Broccoli and Cheddar Nuggets image

Yummy alternative to chicken nuggets for the kids. I'm not a broccoli fan in general, but this is really tasty.

1 teaspoon vegetable oil, or as needed
1 (16 ounce) package frozen chopped broccoli, thawed
1 cup bread crumbs
1 ½ cups shredded Cheddar cheese
3 eggs
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet with oil.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil; add broccoli, cover, and steam until tender, 2 to 6 minutes. Let broccoli cool at room temperature until cool enough to touch.
  • Transfer broccoli into a large mixing bowl. Add bread crumbs, Cheddar cheese, eggs, basil, oregano, and garlic powder to the broccoli; mix. Shape into nuggets or fun shapes and arrange onto the prepared baking sheet.
  • Bake in preheated for 15 minutes, flip, and continue baking until heated through and beginning to firm, 10 to 15 minutes more.

cooking spray
3 skinless, boneless chicken breasts, cut into large chunks
¼ cup ranch dressing
⅔ cup panko bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Cover a baking sheet with aluminum foil; place a wire cooling rack on top and spray with cooking spray.
  • Put chicken into a gallon-size resealable plastic bag. Add ranch dressing; seal and shake bag to coat chicken evenly.
  • Mix panko, Parmesan cheese, garlic powder, and parsley together in a bowl; pour into bag with chicken. Seal and shake bag to coat thoroughly. Remove from bag; place on rack in a single layer.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Turn broiler on high; broil until crispy, about 1 minute.

These are so good! Crisp on the outside and melting cheese on the inside! This recipe was originally from Betty Crocker. Servings depends totally on how large or small you cut your cheese. I prefer Monterrey Jack.

1 lb swiss cheese or 1 lb mozzarella cheese, cut in about 1/2 inch nuggets
vegetable oil (for frying)
1 cup Bisquick
1 teaspoon paprika
1/4-1/2 teaspoon garlic powder
1/2 cup milk
1 egg
marinara sauce (optional)

Steps:

  • Place cheese nuggets in a pan and put in freezer for at least one hour.
  • Mix bisquick,paprika, garlic powder, milk and egg until smooth.
  • Dip cheese into batter,covering cheese completely.
  • Fry in 2 inches of oil heated to 375 degrees in a frying pan or in an electric skillet.
  • Fry about 1-2 minutes, turning once, until golden brown.
  • Drain on paper towels.
  • Let stand 3 minutes before serving.
  • Serve with marinara sauce.(recipe #153093).

FRIED MOZZARELLA NUGGETS

8 ounces string cheese sticks, room temperature
1/2 cup all-purpose flour
Salt and pepper
1 egg, lightly beaten
1/2 cup Italian seasoned bread crumbs
Extra-light olive oil, for deep frying
Bottled chunky marinara sauce, for dipping

Steps:

  • Cut cheese sticks into thirds. Place flour on a plate and season it with salt and pepper. Put the egg in a small bowl. Place bread crumbs on a plate.
  • Add cheese pieces to flour and toss to coat. Dip in egg, and then roll in bread crumbs. Arrange breaded cheese in a single layer on a tray or baking sheet. Let stand for 15 to 30 minutes. Pour oil into large skillet to a depth of 1-inch, and heat over medium-high heat. When oil is hot, carefully drop cheese pieces in, a few at a time, and fry until golden, about 30 seconds. Remove from oil with a slotted spoon and drain on paper towels. Serve with your favorite chunky marinara sauce for dipping.

Steps:

  • First, season the ground chicken with salt and pepper.
  • Grab a handful of ground chicken and roll into a rough ball shape, place a cube of cheese in the center and wrap the ground chicken around it. Form it into a chicken nugget shape. Set aside.
  • Season the panko with oregano.
  • Take the chicken nuggets and coat with flour, dip in egg and cover with the panko/oregano mix.
  • Deep fry in the oil until browned and crispy.
  • Enjoy!
