
  • Dip halibut into melted butter then into cracker mixture.
  • Place on baking sheet.
  • Pour remaining melted butter over halibut.

1 tablespoon all-purpose flour
8 ounces fresh baby spinach
1 small onion, finely chopped
4 (4 ounce) halibut steaks
2 tablespoons butter, melted
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon black pepper
1 lemon, thinly sliced
¼ teaspoon Crushed red pepper

Steps:

  • Preheat oven to 400 degrees F. Add flour to a Reynolds® Large Oven Bag. Shake. Place bag in 2-quart rectangular baking dish at least 2 inches deep.
  • Place spinach in bag; sprinkle with onion. Top with fish. Stir together the butter, garlic, salt, and black pepper. Brush over fish. Arrange lemon slices over fish. Close bag with tie (found inside package). Cut six 1/2-inch slits in top of bag to allow steam to escape. Tuck ends of bag in dish.
  • Place dish in oven, allowing room for bag to expand during cooking without touching heating elements, wall, or racks. Bag should not hang over dish.
  • Bake 20 minutes.
  • Cut open top of oven bag carefully. Remember: Always support bag with the dish.

1 tablespoon lemon juice

Steps:

  • In a small bowl, combine the oil, sauce mix and lemon juice.
  • Brush over both sides of fillets.
  • Place in a greased 13" x 9" baking dish.

1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon Diamond Crystal kosher salt
1/8 teaspoon cayenne pepper
4 (6 oz) halibut fillets, (1 to 1/12-inch thick)
2 tablespoon butter

Steps:

  • In a shallow dish, whisk together the paprika, thyme, oregano, onion powder, garlic powder, kosher salt and cayenne.
  • Sprinkle the halibut fillets with the seasoning mixture, pressing with your fingers to help the coating adhere.
  • Heat a large nonstick skillet over medium-high heat, 2-3 minutes. Traditionally you would use a cast iron skillet, but I use a nonstick hard anodized aluminum skillet to minimize the risk of sticking.
  • Add the butter to the hot skillet and swirl to coat. Add the halibut fillets. Cook 4 minutes on each side, until the fillets turn from translucent into opaque and white (it's fine to cut a small slit and peek).
  • Spoon the pan juices on top of the fish, and serve.

  • Combine butter, honey, lemon juice, soy sauce, pepper, and garlic in a small bowl.
  • Portion halibut by cutting it into 3 or 4 pieces with a sharp knife. Set aside a little of the marinade and brush each side of the halibut with the remaining butter-honey mixture.
  • Heat a skillet over high heat until it is sizzling hot - test by adding a drop of water to the skillet. If it sizzles and immediately evaporates when it hits the skillet, it is hot enough. 2 tablespoons extra virgin olive oil
6 ounces Spanish-style chorizo, cut into 1/2-inch cubes
1 large onion, finely chopped
1 bulb fennel, trimmed and thinly sliced
4 cloves garlic, minced
⅔ cup white wine
2 (14.5 ounce) cans diced tomatoes, with juice
2 (8 ounce) bottles clam juice
24 ounces halibut, skin removed, cut into 1-inch pieces
salt and freshly ground black pepper to taste
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Heat olive oil in a large pot over medium heat until hot. Cook chorizo, onion, and fennel until onion is soft and translucent and chorizo is browned, about 8 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Pour in wine and bring to a boil while scraping the browned bits of food of the bottom of the pan with a wooden spoon, about 2 minutes. Here in SE Alaska we can be overrun w/Halibut,this is a quicky. So many variations can be applied, I adjust to whatever I have growing in garden or fridge,such as green onion, chives,cilantro.

2 lb fresh halibut fillets
1 1/2 c seasoned bread crumbs
salt & pepper to taste
1 c sour cream
1 c mayonnaise
1/2 c cooked crumpled up bacon
1 tsp liquid smoke (optional)
1 tsp dill seed (optional)
1 tsp garlic powder or granules
1 c chopped onion
1/4 c grated parmesan cheese

Steps:

  • 1. lay fillets in baking dish about 9 x 15,pushing them into place to completely cover bottom. Cover w/ seasoned bread crumbs. Salt-pepper to your taste
  • 2. mix together sour cream & mayonaisse,dill seed,garlic,grated parmesan cheese,liq.smoke. Place mixture on the bread crumbs & use a spatula,smear evenly the entire surface .
  • 3. sprinkle chopped onion, chives,green onion on the top. with oven pre-heated to 400 degr.F. It all should be about done in 20-30 min. Keep an eye on it,you know your oven-may have to adjust temp somewhat
  • 4. there are so many variations you can do to Halibut, I also grate whatever cheese you may fancy onto the top w/10min. left cooking time, makes a bit fancy.
