Marinate chicken in a delicious mixture of oil, vinegar, dill, oregano, garlic pepper and salt and pepper for a tender and flavorful sandwich. This recipe has all the elements of a Greek salad but is served on a bun. The creamy feta spread can be a made ahead and would be great over baked potatoes. Cut each piece of chicken in half if it's too big to fit on the roll. Each sandwich will then contain 2 pieces of chicken. Serve the chicken with a cucumber, tomato and feta salad.

2 tsp Olive oil
1 tsp Red-wine vinegar
1 tsp Dill fresh, chopped

0.5 tsp Kosher salt
0.25 tsp Garlic powder
0.125 tsp Black pepper freshly ground (or to taste)
0.666 cup(s) Crumbled feta cheese
1 Tbsp Fat free skim milk
1 Tbsp, minced Uncooked red onion(s)

2 piece(s) Lettuce romaine, cut in half

Steps:

  • Coat a grill or grill pan with cooking spray; preheat to medium-high.
  • Pound chicken until about 1/4-inch thick; place on a large baking sheet.
  • In a medium bowl, combine oil, vinegar, dill, oregano, salt, garlic powder and pepper; drizzle over chicken and flip to coat both sides. Let chicken sit for 10 minutes.
  • Meanwhile, in a small bowl, combine cheese, milk and onion; mash together with a fork to make a spread.
  • Grill chicken, flipping once, until browned and cooked through, about 2-3 minutes per side.
  • Place chicken on toasted bun bottoms; spread each with 1 heaping Tbsp feta spread. Top each with 1 piece lettuce and 1 slice tomato; cover with bun tops.
  • Serving size: 1 sandwich

These Greek Chicken Bites are a wholesome and delicious way to prepare a chicken dinner super quick. They are loaded with flavor and taste great on their own, or in pitas, wraps, gyros or your favorite greek dish.

2 lbs boneless (skinless chicken breast)
2 tbsp greek seasoning
1 tbsp fresh lemon juice
2 tbsp olive oil

Steps:

  • Cut the chicken breast into 1-2" chunks. Place them in an airtight container and add the greek seasoning, lemon juice, and 1 tbsp of olive oil. Mix to evenly coat chicken and let rest in the refrigerator for 15 minutes.
  • Heat the remaining oil in a large skillet over high heat. Add the chicken spreading in a single layer. Let it cook without stirring for 3-5 minutes or until it gets a nice brown sear on the side touching the pan. Flip the chicken over and cook an additional 2-4 minutes or until the chicken is cooked through (165˚F internal temp.)
  • Serve hot and enjoy!

1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/3 cup fat-free creamy Caesar salad dressing
1/4 cup crumbled feta cheese
1/4 cup pitted Greek olives, finely chopped
1/4 teaspoon garlic powder
8 pita pocket halves
8 lettuce leaves
1 medium tomato, sliced
1 small onion, sliced

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir chicken over medium heat until no longer pink. Add the dressing, cheese, olives and garlic powder; heat through., Line pita halves with lettuce, tomato and onion; fill each with about 1/3 cup chicken mixture.

Chicken Breast Fillets, sliced into thin strips
4 tablespoons Greek red wine vinaigrette, see recipe
8 tablespoons tzatziki, see recipe
16 small arugula leaves
2 whole wheat pita, cut in half
1/4 cup red wine vinegar
3 cloves garlic, minced
1 teaspoon dried basil
1/2 teaspoon dried oregano
3 tablespoons fresh lemon juice
3/4 cup extra virgin olive oil
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper
1 cup plain Greek yogurt
1 medium cucumber, peeled, seeded, and grated
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh mint leaves
1 clove garlic, minced
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Prepare Tzatziki sauce by staining yogurt in cheesecloth over a medium bowl for several hours, or until most of the liquid has drained off. Press the grated cucumber in a strainer until it feels almost dry to the touch. Combine the yogurt, cucumber, 1 teaspoon lemon juice in a medium bowl. Add the mint, garlic, salt, and black pepper. Stir well; cover and chill for 2 hours. Will keep in the refrigerator for up to one week.
  • Prepare Tyson chicken according to package directions.
  • While chicken is cooking prepare the Greek Red Wine Vinaigrette by combining red wine vinegar, garlic, basil, oregano, lemon juice, olive oil, salt, and pepper in a jar. Cover tightly with lid and shake until well mixed. Will keep in the refrigerator for up to one week.
  • To assemble: Slice prepared chicken into thin strips and place into each pita half. Drizzle the vinaigrette on top of chicken. Add tzatziki sauce and arugula leaves.
