These are delicious cookies that are super-quick to make when you need to satisfy a cookie fix. Even my non-cooking roommates know how to make them, so we have these about once a week.. they never last for more than 24 hours. Try adding coconut, nuts, other dried fruit, etc...

Steps:
- Cream together butter and sugar in a bowl, then mix in vanilla.
- Add flour and mix well.
- Mix together baking soda and water, and then add to the batter.
- Stir in the oats and chocolate chips.
- Drop by spoonfuls onto a cookie sheet (no need to grease it), and bake at 350° for 12-15 minutes.

My girlfriend gave me this recipe many years ago. She was telling me how easy they are to make when your in a hurry or just craving something simple and sweet. I have made these to take to picnic's I've been invited to and everyone wanted the recipe. Of course being from Pennsylavania, I just had to use Hershey Chocolate Chips....

Steps:
- 1. Preheat your oven to 350.
- 2. Combine cake mix, oats, butter and eggs in a large bowl and mix well.
- 3. Stir in cocolate chips and mix well.
- 4. Drop by rounded teaspoons onto ungreased cookie sheets.
- 5. Place in oven and bake for 10 to 12 minutes or until lightly browned.
- 6. Remove from oven and cool slightly before removing from cookie sheet to a wire rack to completely cool.
- 7. Store in airtight container.

These easy oatmeal cookies are fully loaded with rolled oats, chocolate chips, and crunchy nuts in every bite! It's one bowl, chill & slice recipe.

Steps:
- In large bowl whisk together 1 cup of the flour, sugar, baking powder and salt. Add the butter and mix with a fork (or flat beaters on low speed), add the egg and mix then add the oats, nuts and chocolate chips.
- Mix until you have a soft slightly sticky dough, if needed add the extra flour 1 tablespoon at a time. Divide the dough in 2, roll into 2 logs, wrap the logs in plastic wrap and refrigerate at least 1 hour or up to 24 hours.
- Pre-heat oven to 350F (180C). Line 1-2 cookie sheets with parchment paper.
- Remove the dough from the fridge and slice the logs into ½ inch slices, place on the prepared cookie sheets and bake for approximately 15 minutes or until lightly golden. Let cool 5 minutes on the sheets then move to a wire rack to cool completely. Enjoy!
