2 large chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, sliced
1 red chilli, finely sliced (optional)
1 heaped tbsp smoked paprika
1 tbsp ground coriander
pinch of ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
4-5 drops Tabasco
6 medium tortillas
bag mixed salad
230g tub fresh salsa

Steps:

  • Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
  • Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.
  • Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.
  • Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
  • Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  • To check the chicken is cooked, find the thickest part and tear in half - if any part is still raw cook until done.
  • Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.

1 tablespoon vegetable oil, or more as needed
1 onion, cut into strips
1 bell pepper, cut into strips, or more to taste
2 skinless, boneless chicken breast halves, cut into strips

Steps:

  • Mix chicken broth and fajitas seasoning until blended.

1 small onion, sliced
3 cloves garlic, finely chopped
1 1/2 lbs lean beef sirloin or 1 1/2 lbs boneless skinless chicken breasts, cut into 2 inch strips
1 1/4 teaspoons ground cumin
1 -2 teaspoon chili powder (depending on how much heat you want)
1 dash fresh lime juice
non stick cooking spray
8 6-inch flour tortillas, warmed

  • Spray a large skillet with non stick cooking spray.
  • I like to use my iron skillet for these.
  • When skillet is very hot add bell peppers, onion and garlic; (be careful not to burn garlic or it will taste bitter) cook, stirring occasionally, until onion is slightly golden and peppers are tender.

2 tablespoons olive oil
4 soft tortillas, whole wheat

Steps:

  • Slice peppers and onions then place them on the bottom of the crock pot. Put Chicken on top of peppers and onions. Sprinkle taco or fajita seasoning on the top. Cook on low for 6-8 hrs (or high for 3-4). The chicken looks burnt but it's just crispy.
  • Shred everything up and mix in the juice.

FOR THE MARINADE
1 Tbsp mild chile powder - i prefer it from hatch, nm
1 Tbsp cumin
2 Tbsp olive oil

1/4 c lime juice
1/4 c water
1 tsp liquid smoke
1 tsp salt
1/4 tsp ground black pepper
FOR THE VEGGIES
1/2 sweet green pepper - sliced into strips
1/2 sweet red pepper - sliced into strips
1 large spanish onion - sliced into strips
1 Tbsp mild chile powder - i prefer it from hatch, nm
1 Tbsp cumin
1/2 Tbsp salt
3 Tbsp olive oil
16 tortillas - corn or flour

Steps:

  • 1. Combine marinade ingredients in a zip lock bag or plastic container
  • 2. Add Chicken, toss to coat and refridgerate for 2 hours
  • 3. Heat 2 tbsp of Olive Oil in cast iron skillet or regular frying pan
  • 4. Add Peppers and Onions and sprinkle with Cumin, Chile Powder and Salt
  • 5. Begin heating Tortillas in a dry frying pan on medium heat - about 30 seconds per side. Keep warm in foil or tortilla warmer
  • 6. Saute until tender, turning frequently to mix seasoning with veggies - about 5 mins
  • 7. Remove veggies and set aside
  • 8. Add remaining 1 tbsp of olive oil to skillet/pan and heat for a few seconds
  • 9. Add marinaded chicken and cook until meat is 'white' all the way through - about 3-4 mins per side, depending on thickness
  • 10. Chop cooked chicken breasts into bite sized pieces, serve and enjoy with your favorite Mexican condiments!!

4 boneless skinless chicken breasts
1/8 cup butter
2 tablespoons Mrs. Dash seasoning mix (regular or chipotle)
1 large onion
1 green pepper
1/4 cup brown sugar

Steps:

  • Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned.
  • Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
  • Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges.
  • These fajitas are really easy to make and a little different because they're sweet and spicy.
  • Garnish with : lettuce, tomato, sour cream, guacamole, cheese, tortillas.

1 teaspoon pure chile powder
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon cornstarch
1/4 cup water
3 tablespoons extra-virgin olive oil
1 whole skinless, boneless chicken breast (about 1 pound), cut into 1/2-inch strips
1 green bell pepper-cored, seeded and cut into thin strips
1 medium onion, thinly sliced
2 tablespoons fresh lime juice, plus lime wedges for serving
8 flour tortillas, warmed in the microwave
Shredded lettuce, shredded cheddar cheese, salsa and sour cream, for serving

Steps:

  • Step 1 In a resealable plastic bag, combine the chile powder with the salt, cumin, onion powder, garlic powder, cornstarch, water and 2 tablespoons of the oil. Add the chicken, bell pepper and onion, seal and knead gently to coat. Refrigerate for 15 minutes. Step 2 Heat the remaining 1 tablespoon of oil in a large nonstick skillet until shimmering. Empty the contents of the bag into the skillet and cook over high heat, stirring occasionally, until the vegetables are crisp-tender and the chicken is cooked through, about 6 minutes. Remove from the heat and stir in the lime juice. Step 3 Transfer the chicken and vegetables to a large bowl and serve with the warmed tortillas, lettuce, cheese, salsa, sour cream and lime wedges.
