1 1/2 cups chopped cooked chicken or 1 1/2 cups cooked turkey
1/2 cup sliced celery
1/2 cup thinly sliced green onion
1 tablespoon lemon juice
1/8 teaspoon pepper
1/3 cup mayonnaise
2 tablespoons sweet pickle relish or 2 tablespoons chopped green peppers
2 teaspoons prepared mustard
2 hard-boiled eggs, chopped

Steps:

  • In medium mixing bowl combine first three ingredients.
  • Stir in the lemon juice and pepper.
  • Combine the mayo, pickle relish and prepared mustard.
  • Add this sauce to chicken and gently stir in the eggs.
  • Cover and chill until ready to serve.

  • Drain chicken very well and empty into mixing bowl.
  • Add remaining ingredients and mix well with a fork shredding chicken as you do so.

1 1/2-2 lbs romaine lettuce
1 bunch green onion, diced (optional)
1 (8 ounce) bottle kraft caesar ranch dressing
1 (3 ounce) jar hormel real bacon bits
1/4-1/3 cup parmesan cheese
1 (6 ounce) box caesar-flavor croutons
1 (8 ounce) package finely shredded mozzarella cheese

Steps:

  • Wash and lay out lettuce leaves on paper towels and pat dry.
  • Cut lettuce into 1 inch strips and place in a large mixing bowl.

4 boneless, skinless chicken breast halves (about 1 3/4 pounds)
1 tablespoon plus 1 1/2 teaspoons olive oil
Potatoes:
14 ounces small red potatoes, quartered
4 teaspoons olive oil
1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
Salad:
2 slices whole-wheat bread
3 teaspoons chopped garlic
1-2 anchovy fillets, sliced
Juice of 1/2 lemon (about 2 tablespoons)
2 tablespoons extra-virgin olive oil
1/8 teaspoon salt
8 romaine lettuce leaves, cut into bite-size pieces
Freshly ground black pepper

Steps:

  • Chicken:
  • Mix lemon juice, basil, oregano and garlic. Season chicken with salt and pepper. Heat oil over medium heat in a large skillet. Cook chicken 8 minutes; turn and cook 5 minutes more. Add lemon-juice mixture and stir up anything stuck to skillet. Reduce heat and cover; simmer until cooked through, about 6 minutes.
  • Potatoes:
  • Heat oven to 450°F. Toss all ingredients in a roasting pan and cover with foil. Cook 20 minutes. Remove foil; cook 20 minutes more, stirring once.
  • Salad:
  • Toast bread until very crisp, then rub each slice with 1 teaspoon garlic. Beat remaining 1 teaspoon garlic with anchovies, lemon juice, oil and salt with a fork in a salad bowl until well emulsified. Add lettuce; toss to evenly coat leaves. Grind black pepper over salad. Dice garlic toast and add croutons to salad. Toss again to mix well. Serve salad immediately.

Number Of Ingredients 9

SALAD:
2 skinless, boneless chicken breasts, 16-ounce total
1 tablespoon reduced sodium taco seasoning
1/2 teaspoon cumin
1 cup canned black beans, rinsed
1 cup chunky salsa
6 cups chopped romaine or red leaf
1/4 cup reduced fat Mexican cheese blend, shredded
1/2 cup zesty avocado cilantro buttermilk dressing

Steps:

  • Place the chicken in the slow cooker and season with taco seasoning and cumin. Pour the beans over the chicken and top with salsa. Cover and cook on LOW for 4 hours, or until the chicken is tender and easily shreds with 2 forks. Shred the chicken and combine with the beans and sauce, keep warm until ready to eat. Makes 3 1/2 cups. To serve, place the chopped lettuce on a plate or in a bowl. Top with some of the chicken, shredded cheese and salad dressing.
