1 1/2 lbs boneless skinless chicken breast halves
2 tablespoons olive oil
2 tablespoons Dijon mustard
1/4 cup Bourbon
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1/4 cup brown sugar
2 garlic cloves, minced

Steps:

  • Combine olive oil and next 7 ingredients.
  • Add chicken, cover and marinate in the refrigerator for at least 2 hours or as long as overnight. Remove chicken from marinade. Discard marinade.
  • Place chicken on grill over medium heat. Grill uncovered for 15-20 minutes, turning once.

Fire up the grill for a classic southern dish named for the famed New Orleans street (not to mention its one key ingredient). Serve over rice for a savory and hearty meal.

2 lb boneless skinless chicken breasts
1/3 cup bourbon
1/3 cup soy sauce
1/4 cup olive oil
1 tablespoon grated gingerroot
4 cloves garlic, crushed
Coarse sea salt

Steps:

  • Pound or cut chicken breasts into thin cutlets. Place in resealable food-storage plastic bag.
  • In small bowl, beat bourbon, soy sauce, oil, gingerroot and garlic with whisk until blended. Pour over chicken; seal bag. Refrigerate 1 hour to marinate.
  • Heat gas or charcoal grill. When grill is heated, remove chicken from marinade; discard marinade. Place chicken on grill over medium heat. Cover grill; cook 8 to 12 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (165°F). Sprinkle with sea salt before serving.

A favorite named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient; although this dish, sold as Cajun-style cuisine in malls all over America, is reported to be nothing of the kind (not genuine Creole or Cajun fare)! Note: If you double the recipe, make sure that the chicken is still in a single layer. Laissez les bons temps rouler!

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
½ cup packed brown sugar
⅜ cup bourbon
½ teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

Found this recipe years ago. It is a little different from some of the other grilled bourbon chicken recipes on Zaar. There is no ketchup in this recipe and it is not spicy. You can certainly add a few dashes of cayenne pepper or red pepper flakes to kick it up a notch. Time indicated below does not include marinating.

3 lbs chicken pieces (wings, breasts, thighs, whatever your preference)
1/2 cup soy sauce
1/2 cup brown sugar, firmly packed
1/3 cup Bourbon
2 tablespoons dried onion flakes
1 teaspoon ground ginger
1/2 teaspoon garlic powder

Steps:

  • In a large bowl, combine all ingredients, except chicken, to make the sauce. Set aside ½ cup of this sauce for basting the chicken later while grilling.
  • Add chicken to the bowl of remaining sauce, tossing chicken to coat with sauce mixture.
  • Cover and refrigerate for at least 3 hours.
  • Drain chicken, discarding marinade.
  • Grill chicken, basting often with reserved sauce, until chicken is cooked through (about 20 to 30 minutes depending on the size and cut of chicken pieces).

This bourbon chicken is like a few others but I like to grill chicken thighs and baste with some sauce. I then cut and transfer to the sauce. It is very much what the Chinese vendors in the mall serve.

2 lbs chicken thighs, grilled whole then cut into bite-size pieces
1 -2 tablespoon olive oil
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice or 1/4 cup Bourbon
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Steps:

  • Add chicken pieces to grill and cook until lightly browned.
  • Remove chicken.
  • Heat oil in a large skillet.
  • Add remaining ingredients to skillet, heating over medium Heat until well mixed and dissolved.
  • Add chicken and bring to a hard boil.
  • Reduce heat and simmer for 20 minutes.
  • Serve over hot rice and ENJOY.
