¾ cup white sugar
1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.

1 cup heavy whipping cream
3/4 cup sugar

Steps:

  • In a small heavy saucepan, combine all ingredients. Bring to a boil over medium heat, stirring constantly. Boil and stir 2 minutes., Store in airtight containers in the refrigerator. Warm gently before serving.

1 cup all-purpose flour
2 tablespoons baking powder
1 cup sugar
2 tablespoons cocoa powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons oil
1 cup brown sugar
4 tablespoons cocoa powder
1 3/4 cups hot water

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients except the brown sugar and 4 tbsp cocoa and hot water. Spread into a 9x9 pan or equivalent.
  • Mix brown sugar and cocoa and spread over batter.
  • Carefully pour the hot water over all.
  • Bake at 350°F for approximately 40 minutes.

1 cup water
2 cups sugar
1 cup sifted unsweetened cocoa powder
1/2 cup creamy peanut butter
1 1/2 teaspoons vanilla

Steps:

  • In a medium saucepan over medium heat, bring 1 cup water to a boil.
  • Whisk in cocoa powder and sugar; cook whisking constantly until the mixture forms bubbles around the edges of the pan.
  • Simmer until sauce thickens slighty, whisking constantly (this should take about 3-4 minutes).
  • Reduce heat to low and whisk in peanut butter; simmer until sauce thickens and is smooth (another 3 minutes longer).
  • Remove from heat and add in vanilla; cool slightly.
  • If not using immediately, cool completely and transfer to a glass bowl, cover and refrigerate.
  • Just rewarm slightly before using.

1 egg, beaten
1/2 cup sugar
2 teaspoons ground cinnamon
1 cup heavy cream
8 ounces finely chopped bittersweet chocolate
1/2 teaspoon ancho chili powder
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Churros:Preheat oven to 425 degrees. On a lightly floured surface, roll out puff pastry into a 12-by-16-inch rectangle. Brush lightly with a beaten egg. Fold in half into a 6-by-16-inch rectangle; press out air bubbles, then cut crosswise into 1/2-by-6-inch strips. Twist into spirals, pressing ends to gently adhere. Place 1 inch apart on 2 parchment-lined baking sheets; freeze 30 minutes. Bake, rotating sheets halfway through, until puffed and golden, 20 to 22 minutes. Combine sugar and cinnamon. While still hot, toss half of churros with half of sugar. Repeat with remaining churros and sugar.
  • Mexican Chocolate Sauce:Bring cream to a simmer; pour over chocolate in a heatproof bowl. Let stand for 5 minutes. Add spices; stir until smooth. Serve immediately, with churros.

  • Mix 2 cups sugar and 4 cups water in 4-qt. saucepan. Bring to boil on medium-high heat, cook 2 min. or until sugar is completely dissolved, stirring frequently.
  • Add pears; partially cover pan with lid. Simmer on medium-low heat 20 min. or just until pears are tender, stirring after 10 min. Remove pears from liquid; discard pear liquid.
  • Microwave chocolate and remaining water in microwaveable bowl on HIGH 1 min. Stir until chocolate is completely melted and smooth. Add remaining sugar; mix well. Microwave on HIGH 1-1/2 min. or until sugar is dissolved, stirring after 45 sec.

I love ice cream with some kind of sauce on it. Call me weird LOL! This is a really good sauce and it's one of my favorite go-to sauces. I found this years ago on the web. Be sure you don't use semi-sweet, it's no good in this recipe. It's been awhile since I made this, I can't remember exactly how much it made. I did the 2oz, then truffles, then I think I made the 3oz. If you make this, please post how much, if you please.

2 -3 ounces unsweetened chocolate
1 (14 ounce) can condensed milk (not evaporated)
1 teaspoon vanilla (if you go for the 3 oz. you may want to add a little more.)

Steps:

  • Carefully melt the chocolate in the condensed milk, and bring to a boil. Boil gently for a minute. Then add the vanilla. You can also add peanut butter (just a big spoonful or, no big deal) if desired. I prefer the 2oz. of chocolate, but you may want the 3oz.
  • Thin with regular milk, if you need to.
  • You may like to use a different extract, such as almond or maple, or which ever. It's really cool to make truffles out of this after it cools a little.
