SLOW COOKER CHOP SUEY

A combination of beef and pork is slow cooked with onion, celery, water chestnuts, bean sprouts, mushrooms, and bamboo shoots. Serve over rice or your favorite Asian-style noodles.

1/2 pound pork stew meat, cubed
1/2 pound beef stew meat, cubed
1 large onion, chopped
1 cup celery, sliced in 1/4-inch diagonal slices
1 can (8 ounce size) sliced water chestnuts, undrained
2 cans (16 ounce size) bean sprouts, drained
1 can (8 ounce size) bamboo shoots, drained
1 can (8 ounce size) mushrooms, undrained
1/2 cup soy sauce
1/2 cup chicken broth
2 tablespoons cornstarch
4 tablespoons water

Steps:

  • Heat a large non-stick skillet or wok over medium heat. Add the pork and beef and cook, stirring, until they begin to brown. Add the onion and celery and stir-fry for 2-3 minutes. Place the meat mixture in the crock pot. Top with the water chestnuts, bean sprouts, bamboo shoots, and mushrooms. Drizzle the soy sauce and chicken broth over the top. Cover and cook on low for 6-8 hours. When the meat is tender turn the heat to high. Combine the cornstarch with the water until it forms a slurry. Stir that into the crock pot and let cook for 15 minutes until it is slightly thickened. Serve the chop suey hot with rice, lo mein noodles, chow mein noodles, or rice noodles.

This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

¼ cup shortening
1 ½ cups diced pork loin
1 cup diced onion
1 cup diced celery
1 cup hot water
1 teaspoon salt
⅛ teaspoon ground black pepper
1 (14.5 ounce) can bean sprouts, drained and rinsed
⅓ cup cold water
2 tablespoons cornstarch
2 teaspoons soy sauce
1 teaspoon white sugar

Steps:

  • Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
  • In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.

1-1/2 pounds boneless skinless chicken thighs, cut into 2-inch pieces
8 ounces sliced fresh mushrooms
2 celery ribs, sliced
1 medium onion, chopped
1 can (14 ounces) bean sprouts, rinsed and drained
1 can (8 ounces) bamboo shoots, drained
1 can (8 ounces) sliced water chestnuts, drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1/2 cup reduced-sodium soy sauce
1 tablespoon minced fresh gingerroot
1/4 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
2 tablespoons cold water
1/2 cup frozen shelled edamame
Hot cooked rice

Steps:

  • Place chicken in a 4- or 5-qt. slow cooker. Top with mushrooms, celery, onion, bean sprouts, bamboo shoots and water chestnuts. In a small bowl, combine the broth, soy sauce, ginger and pepper flakes. Pour over chicken and vegetables. Cover and cook on low until chicken is tender, 5-6 hours., Combine cornstarch and water until smooth; gradually stir into chop suey. Add edamame, cover and cook on high until thickened, about 30 minutes. Serve with rice.

1 lb boneless pork shoulder, trimmed of fat and cut into 3/4 inch cubes
1 small onion, cut into 1/4 inch wedges
1 (5 ounce) can sliced bamboo shoots, drained
1/2 cup purchased teriyaki baste and glaze
1 teaspoon grated gingerroot
1 (1 lb) package frozen broccoli carrots and water chestnut mix, thawed, drained
2 cups uncooked instant rice
2 cups water

Steps:

  • In 4 to 6 quart crock pot, combine pork, onion, bamboo shoots, teriyaki baste and glaze and gingerroot; mix well.
  • Cover; cook on low setting for 5 to 7 hours.
  • About 15 minutes before serving, stir vegetables into pork. Increase heat setting to high; cover and cook an additional 10 to 15 minutes or until vegetables are tender.

1 1/2-2 lb round steak
4 stick celery
1 1/2 c beef broth
2 onions, yellow, medium, chopped
3 Tbsp soy sauce
2 tsp worcestershire sauce
1 can(s) bean sprouts or chinese vegetables
1 can(s) mushrooms, 4 ounces
2 Tbsp cornstarch mixed with 2 tablespoons water

Steps:

  • 1. Put steak strips, celery, onions, beef broth, soy sauce, and Worcestershire in crock pot. Stir well, cover and cook on low 8-10 hours (high 3-4 hours).
  • 2. One hour before serving, turn to high and add remaining ingredients. Stir well. Cook just until thickened.

1 onion, chopped
1 (6 ounce) package long grain and wild rice blend
1 3/4 cups water
5 tablespoons soy sauce
2 cups shredded cabbage
1 cup bean sprouts

1 cup celery, cut into thin strips
1/2 lb fresh white mushroom, sliced

Steps:

  • In a large skillet brown beef and onion stirring occasionally until crumbly.
  • Drain off fat.
  • Put beef and onion into crock pot.
  • Stir in rice mix including dry seasoning packet, water and 4 TBS of soy sauce.
  • Cover and cook on high setting 2 hours.
