1 zucchini, peeled and sliced
1 clove garlic, peeled
2 tablespoons all-purpose flour
1 egg, beaten
2 tablespoons dry bread crumbs, or more as needed
2 tablespoons olive oil, or more as needed

Steps:

  • Rub zucchini slices with garlic.
  • Place flour, egg, and bread crumbs separately in 3 small bowls. Turn zucchini slices in flour, dusting off excess. Dip in egg and turn in bread crumbs.
  • Heat oil in a skillet and pan-fry breaded zucchini in batches on both sides until lightly browned, about 5 minutes.

2 tablespoons fresh minced garlic
2 tablespoons olive oil
2 tablespoons butter
salt and pepper
1/2 teaspoon italian seasoning (or to taste)
parmesan cheese (optional)

Steps:

  • In a large skillet, saute the zucchini, garlic and Italian seasoning in oil and butter, until zucchini is crisp-tender, about 5 minutes.
  • Season with salt and pepper, then sprinkle with Parmesan cheese.

1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
2 teaspoons onion powder (to taste)

  • Melt butter in frying pan over medium heat and add squash.

1 medium zucchini
1/4 cup finely chopped or grated onion
1/4 cup garlic & herb bread crumbs
1/4 cup grated Parmesan cheese
1 egg, beaten
Salt and pepper to taste
Ketchup, if desired

Steps:

  • Heat oven to 400° F. Spray cookie sheet with cooking spray. Grate or finely chop zucchini; squeeze out all of the excess water with a clean dish towel. In medium bowl, mix zucchini, onion, bread crumbs, Parmesan cheese, egg, and salt and pepper to taste. Mix until well blended. Shape about a tablespoonful of mixture into a small round log. Place on cookie sheet. Repeat to use all of mixture, placing 1 inch apart. Bake 18 to 22 minutes, turning halfway through bake time. Serve with ketchup.

2 eggs, beaten
1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons olive oil
salt and ground black pepper to taste

Steps:

  • Coat each zucchini slice with egg, then press into cracker crumbs, coating both sides. Shake off excess and place the breaded zucchini onto a plate while breading the rest; do not stack.
  • Heat olive oil in a large skillet over medium heat. Pan fry zucchini until crust browns and zucchini softens, about 3 minutes on each side. Season with salt and pepper.

I love the older recipes, they would probably tell us now days that it was unhealthy but lets face it our Mom's and Grandma's sure knew how to cook. I come from a family who all has the most awesome recipes. I always loved when we had pot luck family get together's, the food was always out of this world. To this day I still use the older recipes because I just love them most of them are super simple and taste just amazing. This one here brings back so many wonderful memories of cooking in the kitchen with Mom, not only was it one of my favourites but it is also super easy to make too.

WHAT YOU NEED
- fresh zucchini cut into 1/4 to 1/2 inch slices
- flour
- butter
- salt and pepper

Steps:

  • Cut your zucchini into desired thickness. Now the next step is a little trick my Mom taught me, season both sides of zucchini with a little salt, and lay on wax paper, the reason for this is that it brings the moister up out of the zucchini and the flour sticks to them better. Let them sit for about 10-15 min. You will see the water laying on top of them that's what you want.
  • On a plate add about 1/4 to 1/2 cup of flour depends on the amount you are making and how much you will need and season with pepper ONLY. you already salted them so you don't need the extra salt
  • In a frying pan on medium heat add butter once melted add your zucchini and fry on each side for about 5 minutes or so. I keep flipping mine as I like them golden brown. Put fried zucchini on a clean plate lined with paper towel to remove the excess butter Enjoy.
