32 (3.5 inch square) wonton wrappers
1 ½ tablespoons margarine, melted
3 tablespoons cinnamon sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Lay the wonton wrappers out flat on a baking sheet. Brush evenly with melted margarine. Sprinkle 1/4 teaspoon of cinnamon sugar over the top of each one.
  • Bake for 5 minutes in the preheated oven, or until crisp. Remove from baking sheets to cool on wire racks.

One 14-ounce package thin dry rice noodles
Kosher salt
Cinnamon sugar, for dusting

Steps:

  • In a large pot or wok over medium-high heat, add about 1 inch oil. Heat until it swirls and reaches 375 degrees F. Line a baking sheet with paper towels.
  • Separate and break the noodles into 4- to 6-inch sections. Test the oil with a few strands; they should almost instantly get puffy. When the oil is ready, add the noodles in batches and cook until puffy, then remove to the paper towels. Season with a pinch of salt and a dusting of cinnamon sugar over the top.

1 tablespoon cinnamon
12 (6 inch) flour tortillas

1/2 cup warm water (110° to 115°)
1 cup warm whole milk (110° to 115°)
2 cups sugar, divided
1/2 cup canola oil
1-1/4 teaspoons salt
2 large eggs
1-1/2 teaspoons lemon extract
5-1/2 to 6 cups all-purpose flour
6 tablespoons butter, softened, divided
1 tablespoon ground cinnamon

  • In a large bowl, dissolve yeast in water; let stand for 5 minutes. Add the milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour; beat well. 1-1/4 cups warm 2% milk (110° to 115°)
1/4 cup sugar
1/4 cup shortening
1 egg
1 teaspoon salt
4 cups all-purpose flour
FILLING:
1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon
TOPPING:
1/4 cup butter, melted
1 cup sugar
1 teaspoon ground cinnamon
1/2 cup chopped pecans

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the sugar, shortening, egg, salt and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Combine filling ingredients; set aside. Punch dough down; divide in half. On a floured surface, roll each portion into a 12-in. square. Spread filling over dough. Roll up tightly jelly-roll style; pinch to seal., Cut into 1-in. slices; place on greased baking sheets (four slices per sheet). 1 teaspoon ground cinnamon
6 (8-inch) flour tortillas, whole or cut into shapes

Steps:

  • On a plate, mix the sugar and cinnamon. In a medium, heavy-bottomed saucepan, add enough oil to come halfway up the sides of the pan. Heat over medium-high heat until a deep frying thermometer, inserted in the oil, reaches 350 degrees F. (If you do not have a thermometer, test the oil with a piece of tortilla, which should sizzle when it touches the oil and should brown in about 2 to 3 minutes.) One by one, fry tortillas until golden brown. With a slotted spoon, transfer the crisps to paper towels to drain. While still warm, transfer to cinnamon-sugar mixture, turn to coat and serve.
