Steps:
- Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
- Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.
- Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.
- Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
- Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
- To check the chicken is cooked, find the thickest part and tear in half - if any part is still raw cook until done.
- Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.

- Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove vegetables to a plate.
- Add chicken to the skillet, adding more oil if needed. Saute until chicken is no longer pink and the juices run clear, about 5 minutes. Add water and taco seasoning; stir until seasoning dissolves. This recipe is so easy and good! I didn't have time one day to make fajitas, so I decided to put them in the crock pot. They turned out real good and not soupy at all. The McKormick seasonings really gave the chicken a good flavor.

- I like to use my iron skillet for these.
- When skillet is very hot add bell peppers, onion and garlic; (be careful not to burn garlic or it will taste bitter) cook, stirring occasionally, until onion is slightly golden and peppers are tender.

- Season thawed chicken breasts with S&P on both sides.
- In large skillet, brown chicken breasts in oil until golden brown on both sides. Remove from skillet.

Allen made this when he lived alone. He put it in the crockpot the night before then the next morning set the pot in the cooker and turned it on. This is super easy, super delicious, and a no brainer!

- Slice peppers and onions then place them on the bottom of the crock pot. Put Chicken on top of peppers and onions. Sprinkle taco or fajita seasoning on the top. Cook on low for 6-8 hrs (or high for 3-4). The chicken looks burnt but it's just crispy.
- Shred everything up and mix in the juice.
- Serve with tortillas and all the toppings - sour cream, guacamole, cheese, lettuce, etc.

- 1. Combine marinade ingredients in a zip lock bag or plastic container
- 2. Add Chicken, toss to coat and refridgerate for 2 hours
- 3. Heat 2 tbsp of Olive Oil in cast iron skillet or regular frying pan
- 4. Add Peppers and Onions and sprinkle with Cumin, Chile Powder and Salt
- 5. Begin heating Tortillas in a dry frying pan on medium heat - about 30 seconds per side. Keep warm in foil or tortilla warmer

- 7. Remove veggies and set aside
