2 cups white sugar
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 ½ cups vegetable oil
4 eggs
3 cups grated carrots
1 cup chopped walnuts
1 (3 ounce) package cream cheese
¼ cup heavy whipping cream
1 teaspoon vanilla extract
2 ½ cups sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube pan.
  • Combine the sugar, flour, salt, cinnamon, soda, oil. With an electric mixer beat in the eggs one at a time. Stir in the carrots and the walnuts. Pour the batter into the prepared baking pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour 20 minutes. Note: this cake can be made in two 9 inch layer cake pans just change the baking time to 40 minutes.
  • To Make Frosting: With an electric mixer blend the cream cheese and cream. Add the vanilla and confectioners' sugar. Frosting can be spread and a still warm cake.

  • Beat cream cheese and vanilla with a mixer on medium speed until creamy. Gradually add butter, beating until incorporated after each addition.

2 cups grated carrots
½ (8 ounce) package cream cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat white sugar and vegetable oil together in a bowl using an electric mixer until smooth and creamy; beat in eggs, 1 at a time, mixing well after each addition. Add 1/2 teaspoon vanilla extract and mix.
  • Combine baking flour, baking powder, baking soda, cinnamon, and salt in a separate bowl; mix into sugar-vegetable oil until batter is smooth. Fold carrots into the batter; pour into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 35 minutes. Allow cake to cool completely, at least 30 minutes.

230ml vegetable oil, plus extra for the tin
100g natural yogurt
4 large eggs
1½ tsp vanilla extract
½ orange, zested
265g self-raising flour
335g light muscovado sugar
2½ tsp ground cinnamon
¼ fresh nutmeg, finely grated
265g carrots (about 3), grated
100g sultanas or raisins
100g walnuts or pecans, roughly chopped (optional)
100g slightly salted butter, softened
300g icing sugar
100g soft cheese

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base and sides of two 20cm cake tins with baking parchment. Whisk the oil, yogurt, eggs, vanilla and zest in a jug. Mix the flour, sugar, cinnamon and nutmeg with a good pinch of salt in a bowl. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times to bring the lumps to the surface.
  • Add the wet ingredients to the dry, along with the carrots, raisins and half the nuts, if using. Mix well to combine, then divide between the tins.
  • Bake for 25-30 mins or until a skewer inserted into the centre of the cake comes out clean. If any wet mixture clings to the skewer, return to the oven for 5 mins, then check again. Leave to cool in the tins.
  • To make the icing, beat the butter and sugar together until smooth. Add half the soft cheese and beat again, then add the rest (adding it bit by bit prevents the icing from splitting). Remove the cakes from the tins and sandwich together with half the icing. Top with the remaining icing and scatter with the remaining walnuts. Will keep in the fridge for up to five days. Best eaten at room temperature.

FROSTING:

Steps:

  • Make batter: Heat the oven to 350ºF. Grease two 9-inch by 2-inch cake pans and line the bottom with parchment paper then grease the top of the paper. Or, grease and flour the bottom and sides of both pans. In a medium bowl, whisk flour, baking soda, salt, and the cinnamon until well blended. In a separate bowl, whisk the oil, sugars and vanilla. 2 teaspoons cinnamon
3 cups carrots
1 cup chopped nuts (pecans, walnuts, etc.,) (optional)
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped nuts, same as used in cake (optional)

Steps:

  • Preheat oven to 375. Grease and Flour a 9x11 pan or 2 8 inch round pans.
  • In a large bowl beat together eggs, oil, sugar and vanilla. Mix in flour, baking soda, salt, baking powder and cinnamon. Stir in carrots. Fold in nuts, if desired. Pour into prepared pan(s).
  • Bake in preheated oven for 30 to 50 minutes. Check after 30 minutes with a toothpick. If toothpick is clean, cake is done.
  • Let cool in pan(s) for an additional 10 minutes. Turn out onto a wire cooling rack and cool completely.
  • To make icing, use a medium bowl and mix butter, cream cheese, confectioner's sugar and vanilla until smooth. You may add chopped nuts to icing now or sprinkle later over the top of the cake (optional).
  • After the cake is completely cooled, ice the cake. If the chopped nuts were not added to the icing earlier sprinkle them over the iced cake (optional).

1/2 cup sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1 teaspoon ground allspice

2 large eggs
1-1/2 cups finely grated carrots
FROSTING:
2 tablespoons butter, softened
2 ounces cream cheese, softened
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
2 to 4 teaspoons whole milk
2 tablespoons chopped walnuts, optional

Steps:

  • In a large bowl, combine the flour, sugars, baking soda, allspice and salt. Beat in vegetable oil. (Batter will be stiff.) Add eggs, one at a time, beating well after each addition. Stir in carrots. , Pour into a greased 8-in. square baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes our clean. Cool on a wire rack. , For frosting, in a small bowl, cream butter and cream cheese until smooth. Gradually beat in confectioners' sugar and vanilla. Add enough milk to achieve spreading consistency. Spread over cake. Sprinkle with chopped walnuts if desired. Store, covered, in the refrigerator.

1 3/4 cups light brown sugar
4 large eggs (preferably free-range or organic)
1 grated orange, juice and zest of (approximately 1 tsp. zest and 1/3 cup juice)
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1/2 cup walnuts, roughly chopped
1 teaspoon ground cinnamon
1 pinch ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
10 ounces carrots, peeled and coarsely grated
2 cups low-fat sour cream
2 -3 tablespoons powdered sugar (icing)
2 oranges

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square or 10-inch round cake pan with a little vegetable oil. Line the bottom of the pan with a piece of parchment or waxed paper, cut to fit. In a large mixing bowl, use an electric mixer to mix the oil and sugar. Beat in the eggs, orange zest, and juice. Stir in the flour, baking powder, and salt. Add the chopped walnuts, cinnamon, cloves, nutmeg, ginger, and grated carrot. Mix just until combined (don't overmix, because this will affect how the cake rises).
  • Spoon the batter into the prepared cake pan. Bake 50 minutes, or until golden. Check doneness by poking a skewer or toothpick into the center of the cake. If it comes out clean, the cake is cooked; if it's still slightly sticky, put it back in the oven for a few more minutes.

1 cup carrot, shredded
1 cup raisins (optional)
4 tablespoons butter or 4 tablespoons margarine
1 1/2 cups sugar
1 teaspoon nutmeg
1 teaspoon clove
1 teaspoon cinnamon

2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon baking powder

Steps:

  • Preheat oven 350F.
  • Grease and flour a 9x13" pyrex dish, or 2 5x9" loaf pans.

250 ml vegetable oil
165 g caster sugar
2 tablespoons golden syrup
2 eggs
2 cups grated carrots (about 4 medium carrots)
90 g chopped walnuts
225 g self raising flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon nutmeg
1/2 teaspoon ground cinnamon
frosting
125 g cream cheese
30 g soft butter
1 teaspoon grated lemon rind
240 g icing sugar

Steps:

  • Grease 15cm x 25cm loaf pan or 24cm round cake tin.
  • Combine ingredients in a large bowl, stir well. Pour mixture into pan.
  • Bake in moderate (180C) oven ~1 hour.
  • Stand cake 5 minutes, turn onto wire rack to cool.
  • Frosting.
  • Beat cream cheese, butter and lemon until light and fluffy, gradually beat in icing sugar.
  • Spread cake with frosting.
