½ cup sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
½ cup shredded Monterey Jack cheese
6 flour tortillas (6"), warmed
1 small tomato, chopped

Steps:

  • Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
  • Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl.
  • Divide the chicken mixture among the tortillas. Roll up the tortillas and place them seam side up in 11 x 8" shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish.

6 (6-inch) soft flour tortillas
1 (15-ounce) can Wolf brand chili with no beans
Salt and black pepper, to taste
1/8 teaspoon ground cumin
1 (8-ounce) block medium cheddar cheese, shredded
1/4 cup finely diced onion
Sour cream, hot taco sauce, chopped green onions

Steps:

  • Preheat oven to 350° F. Lightly spray an 8 x 8" baking dish with cooking spray. In a medium mixing bowl, stir together the chili, a little salt and black pepper, and the cumin. Spread a thin layer of the chili mixture in the bottom of the baking dish, just enough to cover. Reserve about 1/2 cup of the shredded cheese for the top. Fill the tortillas with remaining cheese and onion then roll up and place seam side down on top of the chili in the baking dish, placing them close together. When all the tortillas are in the pan, spoon the remaining chili over the top of tortillas, then top with the reserved cheese. Cover dish tightly with aluminum foil and bake for about 25 minutes, until hot and bubbly. Serve immediately with toppings of choice and whatever sides you want. (I added a thin layer of refried beans to a couple of the tortillas along with the cheese and onion.)

2 lbs extra-sharp cheddar cheese, cut into twelve equal portions
12 small corn tortillas
1/4-1/2 cup vegetable oil
1 onion, chopped
1 (10 ounce) can enchilada sauce
1 (14 ounce) can chili without beans

Steps:

  • Quickly cook tortillas in hot oil until softened. Drain well on paper towels. Set aside.
  • Saute onion in oil until limp. Drain.
  • Place one stick of cheese and some onion onto each tortilla. Roll up. Place seam side down in lightly greased casserole.
  • Combine enchilada sauce and chili in a medium bowl. Pour over tortillas.
  • Bake at 375 until done (20-40 minutes).

2 cups cheese (I used Monterey Jack or cheddar)
5 frozen chicken drumsticks (2 cups chicken)
2 (10 ounce) cans Rotel tomatoes & chilies (or 2 cans chopped tomatoes, 2 cans of green chiles)
1/4 cup chopped onion (i used green onions)
1/2 cup sour cream
6 corn tortillas
1 tablespoon shortening

Steps:

  • To make my chicken, I put 5 drumsticks (frozen) in the crock pot on low with the 2 cans of Rotel.
  • These cooked for 7 hours when the chicken was nice and tender. I took out the bones and put it in a bowl with 1 cup of the cheese, the onions, and a little of the tomato mixture from the crock pot.
  • Now, take the 6 corn tortillas, spread a thin layer of the shortening on them, place them on a microwave safe plate and cook for about 1 minute (until they are warm and soft).
  • Take 1 tortilla and put 2-3 spoonfuls of the chicken/cheese mixture in it, then roll the tortilla like a cigar, and place it seam side down in your pan (I used a 1 1/2 quart pan--you can use a larger one if you are doubling the recipe) continue previous step with the rest of your tortillas.
  • Mix 1/4 cup of crock pot tomato mixture with your sour cream.
  • Pour this mixture over your enchiladas.
  • top with the rest of your cheese.
  • cover with foil and cook for 25 minutes at 350 degrees.

16 -20 corn tortillas
3 (8 ounce) cartons sour cream
2 (10 ounce) cans cream of chicken soup
2 (4 ounce) cans chopped green chilies
1 1/2 lbs grated colby-monterey jack cheese
1 cup green onion, finely chopped
1/3 cup vegetable oil

Steps:

  • Heat vegetable oil in skillet over medium heat.
  • Dip corn tortillas in hot oil for 2-3 seconds to soften them.
  • Drain on paper towels until cool.
  • Mix the sour cream, soup and green chilies.
  • Spread about 1 cup of the sour cream mixture over the bottom of a 9" X 13" X 2" baking pan.
  • Place some grated cheese& chopped onion about 1 inch from the edge of a softened tortilla.
  • You'll need to experiment to get exactly the right amount of filling.

  • It will probably take about 2 tablespoons of filling.

Easy to make beef and cheese enchiladas that should please anyone who is fond of Mexican food. These are on the mild side, for Mr. Wonderful, but you can always add more heat if you desire. This is comfort food, and definitely company worthy. This recipe makes four beautiful enchiladas, but can easily be doubled or tripled to feed a crowd. Have the recipe handy to share, because you definitely will be asked for it. Enjoy!

