DELICIOUS OVEN ROASTED POTATOES
These oven roasted potatoes are crispy on the outside, soft on the inside and make the perfect side dish for any occasion. {WW 2 Purple, WW 3 Blue + Green, Vegan, Vegetarian, Whole 30}

Steps:
- Preheat oven to 425F. Rinse potatoes and pat them dry.
- Cut the potatoes in half and place in a 9x13" baking dish.
- In a medium bowl, mix together olive oil, Italian seasoning, onion powder, garlic powder and salt and pepper. You can also add other dried herbs that you have available.
- Pour oil mixture over potatoes. Mix well so the potatoes are evenly coated.
- Bake for 45 to 50 minutes.
- Sprinkle parsley over top and mix in with potatoes.

ROASTED BABY POTATOES WITH HERBS

- Preheat the oven to 400 degrees F.
- Put the potatoes into a large bowl. In a small bowl, whisk the herbs, garlic, and oil together until blended, and then pour over the potatoes. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a heavy large baking dish, spacing them evenly apart.
- Roast the potatoes until they are tender and golden, turning them occasionally with tongs, about 1 hour. Transfer the roasted potatoes to a decorative platter and drizzle with extra-virgin olive oil and herbes de Provence, if desired. Serve hot or warm.
