CRANBERRY-ORANGE BREAD
One of Betty's Best, this quick bread boasts cranberries and coarsely chopped nuts. What a flavor combination!

Steps:
- Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 inches, or 1 loaf pan, 9x5x3 inches.
- Stir together cranberries, sugar, oil, milk, vanilla, orange peel and eggs in large bowl. Stir in remaining ingredients. Pour into pans.
- Bake 8-inch loaves 50 to 60 minutes, 9-inch loaf 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

CRANBERRY QUICK BREAD
Steps:
- Preheat your oven to 350 F. Spray a 8.5 x 4.5-inch loaf pan with nonstick cooking spray.
- Sprinkle a teaspoon of flour over the cranberries and mix; set aside. This will prevent the cranberries from sinking to the bottom of the bread. If using frozen cranberries, no need to thaw them out.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt together.
- In a separate bowl, whisk together the honey, eggs, orange juice, orange zest and melted butter. Stir into dry ingredients, do not over mix.
- Fold in the prepared cranberries then pour the batter into the prepared loaf pan.
- Bake the bread for about 45 minutes to 1 hour. To test if the bread is done, insert a toothpick into the center of the bread and if it comes out clean, the bread is done, otherwise continue baking. Allow the bread to cool completely in the pan.
- Slice and serve.

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans.
- In a large bowl, stir together the flour, baking powder, baking soda, salt, and white sugar. Mix in the melted butter until the mixture looks crumbly. Stir in the cranberries and oranges. In a separate bowl or large measuring cup, whisk together the eggs, milk, sour cream, vanilla and orange extract. Pour the liquid ingredients into the bowl with the dry ingredients and stir just until blended. Divide the batter evenly between the prepared pans.
- Bake in the preheated oven until a toothpick inserted into the crown comes out clean, about 40 minutes. Cool in the pans for a while, then remove from the pans and place on wire racks to cool completely.

EASY ALL CRANBERRY BREAD
This is an easy fool proof bread that you can whip up and walk away for an hour. It's a version of my Mom's bread, but I prefer an all cranberry bread! Sorry Mom!

- Preheat oven to 350 degrees F.
- Sift flour, sugar, baking powder, salt, and baking soda into a large bowl.
- Cut in butter until the mixture is crumbly.
- Add egg, finely grated orange peel, lemon peel, and orange juice all at once; carefully stir until the mixture is evenly moist.
- Fold in cranberries.
- Spoon and spread evenly into a greased 9x5x3-inch loaf pan.
- Bake for 55-65 minutes, or until a tooth pick inserted in the center comes out clean.
- Remove from the pan and cool on a wire rack.
ORANGE CRANBERRY BREAD

Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap cooled loaves in foil and freeze. To use, thaw at room temperature.

Cool for 10 minutes; remove from pan to a wire rack to cool completely.