1/2 pound hamburger
4 organic flour tortillas
1 1/4 cup tillamook, farm style, with 4 cheeses, or more if needed
1 can red la victoria enchilada sauce, 10 ounces, divided
tostitos brand mild chunky salsa
3 heaping tablespoons chopped onions
1 teaspoon cilantro dry leaf
1/4 teaspoon garlic powder
1/4 teaspoon cumin
sea salt and coarse ground pepper to taste
GARNISH
sour cream
avocado slices
tomatoes
green onions chopped
pimento stuffed olives
SERVING SUGGESTION
refried beans

Steps:

  • Pre-heat the oven to 350 degrees.
  • Get all the ingredients on the counter before you begin. I used a Copper Chef pan to bake the enchiladas which is about 9 X 9 inches square. You can use any similar size pan or baking dish.
  • ZAP 'EM! Wrap four large organic tortillas in paper towels and set them in the microwave. Zap for 15 seconds. Leave them covered and in the oven.
  • Chop the onions.
  • COOK MEAT AND ONIONS In a medium skillet over med high heat, fry the hamburger, breaking it up with a spatula. When it turns gray, add the chopped onion.
  • SEASON I just sprinkle the seasonings without measuring. You may want more, so taste after adding. Add the seasonings: 1/4 teaspoon of each, garlic powder, cumin, and cilantro. Salt and pepper to taste, and cook until the meat is done. Set aside.
  • THE SECRET INGREDIENT Add the 1/2 cup of Tostitos mild salsa Stir in, and set pan aside. (This brand of salsa is amazing in these enchiladas. Others, not so much.)
  • La Victoria is the brand of enchilada sauce I use. It is a mild sauce. You can always add more heat, but you can't take it out. :) I have tried other brands, we prefer this one.
  • SAUCE Pour almost half of the red enchilada sauce in the pan.
  • MAKE ENCHILADAS Take a warm tortilla in your hand ( or fill it on a cutting board) and put about three heaping tablespoons of the meat mixture down the center of the tortilla..
  • CHEESE This is the brand of cheese I use: Tillamook, Farm Style, 4 cheese, thick grated. (It is incredible in enchiladas!)
  • Add two tablespoons grated cheese on top of the meat
  • ROLL 'EM! Roll the enchiladas and put them seam down in the pan on top of the sauce. Finish rolling the rest of the enchiladas. Organic tortillas aren't as pliable as regular tortillas, so I wrap them loose.
  • SAUCE Pour the remainder of the sauce over the enchiladas.
  • MORE CHEESE Place a wide row of the remaining cheese down the center of the enchiladas. (It spreads as it cooks)
  • BAKE 'EM! Cover the pan with foil tightly. Bake the enchiladas at 350 degrees for 25 to 30 minutes. Serve immediately.
  • GARNISH Serve with sour cream, green olives, a garnish of green onions and fresh cilantro with sliced avocados and cherry tomatoes. Serving suggestion: refried beans.
  • EAT 'EM Here is what it looks like. Enjoy!

2 chicken breasts
1 lime
salt

1 lb Mexican blend cheese
1 cup sour cream
1 small onion
1 (4 ounce) can green chilies
10 small flour tortillas
1 (14 ounce) can enchilada sauce

Steps:

  • Cut the chicken breast in to cubes. Cook on stove top. While cooking squeeze 1/2 lime on it and salt and pepper to your taste.
  • When the chicken is cooked dice it up as small as you like I like them very small.
  • Cut the small onion up as fine as you like. Once again I like mine very small.
  • Put in a large bowl for mixing the Chicken,Cheese,Sour Cream,Onion,Chilies.
  • Mix throughout.
  • Get a casserole dish spray with Pam.
  • Put a few large spoonfuls of the mix in each tortilla.
  • When they are all in the dish put the enchilada sauce on top.

1 tomato chopped
sour cream for garnish
oil for frying

Steps:

  • 1. Cut chedder cheese into 12 pieces, also cut the jack cheese into 12 pieces. Chop the onion fine. Slice the olives. Chop the tomato, set aside.
  • 2. Prepare gravy mix as directed on each package..(2 cups water mixed in with both packages, stir well and cook til thickened) add enchilada sauce and stir well. Pour about 1/2 cup into bottem of a 8x11 pan.
  • 3. Soften tortillas in a little bit of oil..you dont want to fry them, just soften them and put them on a plate.
  • 4. Take one tortilla and put in a slice of cheddar and a slice of jack cheese, about a teaspoon or a little less of onion and sprinkle a few olives on it, then roll up
  • 5. Pour Sauce over enchiladas and sprinkle some cheese on top, then some olives and bake 350 for 30 minutes. Let sit 10 minutes to set or they wont come out of the pan real nice. Top with chopped tomatoes , sour cream
  • 6. if I am having company over, I double this and put it in a 13x9 pan. I also have varied this adding some hamburger seasoned with taco seasoning mix and a can of green chilis and cheese, or refried beans and cheese. Another time I used a rottiserie chicken and shredded it with some cheese for teh filling. The plain cheese ones are the favorite though.

1 can (10 3/4 ounces) Campbell's 98% Fat Free Cream of Chicken Soup
1/2 cup sour cream
1 cup mild salsa
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup Monterey Jack cheese
6 (6-inch) flour tortillas, warmed
1 small tomato, chopped (about 1/2 cup)
Sour cream
Optional add ins:
small can of green chilies (in mix)
small can of black beans, drained

Steps:

  • 1. Heat the oven to 350°F. Stir the soup, sour cream, salsa and chili powder in a medium bowl. 2. Stir 1 cup soup mixture, chicken and cheese in a large bowl. 3. Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side down in an 11 x 8 x 2-inch baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish. 4. Bake for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and sour cream. I added more cheese on top in the last 5 minutes for the people not dieting. We all topped them with fat free sour cream. Can add avocado slices on top.
