1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried Italian seasoning
1 can (28 oz.) Italian-style stewed tomatoes, drained
2 cloves garlic, minced
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1-1/2 cups water
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

Steps:

  • Heat oven to 400°F.
  • Spread chicken onto bottom of 13x9-inch baking dish sprayed with cooking spray; sprinkle with Italian seasoning. Top with tomatoes, garlic and cheese.
  • Add water to stuffing mix; stir just until moistened. Spoon over chicken.
  • Bake 30 to 35 min. or until chicken is done.

This is a recipe I reworked a little from the Kraft Food & Family magazine. Even my DH who doesn't like tomatoes loved this! Shown in photo with recipe#301661 and recipe#107411.

6 tablespoons sun-dried tomato vinaigrette dressing, divided (I've used both Kraft and Good Seasons brand with equally good results)
4 boneless skinless chicken breast halves
1 tomatoes, chopped
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil

Steps:

  • Pour 4 tablespoons of the dressing over chicken in resealable plastic bag and seal. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes to marinate.
  • While chicken is marinating, combine tomatoes, cheese, basil and remaining 2 tablespoons of dressing.
  • Remove chicken from marinade bag and place in baking dish. Bake at 350 degrees for 10 minutes.
  • Spoon tomato mixture over chicken breasts and bake an additional ten minutes.

3 slices whole wheat bread, toasted
1 cup packed fresh baby spinach leaves (about 24 leaves)
1 pkg. (6 oz.) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
1/3 cup roasted red peppers, drained, chopped

Steps:

  • Mix mayo and pesto; spread onto toast slices.
  • Top evenly with the spinach, chicken and peppers.
