Steps:
- Blot chicken thighs with paper towels and sprinkle with salt and pepper.
- Melt butter with olive oil in a 12-inch skillet over medium heat. Place chicken thighs in the hot oil and cook until browned, about 4 minutes per side. Remove chicken from the skillet and keep warm.
- Add carrots, onion, and minced garlic to the same skillet, stirring to coat with pan drippings. Season with salt and pepper and cook for about 2 minutes. Nestle browned chicken thighs into the vegetables, pour wine and 2 tablespoons water over everything, and cook for an additional 2 minutes.
- Cover, reduce heat to low, and simmer until carrots are fork-tender and chicken juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and vegetables from the skillet with a slotted spoon.
- Combine cornstarch and 1 tablespoon water in a small bowl, stirring to dissolve any lumps. Add slurry to the drippings in the skillet and bring to a boil, stirring constantly; cook until thickened, 3 to 5 minutes.
- Pour sauce over chicken pieces and vegetables and sprinkle with fresh parsley to serve.

- Heat a large oven-safe skillet over medium-high heat. Add olive oil.
- Season chicken breasts with 1 tablespoon Italian seasoning and 1/2 teaspoon garlic salt; place in the hot skillet. Sear until golden but not cooked through, 1 to 2 minutes per side. Remove to a plate.

I got this recipe from a Campbells Soup add in one of those 'family' magazines years ago. I lost the recipe, but have made it so many times, that I'm posting it here from memory, for safe-keeping. - In a large skillet, melt butter on med-low, and saute onion, green bell pepper and drained mushrooms, for 2 minutes, . (do not let butter burn).

- Place the chicken cubes in a bowl, then season with salt and pepper.
- Add in 1/2 cup cornstarch; toss until the chicken cubes are well coated.
- Place the chicken in a colinder and shake off an excess cornstarch.
- In a small bowl mix together chicken broth and 1-1/2 teaspoons cornstarch; whisk until smooth, then add in the rice vinegar, oyster sauce, soy sauce and sugar; whisk well to combine.
- In a large heavy skillet (or wok) heat the 1/3 cup oil until very hot (about 5 minutes).
- Add in the chicken cubes and fry until JUST cooked though, stirring with a wooden spoon (about 6 minutes).
- Using a slotted spoon remove the chicken to a bowl.
- Pour off some of the fat (leave about 2 tablespoons in skillet).
- Add in green onions, ginger, fresh garlic and red bell pepper; stir-fry over high heat until the bell pepper is crisp-tender (about 2 minutes).
- Return the cooked chicken to the skillet or wok; add in the broth mixture and stir until the sauce thickens (about 1 minute).
- Serve with cooked rice.

- Stir 2 tablespoons parmesan into the spaghetti sauce and set aside.
- Heat olive oil in a large skillet over medium high heat. Add the chicken and brown. (About 10 minutes).

- 1. In a large skillet over medium heat, melt 2 tablespoons butter and add olive oil. Once hot, add the chicken and garlic. Stirring occasionally until chicken is cooked. Place chicken and juices on a plate and set aside.
- 2. In the same skillet, add the chicken broth and bring to a boil. Once boiling add the pasta and cook until tender. Drain and save 1/4 cup of broth.
- 3. Add the pasta back to the same skillet, along with the cream, chicken and juices and slowly stir in the Parmesan cheese. Next stir in the pepper, onion and last tablespoon of butter. Cook until desired thickness, about 4 - 5 minutes. Add the cooked asparagus and heat through. ( if you need to thin out the sauce, add 1 tablespoon at a time of the reserved broth you cooked the pasta in.)
- 4. Serve with additional green onions and Parmesan cheese.
