EASY CHICKEN SATAY
Savory chicken served on skewers with a slightly sweet peanut sauce.

Steps:
- Stir together 1/2 cup coconut milk, garlic, 1 teaspoon curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours.
- Bring 1 cup coconut milk, 1 tablespoon curry powder, peanut butter, chicken stock, and 1/4 cup brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime juice and soy sauce; season to taste with salt.
- Preheat a grill for medium-high heat.
- Thread marinated chicken onto skewers, then grill 4 to 5 minutes per side, or until cooked through. Serve with warm peanut sauce.

QUICK AND EASY CHICKEN SATAY
This is so simple and quick to put together, it is a great recipe to make after work as it can be on the table in about 30 Min's. The spiciness of the dish will depend on the brand of satay sauce you buy, mine is a medium spice and I add extra chili flakes as well, so you can make this as mild or as spicy as you like to suit personal preference. I serve this dish over basmati rice but serve with whatever you want if you do not make the rice it would be on the table even quicker.

- Heat the oil in a wok or large frying pan, stir fry chicken in batches, until browned all over and cooked. Remove and set to one side.
- Cook onion and garlic in same wok, stir-until onion softens.
- Return chicken to pan, add remaining ingredients except green onion, stir-fry until everything is hot and sauce has thickened slightly.
- To serve: Spoon chicken over rice and sprinkle with green onions.

- PLACE chicken tenderloins using tongs into a large Ziploc bag or a wide shallow dish for marinating. (NOTES: If thawing, thaw naturally and NOT by microwave oven. You may use whole boneless chicken breasts cut into chunks if kebab-style skewers are desired).
- PLACE chicken pieces into a large Ziploc freezer bag for marinating.
- SQUEEZE the bag to roll and coat chicken thoroughly in marinade; PLACE bag into refrigerator to marinate 3-5 hours to overnight if desired for fuller flavor and more tender chicken (recommended but not absolutely necessary); SOAK required wooden skewers in water until needed.
- SHAKE away excess marinade from chicken; BRUSH chicken on all sides with vegetable oil or light olive oil.
- PLACE oven rack within 6 inches of heat element; SET heat to HIGH setting.
- SKEWER chicken lengthwise with water-soaked skewers up to 3/4 of the skewer, leaving the lower half empty so it has a "handle"; BRUSH chicken across tops with vegetable or olive oil BASTE; TURN chicken skewers over; BASTE the other side.
- SPRAY the grill of a broiler pan with grill with non-stick cooking spray; PLACE chicken with skewer handles extending over broiler pan for easy handling when broiling, SLIDE broiler pan onto oven rack.
- BROIL chicken until the edges begin to char slightly (keep a close eye on chicken since it cooks very quickly) TURN chicken within five minutes until lightly charred on edges but not overcooked; REMOVE from oven immediately, wearing oven mitts.
- ARRANGE satays in a splay, with skewer handles facing outward, on a serving platter lined with fresh kale leaves; ACCOMPANY chicken satays with a sauce of plain yogurt blended with coriander-mint chutney (or yogurt with tempered creamy peanut butter and chili-garlic sauce) and/or lime wedges if desired.

This is a really easy recipe and very tasty. It's written for a microwave, but ingredients can be easily cooked in a saucepan on the stove. Use light peanut butter for a calorie reduced version and a spray cooking oil rather than the butter.

- Chop the garlic and onion.
- Place butter, garlic and onion in microwave proof dish and cook on HIGH for 1 minute.
- Add peanut butter, curry powder, 'something spicy' and chicken stock and cook on HIGH for 4 minutes; stopping after 2 minutes and stirring.

- Soak 15 wooden skewers in water.
- In a large plastic bag, combine all ingredients and toss to coat.

EASY THAI SATAY APPY (BEEF OR CHICKEN)
I find that RZ has made me much more aware of simple recipe opportunities, esp those found right on the cans of products. I guess you expect them to be so commonly used that you discount them at once. Here is the easiest recipe I have ever seen for satay (beef or chicken). All you really have to do is open a can. I love an easy prep, so this caught my eye. (Time does not include time for skewers to soak or satays to marinate)

- Soak bamboo skewers in water for 2 hours.
- Pierce meat strips onto bamboo skewers. Combine turmeric powder w/350 ml of the coconut milk & marinate for at least 60 min (or longer for more flavor).
- Grill satays & use the remaining 50 ml of coconut milk & turmeric mixture to baste during grilling. Serve w/heated satay sauce.
- NOTE: I've entered this recipe as an appy w/1 skewer per person. As an entree to serve 2 persons, I'd increase the amt of meat to get 10 skewers to marinate & keep all other ingredients the same.

This is a regular at our house, for now, with a near on 2 year old I use smooth peanut butter and add crushed peanuts to the adults meals. This is kid friendly so add some fresh or dried chili if you like a kick. I also use this with diced beef
