Easy Fettuccine Alfredo With Chicken and Broccoli image

This is an easy dish with lots of flavor. To save some fat you can use full-fat milk in place of the 18% cream but it will not be as creamy.

12 ounces uncooked fettuccine pasta
3 cups fresh broccoli florets (can use less)
2 tablespoons oil
1 tablespoon butter
1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch pieces)
seasoning salt or white salt
black pepper
1 -2 tablespoon minced fresh garlic (or to taste)
2 tablespoons flour
1 pinch dried thyme (rubbed between fingers to release flavor)
1 pinch cayenne pepper (optional)
1 1/2 cups 18% table cream
1/4 cup grated parmesan cheese (or to taste)

Steps:

  • Cook the pasta in boiling water according to package directions, adding in the fresh broccoli florets the last minute of cooking time; drain (do not rinse) then transfer to a large bowl and toss with 1-2 tablespoon oil or butter to prevent sticking; cover lightly with foil to keep warm.
  • Heat oil and butter in a large skillet over medium heat.
  • Season the chicken cubes with salt and pepper; add to the skillet and cook for 4-5 minutes or until the chicken is cooked and browned (adding in the garlic the last 3 minutes of cooking time).
  • Add in flour, pinch dried thyme and cayenne pepper (if using); stir with wooden spoon for 1 minute.
  • Add in table cream and grated parmesan cheese; bring to a simmer, stirring constantly and cook 1-2 minutes and until smooth and thickened.
  • Add in salt and pepper to taste.
  • Pour the sauce over the cooked pasta and broccoli; toss to coat.
  • Pass more Parmesan cheese at the table.

My husband loves fettucine alfredo and I love artichokes, but I have very little time to make it from scratch. This is great to make if you have leftover chicken to serve it with. Also, you can buy all of the ingredients in advance and make it when you have time.

4 ounces fettuccine pasta (more or less if desired)
2 tablespoons olive oil
1 (14 ounce) jar alfredo sauce (or more)
2 (12 ounce) cans artichokes, hearts (or more)
1 tablespoon minced garlic or 1 -2 crushed garlic clove
1/2 teaspoon lemon pepper
1 teaspoon olive oil

Steps:

  • Cook fetticine in boiling water 2 tablespoons olive oil.
  • Meanwhile, drain artichokes hearts in a large colander and leave to drain (do not rinse).
  • Warm up alfredo sauce in a large saucepan - add garlic and lemon pepper and 1 teaspoon olive oil.
  • When alfredo sauce is cooked, drain over artichoke hearts - this will warm and cook artichoke hearts perfectly.
  • Slightly rinse noodles and drain thoroughly.
  • Add noodles and artichokes to the alfredo sauce and mix completely.
  • Warm on stove for about 15 minutes.
  • Optional: For added flavor and taste, add 1-2 cups chopped and cooked chicken to the mix.
  • Serve warm.

1 (12 ounce) package fettuccine
8 slices bacon, cut into 1-inch pieces
1 lb boneless skinless chicken breast, cubed
2 cups sliced fresh mushrooms
6 green onions, thinly sliced
1 garlic clove, minced
1 1/2 cups half-and-half cream
1/2 cup shredded parmesan cheese
1 teaspoon paprika
1/2 teaspoon fresh coarse ground black pepper

Steps:

  • Cook fettuccine in boiling water for 12 minutes.
  • Meanwhile, in a large skillet, cook the bacon until crisp. Remove to paper towels to drain, reserving 1-2 tablespoons drippings.
  • Saute the chicken in drippings until no longer pink. Add the mushrooms and green onions; cook until mushrooms are tender. Add garlic; cook 1 minute longer. Stir in the cream, cheese, paprika and pepper. Reduce the heat; simmer, uncovered, for 5-10 minutes. Stir in the reserved bacon.
  • Drain fettuccine; place in a serving bowl. Add chicken mixture; toss to coat. Garnish with additional cheese.

In this I used the whole pack of cream cheese and added more milk so it would not be so thick. I also added chicken and broccoli. We dont like nutmeg so I left that out. I made ceasar salad and garlic bread with this also.

16 tablespoons unsalted butter
3 cups grated parmesan cheese (Parmigiano Reggiano is the classic)
1/2 cup pasta water (reserved during the cooking of the pasta)
1/2 cup fresh basil leaf
salt and pepper
6 large basil leaves, coarsely chopped

Steps:

  • 1. Using a food processor, finely chop the 1/2 cup of basil leaves until the consistency of pesto.
  • 2. Cook pasta until al dente in salted water according to package directions.
  • 3. While pasta is cooking, melt butter on medium-low heat in a large saucepan - do not allow to boil or the butter will separate.
  • 4. When butter is melted, measure out 1/2 cup of water from the cooking pasta and add to the butter.
  • 5. Gently stir in the grated parmesan until thoroughly melted.
  • 6 Stir the basil from the food processor into the sauce.
  • 7. Add additional pasta water as needed to obtain a smooth consistency.

500 g grams of pasta fettuccine
250 g chicken breast, cut into pieces

4 Tbsp chopped onions
250 ml cream
