This soup is fabulous, and much easier than the more complicated, time-intensive potato soup that I sometimes make. It is easy to throw together on a weekday night, or for lunch. You can, of course, use real potatoes (2 cups potatoes, skinned and cut into cubes), but I find it is even easier, and just as delicious, to use canned, sliced potatoes. It is a filling, creamy, and hearty soup, one that can easily be served alone for a complete meal. Although shared with me by my sister-in law, it actually originally came from a Gooseberry Patch cookbook, and then has been adjusted by me. You will love this soup - as my husband says, "This soup is awesome!!!! "

2 (15 ounce) cans canned sliced potatoes, undrained
1 (10 3/4 ounce) can cream of chicken soup
1 3/4 cups milk
1 cup sour cream
1 cup water
1 small onion, chopped
1/4 teaspoon salt
1/4 teaspoon johnny's seasoning salt
1/2 teaspoon pepper
2 dashes hot sauce
2 garlic cloves, minced
1 tablespoon dried parsley
8 slices bacon, crisply cooked and chopped
shredded cheddar cheese

Steps:

  • In a 3-qt sauce pan, combine potatoes, water, regular salt, and pepper.
  • NOTE: If using real, uncooked potatoes, bring to a boil, cover and simmer for 10 mins, until potatoes are tender.
  • If using canned potatoes, bring to soft boil.
  • Turn down heat to medium.
  • Gradually add soup and milk, stirring constantly.
  • Add onions, garlic, Johnny's seasoning salt, and dashes of hot sauce, and allow to cook, while stirring, for 5 minutes.
  • Stir in sour cream, bacon, and parsley, and heat thru.
  • Top with additional pepper and cheese.

This is one of my signature dishes. I made this recipe when I was 12 years old. If you want to use potato instead of sweet potato, replace the coconut milk with cow's milk. Add your favorite herbs and spices for added flavor, or just prepare it as stated.

4 sweet potatoes, cut into cubes
salt as needed
2 tablespoons olive oil, or as needed
1 white onion, chopped
5 cloves garlic, chopped
2 cups coconut milk
1 cup heavy whipping cream
½ teaspoon hot sauce
salt and ground black pepper to taste

Steps:

  • Place sweet potatoes into a large pot and cover with water and add a pinch of salt; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Mash sweet potatoes in a bowl.
  • Heat olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until golden brown, about 5 minutes.
  • Stir mashed sweet potato into the onion and garlic. Pour coconut milk and heavy cream over the sweet potato mixture; stir. Season mixture with hot sauce, salt, and pepper. Reduce heat to low and cook until heated through and slightly thickened, 15 to 20 minutes.

And, did I mention how easy it is to make? All in one pot or crock pot. This soup can be made rich & creamy or, by changing the milk to fat-free Half & Half, made into a skinny soup without losing any of the flavor. You may also omit the chicken to made a vegetarian Creamy Ranch Potato Soup.

1/2 cup water
2 (3 ounce) packages Hidden Valley Original Ranch Dips Mix
6 1/2 cups water
3 medium chicken breasts, cut into bite size pieces
1 (12 ounce) can evaporated milk or 1 1/2 cups fat-free half-and-half
1 tablespoon butter
1 shallot, peeled and chopped
6 medium red potatoes, washed and cut into pieces to easily fit a spoon
1 lb baby carrots, washed
salt and pepper
2 cups fresh spinach, chopped for garnish

Steps:

  • Place 1/2 cup water in 5-6 quart pot, add two packets of Hidden Valley Ranch Dip Mix (original flavor) and stir until well mixed.
  • Add 6 1/2 cups water and add all remaining ingredients; except fresh spinach.
  • Bring soup to boil over medium heat. Reduce heat to med/ low cook until vegetables are desired crispness. 30-45 minute.
  • Garnish with fresh chopped spinach. Serve hot.

This is a quick and very tasty soup that is very easy. I love it with a crusty bread and a salad for dinner.

1 1/3 lbs potatoes (2-3 large potatoes)
2 leeks
2 1/2 tablespoons butter
salt and pepper

Steps:

  • Bring 7 cups of water with 1/2 tsp. salt to a boil.
  • Meanwhile, peel the potatoes and cut into slices about 1/4 inch thick.
  • Wash leeks carefully, and chop into medium sized pieces.
  • When water is boiling, add potatoes and leeks.
  • Turn down heat and simmer, covered for 30 minutes.
  • Reserving 2 to 3 cups of the cooking water, put the remaining contents of the pot into a blender or food processor.
  • Puree until smooth.
  • Add butter and blend until smooth.
  • Return soup to pot and bring to a boil.
  • Add reserved cooking water until soup reaches desired consistency (I like to leave it thick).
  • Season to taste with salt and pepper and serve.
  • Reheats very well.

1 (14 1/2 ounce) can new potatoes, drained
1/2 teaspoon dried thyme, crushed

Steps:

  • Place asparagus, potatoes, thyme and garlic powder in food processor or blender (in batches if needed); process until smooth.
  • Pour into medium saucepan, add broth.
  • Bring to a boil.
  • Stir in milk; heat through. (do not boil).
  • Season with salt and pepper to taste, if desired.
  • Serve hot or cold.

5 -6 large potatoes, peeled and cut into bite size pieces
1/2-1 lb bacon
1/4-1/2 cup flour
3 cups chicken broth
2 cups heavy cream
3/4 cup frozen corn kernels or 3/4 cup whole kernel corn, drained
1 medium onion, diced
6 garlic cloves, minced
1/4 cup butter (optional)
salt and pepper, to taste

Steps:

  • Fry bacon until crisp (see recipe #242966 for homemade bacon bit tips). Remove to paper towels to drain. Reserve bacon grease.
  • Meanwhile, boil potatoes in a large dutch oven in water; do not add salt! Drain.
  • Pour reserved bacon grease into empty dutch oven; saute onion and garlic in reserved bacon grease until onion is lightly browned.
  • Add flour to the sauted onion mixture, stirring to evenly brown; add cream and stir constantly until mixture thickens; add chicken broth and stir until bubbly.
  • Stir potatoes, corn and crumbled bacon into the soup; add butter, salt and pepper to taste. (you may not need salt. Bacon is very salty) Simmer until butter is melted and stirred into soup.
  • Add milk at little at a time if soup is too thick for your tastes.

  • When the potatoes are tender, stir in the fried leeks, heavy cream and bacon. Stir to blend and remove from heat. Serve hot.

Easy, few ingredients, not too thick but more substance than a broth soup. Healthier than canned. Nothing fancy but satisfying and simple. All done in one pot too. I prefer organic stock which is lower in sodium, so adjust for that. very good with good italian garlic bread topped with good italian cheese.

1 quart chicken stock
