Nicer then the paste from a jar! Can also be completely baked on the barbecue, but be careful with the heat! The marinade can also be used for fish, large prawns or lobster, but leave out the chilli powder and halve the amount of garlic.

3 lbs chicken pieces (legs, thighs)
3 tablespoons lemon juice
1 teaspoon salt
1 1/2 teaspoons ground ginger
1/2 teaspoon chili powder
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
orange food coloring (optional)
6 fluid ounces yoghurt
5 cloves crushed garlic
2 tablespoons oil
1 teaspoon salt
shredded lettuce
thinly sliced red onion ring
cucumber, cubes
lemon wedge, to serve

Steps:

  • Make several cuts in the chicken meat up to the bone, Rub in the lemon juice and the salt,leave for ca.
  • 30 minute Mix all the ingredients for the marinade, rub it into the chicken, cover and put in the fridge for a day.
  • Next day, preheat your oven to 400F, put chicken in a baking dish/tin, bake 15 minutes meat side up, 15 minutes meat side down and finish the cooking under a medium grill for about 10 minutes.
  • On a large plate arrange the lettuce, onion and cucumber, place the chicken on top with the lemon wedges.
  • Serve with your favourite Indian bread and a bowl of yogurt-chutney.

1 cup plain low-fat yogurt
2 garlic cloves, minced
1 teaspoon ground turmeric
1 teaspoon ground ginger

4 bone-in, skinless chicken breast halves (10 to 12 ounces each)
2 Granny Smith apples
1 tablespoon chopped fresh cilantro

Steps:

  • Preheat oven to 475 degrees. In a large bowl, mix together 1/2 cup yogurt, garlic, turmeric, ginger, 2 teaspoons salt, and 1/4 teaspoon pepper. Add chicken; turn to coat.
  • Transfer chicken to a rimmed baking sheet. Roast until an instant-read thermometer inserted in thickest part of breast (avoiding bone) registers 160 degrees, 25 to 30 minutes.
  • Meanwhile, peel apple; coarsely grate into a medium bowl. Add cilantro and remaining 1/2 cup yogurt; season with salt and pepper. Serve sauce alongside chicken, with rice, if desired.

2 -3 lbs boneless chicken tenderloins
3/4 cup tandoori paste (Deep brand)
2 tablespoons vegetable oil or 2 tablespoons olive oil
fresh kale leaf
raita (traditional mint-yogurt sauce)

Steps:

  • PLACE chicken tenderloins using tongs into a large Ziploc bag or a wide shallow dish for marinating. (NOTES: If thawing, thaw naturally and NOT by microwave oven. You may use whole boneless chicken breasts cut into chunks if kebab-style skewers are desired).
  • PLACE chicken pieces into a large Ziploc freezer bag for marinating.
  • SQUEEZE the bag to roll and coat chicken thoroughly in marinade; PLACE bag into refrigerator to marinate 3-5 hours to overnight if desired for fuller flavor and more tender chicken (recommended but not absolutely necessary); SOAK required wooden skewers in water until needed.
  • SHAKE away excess marinade from chicken; BRUSH chicken on all sides with vegetable oil or light olive oil.
  • PLACE oven rack within 6 inches of heat element; SET heat to HIGH setting.
  • SKEWER chicken lengthwise with water-soaked skewers up to 3/4 of the skewer, leaving the lower half empty so it has a "handle"; BRUSH chicken across tops with vegetable or olive oil BASTE; TURN chicken skewers over; BASTE the other side.
  • SPRAY the grill of a broiler pan with grill with non-stick cooking spray; PLACE chicken with skewer handles extending over broiler pan for easy handling when broiling, SLIDE broiler pan onto oven rack.
  • BROIL chicken until the edges begin to char slightly (keep a close eye on chicken since it cooks very quickly) TURN chicken within five minutes until lightly charred on edges but not overcooked; REMOVE from oven immediately, wearing oven mitts.
  • ARRANGE satays in a splay, with skewer handles facing outward, on a serving platter lined with fresh kale leaves; ACCOMPANY chicken satays with a sauce of plain yogurt blended with coriander-mint chutney (or yogurt with tempered creamy peanut butter and chili-garlic sauce) and/or lime wedges if desired.

Done on the grill rather than an actual tandoori oven, this chicken is very tasty and easy to make! We enjoy this all summer long, and get many compliments. Cook time doesn't reflect marinating time.

8 bone in, skinless chicken thighs
2 Tbsp vegetable oil
1 Tbsp garam masala
1 Tbsp sweet paprika
1 tsp ground coriander
1 tsp cumin
1 tsp turmeric
1 tsp cayenne
1/2 tsp cinnamon
1 1/4 c plain greek yogurt, full fat
2 1/2 Tbsp fresh lemon juice
5 clove garlic, minced
1 Tbsp fresh ginger, minced
1 tsp salt
lemon wedges, optional
grilled onion slices, optional

Steps:

