1 box Betty Crocker™ Home Style Fluffy White Frosting Mix
1/3 cup light corn syrup
1 teaspoon vanilla
1/2 cup boiling water
1 box (16 oz) powdered sugar (4 cups)
1 cup chopped nuts

Steps:

  • Heat oven to 325°F. Line 2 large cookie sheets with cooking parchment paper.
  • Place dry frosting mix, corn syrup, vanilla and boiling water in bowl of electric stand mixer fitted with whisk attachment. Mix on low speed until blended. Beat on high speed 5 to 7 minutes, scraping bowl occasionally, until stiff peaks form. On low speed, gradually beat in powdered sugar, scraping bowl occasionally. Stir in nuts. Drop mixture by teaspoonfuls onto lined cookie sheets.
  • Bake 5 minutes; remove from oven. Slide parchment paper with candies from cookie sheet onto cooling rack. Let stand about 4 hours on parchment paper or until tops of candies feel firm. Remove candies from parchment paper, using small icing spatula to loosen edges if needed. Turn candies over, and place bottom sides up on cooling racks. Allow candies to dry at least 12 hours. Store in airtight container with waxed paper between layers.

I have tried to make divinity a lot, but it never turned out quite right. This recipe is easy to make and delicious!

2 c sugar
1/2 c water
1 pinch salt
1 jar(s) marshmellow cream
1/2 c pecans, in pieces

Steps:

  • 1. Bring sugar, water, and salt to a rolling boil. Boil for only 2 minutes.
  • 2. Place marshmallow cream in a larger bowl.
  • 3. our hot mixture over cream and beat until mixture becomes dull. Be patient, it does take a while.
  • 4. Add pecans.
  • 5. Drop tablespoon fulls onto wax paper. Let cool fully and refrigerate. Or you also can pour the whole bowl out onto a cookie sheet covered with wax paper and break it apart once it is set up. Let cool. Refrigerate.

EASY CHERRY COCONUT CAKE WITH DIVINITY ICING



Easy Cherry Coconut Cake with Divinity Icing image

My grandmother baked a Cherry Coconut Cake for bake sales and special occasions. I decided to bake one using a cake mix and her icing recipe.

1 box white cake mix
1 jar(s) maraschino cherries
3 large eggs
1/2 c sour cream
1 c oil
1/4 c cherry juice
1/4 tsp almond extract
DIVINITY ICING
1 c granulated sugar
1/2 c light corn syrup
1/4 c water
4 large egg whites, stiffly beaten
2 tsp imitation vanilla
1 1/2 c coconut

Steps:

  • 1. Preheat oven to 350 degrees. Spray two 9" round cake pans with cooking spray with flour. Drain cherries, reserving 1/4 cup of juice. Set aside 1-3 cherries for decoration. Chop remaining cherries; set aside.
  • 2. In large mixing bowl, combine cake mix, eggs, sour cream, oil, cherry juice and almond extract. With mixer on low speed, beat 30 seconds. Scrape sides of bowl & continue to beat with mixer on high speed for. 1/2 minutes. Stir in chopped cherries. Pour batter into prepared pans. Place in oven and bake 25-30 minutes or until done. Insert toothpick in center of layers to test for doneness. If it comes out clean, remove from oven. Cool in pans for 10 minutes. Turn out on cooling racks. Frost when cool.
  • 3. Icing: In small heavy saucepan, combine sugar, corn syrup and water; stir until blended. Cook without stirring over medium heat. Bring to a boil. With spoon, held above saucepan, drizzle small amount of syrup mixture. When a long thread separates from the stream of syrup; remove from heat. While beating with mixer, slowly pour hot syrup mixture into stiffly beaten egg whites. Continue beating until mixture is fluffy and spreadable. Add vanilla. Frost bottom cake layer and sprinkle with coconut. Repeat with top layer. Sprinkle remaining coconut on sides. Top with cherries. Cool cake before refrigerating.
  • 4. Note: I used a large jar of maraschino cherries because I like a lot of cherries. I beat the egg whites for the icing as soon as I start cooking the syrup mixture.

I got this recipe from my sister 25+ years ago. At holiday time, we would always get together and make all kinds of candies, cookies and other treats for christmas giving. We haven't made as much the last few years because everyone is trying to eat healthier but this one is stil requested every year.

1 box fluffy white frosting mix
1/3 c light corn syrup
1 tsp vanilla extract
1/2 c boiling water
2 c (16 oz) confectioner's sugar
1 c chopped pecans or walnuts

Steps:

  • 1. In a large mixing bowl, combine the dry frosting mix, corn syrup, vanilla and boiling water.
  • 2. Using an electric stand-mixer, beat on high speed until stiff peaks form (about 5 minutes). Light hand-mixers aren't usully powerful enough.
  • 3. Reduce speed to low and gradually blend in sugar.
  • 4. Gently stir in the nuts.
  • 5. Using a teaspoon, drop the mixture onto waxed paper. When outside of candy feels firm, turn over; dry at least 12 hours (depending on the humidity).
  • 6. Store in airtight container.

My Mama has been making this recipe since I was a kid. I have no idea where the recipe came from but it is easy and very delish. You could use any flavor of gelatin to change the flavor.

3 c sugar
3/4 c light corn syrup
3/4 c water
2 egg whites
1 pkg flavored gelatin
1 c pecans, choopped

Steps:

  • 1. Mix sugar, syrup and water in saucepan, cook to boiling point stirring constantly. Reduce heat, continue cooking, stirring occasionally until a few drops form a hard ball dropped in cold water(252 degrees on candy themometer). Meanwhile beat egg whites until they fluff up , add dry gelatin gradually beat until mixture holds a stiff peak. Pour syrup mixture into egg whites in a thin stream, beating constantly until candy begins to stiffen and looses its gloss, stir in nuts. Drop by spoonfull onto wax paper.

How to make EASY CHRISTMAS DIVINITY

Number Of Ingredients 8

This divinity is so easy to make in the microwave and so good. You won't ever make it any other way again! Makes a great gift, too.
2 cups white sugar
1/3 cup water
1/3 cup light corn syrup
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla extract
1/2 cup pecans or nuts of your choice, chopped

Steps:

  • Combine sugar, water, corn syrup and salt in a glass casserole dish. Cover with saran wrap and microwave on high for 5 minutes. Remove from microwave and take off saran wrap. Stir well and return to microwave uncovered. Cook on high for another 4 to 5 minutes until reaches hard ball stage when a little is dropped in cold water. Remove and cool about 4 minutes. Beat egg whites until stiff with mixer. Pour sugar mixture over egg whites beating constantly with mixer until mixture starts to lose its gloss and holds together. About 4 or 5 minutes. Stir in vanilla and nuts. Drop by teaspoonful onto wax paper. Makes about 25 pieces depending on size you make them. Enjoy!
  • Note: To clean glass bowl you used in microwave soak in warm soapy water immediately after emptying sugar mixture.
