EASY CHICKEN & MINUTE RICE CASSEROLE

Easy Chicken & Minute Rice Casserole image

Very much a comfort food dish. Easily prepared by ingredients most of us have on hand in our pantry. So easy to make. You can also easily edit the recipe choosing soups you prefer, this is my favorite combination.

Provided by Heather N.

Categories     One Dish Meal

Time 50m

Yield 1 casserole, 4 serving(s)

Number Of Ingredients 7

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of mushroom soup (could substitute cream of celery)
1 (10 3/4 ounce) can 2% low-fat milk, using one of the soup cans to measure (note, this is ONE can total NOT per can of soup as the soup directions may indicate)
3 -4 boneless chicken breasts, chicken tender strips work too
1 cup uncooked instant Minute Rice
lemon pepper (optional)
salt & pepper

Steps:

  • Preheat oven to 350 degrees (see baking instructions for alternate methods).
  • Mix the 2 cans of soup, 1 can milk, and 1 cup of uncooked rice together. Add salt & pepper to taste.
  • Pour above mixture into a 13x9x2 casserole dish.
  • Cut the chicken into strips (about the width of a chicken tender/finger).
  • Push the chicken strips down into the soup & rice mixture in the casserole dish so they are completely emerged.
  • Sprinkle top with lemon pepper/salt/black pepper.
  • Bake at 350 degrees 35-40 minutes or until chicken is finished. NOTE that cooking time will vary depending on how you choose to cut up the chicken. If using whole chicken breasts cook at 375 degrees for 45 minutes, or until finished.

  • My family loves this recipe and it is SOOOO easy to make, plus I usually have all of these ingredients on hand which makes for a quick meal.
  • I love the flavors of the rice so much that sometimes I will make it without the chicken as a quick and easy side dish!

EASY CHICKEN AND WILD RICE CASSEROLE

Easy Chicken and Wild Rice Casserole image

A terrific recipe from a family cookbook. It's great when you make it, but it's even better the next day!

Provided by cathiebakes

Categories     Main Dish Recipes     Casserole Recipes

Time 3h15m

Yield 20

Number Of Ingredients 12

2 (3 pound) fryer chickens
water to cover
1 cup dry sherry
1 onion, sliced
½ cup sliced celery
1 ½ teaspoons salt
½ teaspoon curry powder
½ cup butter
1 pound fresh mushrooms
2 (16 ounce) packages long grain and wild rice mix
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream

Steps:

  • Place chicken in a deep pot and cover with water; add sherry, onion, celery, salt, and curry powder. Bring liquid to a boil, cover pot, reduce heat to medium-low, and simmer until chicken is no longer pink near the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

  • Heat butter in a skillet over medium-high heat; saute mushrooms until golden brown, about 10 minutes.
  • Bring reserved chicken broth and wild rice to a boil in a large saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, about 45 minutes. Drain excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine chicken, rice, and about 1/2 of the mushrooms in a 4-quart casserole dish. Mix mushroom soup and sour cream together in a bowl and stir into chicken-rice mixture. Arrange remaining mushrooms in a circle on top of the casserole.
  • Bake in the preheated oven until bubbling, about 1 hour.

EASY FLUFFY RICE AND CHICKEN CASSEROLE

Easy Fluffy Rice and Chicken Casserole image

I've been making this recipe for years, and decided to post it here for safe keeping, because the recipe card is getting very tattered. It's one of a series of recipe cards I would get in the mail from General Mills, many years ago. I usually used chicken thighs ( I prefer the dark meat) but would have to extend the cooking time by about 15 minutes or so. My family loved it and I still make it on occassion.

EASY LUNCHEON CHICKEN AND RICE CASSEROLE

Easy Luncheon Chicken and Rice Casserole image

I tweaked several recipes and ideas from friends and came up with this easy dish. My kids love it, and so did about 30 ladies I served it to at a luncheon. The chicken can be cooked, diced, and frozen way ahead of time. The chicken needs to be thawed before assembling the recipe. I have used the lowest fat cream of celery & mushroom soups with success. If you can't find cream of onion soup, just substitute another cream soup. FYI: 6 cups diced cooked chicken weighs about 2 pounds.

Yield 12-15 serving(s)

Number Of Ingredients 6

3 cups uncooked rice

1 (10 1/2 ounce) can cream of mushroom soup
2 (14 1/2 ounce) cans chicken broth
6 cups diced cooked chicken

Steps:

  • Combine rice, soups, and chicken broth.
  • Pour into a greased 9"x13" casserole dish.
  • Sprinkle chicken on top, and "push" under the mixture a little to moisten.
  • Cover dish with foil, and bake at 350 degrees F for 1 1/2 hours.
  • Note: The dish will be completely full, so be careful when placing in oven.