  • 1. In a small pan on medium, heat the oil. Add garam masala, paprika, coriander, cumin, turmeric, cinnamon and cayenne. Heat and stir until fragrant, about 2 minutes. Be careful no to let it burn! Remove from heat and let cool completely.
  • 2. Whisk the cooled spice mixture in yogurt, then add lemon juice, garlic, ginger and salt. Scoop marinade into a zip top bag.
  • 3. Cut 3 deep slashes (to the bone) into the thighs, and drop into the marinade and squish them around, making sure the marinade gets into the slashes. Place into refrigerator and chill for at least 8 hours.
  • 4. Prepare the grill so that one side is hot, (over direct heat), the other side cooler, (not over direct heat). If using charcoal, leave one side of the grill without coals, so you have a hot side and a cooler side. If you are using a gas grill, just turn on one-half of the burners. Use tongs to wipe the grill grates with a paper towel soaked in vegetable oil. Take the chicken out of the marinade and shake off the excess. You want the chicken coated, but not gloppy. Put the chicken pieces on the hot side of the grill and cover. Cook 2-3 minutes before checking.
  • 5. Turn the chicken so it is brown (even a little bit charred) on all sides, then move it to the cool side of the grill. Cover and cook for at least 20 minutes, up to 40 minutes, depending on the size of the chicken and the temperature of the grill. The chicken is done when its juices run clear. Take off the grill as soon as juices run clear so it doesn't over cook.
  • 6. Let it rest for at least 5 minutes before serving. Serve with lemon wedges, and grilled sliced onions.

2 boneless, skinless chicken breasts
2 cups Aarti's Tandoori Marinade, recipe follows, divided
1 tablespoon vegetable oil
1 teaspoon honey
4 cups mixed salad greens
Olive oil, to taste
Lemon juice, to taste
Kosher salt and freshly ground black pepper, to taste
2 chiles de arbol
3 tablespoons fenugreek seeds
1 tablespoon coriander seeds
5 cloves
Seeds from 4 green cardamom pods
Seeds from 1 black cardamom pod
3 tablespoons paprika
1 teaspoon ground cinnamon
8 cloves garlic
1 (2-inch) piece fresh ginger, peeled
4 cups plain yogurt (recommended: full fat)
1/2 cup peanut oil
Juice of 2 limes
Kosher salt and freshly ground black pepper

Steps:

  • Toss the chicken breasts in 1 cup tandoori marinade. Cover and refrigerate for at least 2 hours, or up to overnight.
  • In a saute pan, heat the vegetable oil, and cook the chicken for about 7 minutes per side, until cooked through. Alternately, you can also grill the chicken. Remove the chicken from the pan and pour the remaining 1 cup of marinade into the pan and bring to a gentle simmer. Stir in the honey and turn off the heat. Toss the salad greens with some olive oil, a squirt of lemon juice and salt, and pepper, to taste. Serve each chicken breast over a bed of greens and top with the heated tandoori sauce.
  • To make the Marinade:
  • Put the chiles, fenugreek seeds, coriander seeds, cloves, seeds from cardamom pods (Cook's Note: Crush the pods to open, remove the seeds and throw away the hulls.), paprika, and cinnamon in a saute pan over medium heat until fragrant and toasty, about 5 minutes. Stir to avoid burning. Pour the mixture into a coffee or spice grinder and grind to a fine powder.
  • Throw the garlic and ginger into a food processor or blender and pulse until finely minced, then add the yogurt, oil, and lime juice. Process the mixture until as smooth as possible. Add the spice powder and process again. Season the mixture with salt, and pepper, to taste. Keep the marinade in the refrigerator until ready to use.

Steps:

  • Prick holes in the chicken with the tines of a fork. In a large bowl, mix together the marinade ingredients. Add the chicken and marinate, covered, overnight in the refrigerator, turning occasionally.
  • Heat the grill. Remove the chicken from the marinade. Scrape off excess and reserve. Brush the grill with oil. Grill the chicken for 5 minutes. Turn and baste with sauce. Continue to turn and baste, using as much sauce as desired, until the juices run clear when pricked with a knife, about 12 to 15 minutes.
  • Serve garnished with slices of tomato, cucumber, onion, lemon and cilantro sprigs.

3/4 cup tandoori paste (Deep brand)
2 tablespoons vegetable oil or 2 tablespoons olive oil
sliced white onion
chopped fresh cilantro

Steps:

  • SLICE skinless chicken crosswise against the bone with 2-3 deep cuts through to the bone, (on each side of chicken legs).
  • PLACE chicken pieces into a large Ziploc freezer bag for marinating.
  • POUR the MARINADE mixture over chicken; REMOVE excess air from the Ziploc bag; SEAL the Ziploc bag; SQUEEZE the bag to roll and coat chicken thoroughly in marinade; PLACE bag into refrigerator to marinate 3-5 hours to overnight if desired for fuller flavor and more tender chicken (recommended but not absolutely necessary).
  • PLACE one oven rack in the second-lowest position, and another rack in the highest position; PREHEAT oven to BAKE at 500°F (make sure oven is clean!); LINE a broiler pan with foil; SPRAY the foil liner with non-stick baking spray.

Juice of 1 lemon
Kosher salt
1/2 cup plus 2 tablespoons plain yogurt
1 tablespoon vegetable oil
1/2 small red onion, roughly chopped
3 cloves garlic, smashed
1 2 -inch piece ginger, peeled and roughly chopped
4 teaspoons tomato paste
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 3/4 teaspoons hot paprika

Steps:

  • Preheat the broiler. Make shallow cuts in the chicken thighs with a sharp knife. Toss the chicken with the lemon juice and 1 1/2 teaspoons salt in a large bowl.
  • Pulse 2 tablespoons yogurt, the vegetable oil, onion, garlic, ginger, tomato paste, coriander, cumin, 11/2 teaspoons paprika and 1/2 teaspoon salt in a food processor to make a paste. Toss the chicken in the mixture and let marinate 15 minutes.
