This delectable, chocolatey dessert stores well and travels easily when prepared in a disposable foil pan or food storage container.

1 3/4 c cold milk
1 pkg (4 serving size) jell-o vanilla instant pudding
1/4 c creamy peanut butter
1 pkg (8oz.) cool whip, thawed
24 graham crackers
6 squares bakers semi-sweet baking chocolate
3 Tbsp butter

Steps:

  • 1. Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Add peanut butter; mix well. Gently stir in whipped topping. Layer one third of the grahams and half the pudding mixture in 13x9-inch dish, breaking grahams necessary to fit. Repeat layers. Top with remaining grahams.
  • 2. Microwave chocolate and butter in microwavable bowl on HIGH 2 min. stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Spread immediately over grahams.
  • 3. Refrigerate at least 8 hours. Store in refrigerator. Variation: Prepare as directed, omitting the peanut butter.

1/4 cup smooth peanut butter
3 cups thawed Cool Whip
45 graham wafers (enough to fix a 9x13 pan)
6 ounces semi-sweet chocolate baking squares
3 tablespoons butter

Steps:

  • Pour milk into a large bowl. Add pudding mix and beat with wire whisk 2 min or until well blended. Add peanut butter and mix well. Gently stir in whipped topping.
  • Layer 1/3 of grahams and half of the pudding mixture in a 9x13 pan, breaking grahams if necessary to fit. Repeat layers topping with graham crackers.
  • Microwave chocolate and butter on med heat for 1.5 min, stirring after 1 minute Stir until completely melted and then spread over grahams.

EASY CHOCOLATE ECLAIR " RING SHAPED " DESSERT CAKE



Easy Chocolate Eclair

This is a recipe I received from my husbands college aged niece Sarah. She made it for a desert after Easter dinner. It's like a huge "Ring Shaped" Chocolate Eclair. We loved it so much, we had to ask for the recipe!

1 cup water
1/2 cup butter
1 cup flour
1/4 teaspoon salt
4 eggs
2 (3 1/2 ounce) packages French vanilla instant pudding
2 1/2 cups milk
1 cup Cool Whip
1/2 teaspoon almond extract
1 (7 1/2 ounce) package chocolate fudge frosting mix

Steps:

  • Preheat oven to 400 degrees.
  • On a cookie sheet grease and flour a circle
  • approx 7 inches.
  • In a sauce pan, over high heat mix Water and Butter until boiling. Turn burner to Low and add Flour and Salt. Mix fast with a wooden spoon until dough leaves the sides of the pan.
  • Transfer dough to a large bowl and mix with an electric beaters at Medium speed. Add eggs, one at a time. Beat until dough is smooth and slimy.
  • Drop tablespoons of dough onto the cookie sheet to form a circle with an open center. Bake for 45 minutes. After 45 minutes turn oven off and leave in the oven for an additional 20 minutes.
  • Put on a wire rack to cool. Once cool carefully cut in half (like a cream puff).
  • For the Filling, mix BOTH packages Instant French Vanilla pudding with the 2 1/2 cups milk. Mix with an electric beater on Low for 1 - 2 minutes. Once pudding has set up, add Cool Whip and Almond Extract and fold in slowly until incorporated.
  • Take the top of the "ring" off and set to the side. Spread the filling evenly on the bottom "ring". Once you have distributed all the filling evenly across the bottom "ring" replace the top of the "ring".
  • For the frosting, make the Chocolate Fudge Frosting Mix as directed on the package and spread on the top of the ring. Let Frosting set up until ready to serve.

27 whole graham crackers, halved
3 cups cold milk
2 pkg vanilla flavor instant pudding & pie filling, 4 serving size
1 tub cool whip, thawed, 12 oz
1 container ready to spread chocolate fudge frosting,16 oz
strawberries

Steps:

  • 1. Arrange 1/3 of the crackers on bottom of 13 x 9 inch baking pan, breaking crackers to fit, if needed. Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Spread 1/2 of the pudding mixture over crackers. Place 1/2 of the remaining crackers over pudding. Top with remaining pudding mixture and crackers. Remove top and foil from frosting container. Microwave frosting in container on high 1 minute or until pourable. Spread evenly over crackers. Refrigerate 4 hours or overnight. Cut into squares to serve. Garnish wit strawberries. You could make pistachio, banana flavored or even double chocolate éclairs by simply changing the pudding flavors. Makes 18 servings

  • POUR: milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Spread 1/2 of the pudding mixture over crackers. Place 1/2 of the remaining crackers over pudding; top with remaining pudding mixture and crackers.
  • REMOVE: top and foil from frosting container. Microwave frosting in container on HIGH 1 minute or until pourable. Spread evenly over crackers.
