This is a recipe I use in lieu of kidney beans and rice because I just happen to love the flavor of black beans. We never have leftovers of this side dish!

2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
2 cups water
1 (15.5 ounce) can black beans
1 teaspoon ground cumin
1 beef bouillon cube
1 cup rice
½ teaspoon Creole seasoning, or to taste
½ teaspoon dried cilantro

Steps:

  • Heat olive oil in a saucepan over medium heat. Cook and stir onion and garlic in hot oil until softened, 5 to 7 minutes.
  • Stir water, black beans, cumin, and beef bouillon cube into the onion and garlic mixture; bring to a boil, add rice, cover, and simmer until the rice is tender and the moisture is absorbed, about 20 minutes.
  • Gently stir Creole seasoning and cilantro into the beans and rice.

2 (15 ounce) cans black beans
2 tablespoons chopped garlic
1 medium onion, chopped fine
2 jalapeno chiles, chopped fine (seeds removed if desired)
1 teaspoon Mexican oregano
2 teaspoons ground cumin
2 teaspoons extra virgin olive oil
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
salt and black pepper (to taste)

Steps:

  • In sauté pan heat garlic in oil on medium heat.
  • Add onion and jalapeño as oil begins to warm.
  • Add oregano and cumin and sauté, stirring frequently, until vegetables are tender, adding a few drops of water if they begin to stick.
  • Add contents of cans of black beans and bring to a boil.
  • Reduce heat and simmer for 20-25 minutes, to allow flavors to blend.
  • Add chopped cilantro and lime juice and stir.
  • Serve.

So easy, its a crowd pleaser.

1 jalapeno, finely diced
1/2 red onion, finely diced

1 (14 ounce) can beef broth (check the label for gluten)

  • Cook the ground beef and drain off the fat.
  • Place the ground beef back into the skillet.
  • Add the remaining ingredients, stirring well.
  • Turn the heat to med and let the mixture simmer until hot (approx. 7 minutes).
  • The dish will be like a thick soup. You can drain off the excess broth if desired.
  • This can serve 4 as a side-dish, or 2 as a main entree. Add a touch of sour cream or grated cheese, if desired.

1/2 cup olive oil (preferably Spanish olive oil)
2 garlic cloves, finely chopped
1/2 small red onion, finely chopped
1 medium green pepper, seeded and finely chopped
1/3 cup chorizo sausage, chopped (approx. 1/2 a sausage)
1/2 cup canned tomato, drained and chopped
2 (16 ounce) cans black beans
1/2 cup chicken stock
1 teaspoon ground cumin
1/4 teaspoon hot sauce
1 tablespoon red wine vinegar
salt & freshly ground black pepper
4 green onions, chopped (for garnish)

Steps:

  • Drain one can of black beans and discard the liquid. Save the liquid from the other can of beans, and set it aside.
  • In a medium sized sauce pan over low heat, heat the olive oil until it is fragrant; then add the garlic, red onion, green pepper and chorizo. Cook onion is tender, stirring frequently, about 10 minutes.
  • Add the chopped tomatoes and cook another 10 minutes.
  • Add the beans, bean liquid from the one can of beans, chicken stock, cumin, hot sauce and red wine vinegar. Stir to blend. Correct the seasonings and simmer, uncovered until heated through, about 20 minutes.
  • Garnish with green onions and serve.

Stir in the carrots, celery, garlic, and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Quick, healthy, and tastes good. Top with sour cream, if you like. Serve over rice or let it stand alone. You can also add just about anything else to this, that's why it's 'anything goes.' 1 Tbsp oil
1 small onion, chopped
1 jalapeno, seeded and finely chopped
3 clove garlic, finely chopped
1 large can of black beans, drained and rinsed
1 tsp ground cumin
salt and pepper to taste
sliced scallions and cilantro or parsly for garnish(optional)

Steps:

  • 1. Heat a medium saute pan on med. to high heat.
  • 2. Add oil, onions and jalapeno and saute for 2-5 minutes or until onions become a little translucent. Turn heat down to med. low.
  • 3. Add garlic and saute another 1-2 minutes.
  • 4. Add black beans and spices to the pan and saute another 2 minutes or until heated through.
  • 5. Transfer beans to a serving dish and top with chopped scallions and cilantro or parsley.

SUPER EASY KOREAN STYLE BLACK BEANS

Adapted from the cookbook 'The Gourmet Vegetarian Slow Cooker". I don't know if cilantro is eaten in Korea but it tasted really good with the beans! We made simple veggie bowls: first some baby spinach, second a scoop of short grain brown rice then a ladle of the beans and finally the toppings.

2 c dried black beans
6 c water
1/2 c soy sauce
1 Tbsp sugar or honey
1-2 clove garlic cloves, peeled and minced
1/2 -2 Tbsp toasted sesame oil (make sure it is toasted sesame oil!)
GARNISHES:
toasted sesame oil
green onions
fresh cilantro
white sesame seeds
gochujang fermented chili paste

Steps:

  • 1. Soak the black beans in water overnight or use the quick soak method. Drain the beans.
  • 2. Place the drained beans in a crock pot and then fill the crock pot with water until 2/3 full.
  • 3. Stir in most of the soy sauce (reserving approximately 2 tablespoons for garnish), sugar or honey, garlic clove(s) and 1/2 tablespoon of toasted sesame oil.
  • 4. Cover and cook on LOW for 6-10 hours and cook beans until tender. Usually what I do is start the crock pot on HIGH for about 3 hours then reduce to LOW for another 5-6 hours.
  • 5. Transfer the cooked beans to a serving bowl. Pour some of the cooking liquid into the beans (about 1/4 cup or so.)
  • 6. To serve: Taste and add a little more toasted sesame oil-up to 2 tablespoons (but be careful because toasted sesame oil has a very pronounced flavor and its flavor can quickly overpower!) Garnish with the green onions, fresh cilantro, sesame seeds and gochujang sauce.

1-2 tablespoons canola oil
2-1/2 tablespoons chili powder (any type of chili powder: regular, chipotle, or ancho)
salt and pepper, to taste
1 medium white onion, diced
1 cup long grain white rice
sliced or shredded chicken from one rotisserie chicken (about 2 cups)
2 big or 4 small garlic cloves, finely chopped
1-1/2 cups chicken broth
One 15-ounce can black beans, drained and rinsed (optional)*
1/4 cup chopped green onions
1/3 cup chopped cilantro
1/2 - 1 cup salsa for serving, if desired
warm toasted tortillas, if desired

Steps:

  • Add the oil to a large saute pan or Dutch oven over medium-high heat. Add in the diced onion and rice, stirring as you go, and cook until the rice turns from translucent to opaque. Add the garlic and the 2 and a half tablespoons of chili powder and cook for 1 minute, then add the broth and salt and pepper to taste. Stir well. When the mixture comes to a boil, reduce the heat to medium-low and cover the pot. Cook for 15 minutes. Do not stir the rice if you want it to be fluffy! Add the sliced or shredded chicken and black beans to the top of the pot (without stirring the rice), recover the pot, and cook over very low heat until the chicken and beans are warmed through and the flavors mingle, about 5-6 minutes. Do not stir the rice if you want it to be fluffy! Uncover, sprinkle with green onions and cilantro on top of the mixture (do not stir the rice). Recover the pot and let stand off the heat for 5 to 10 minutes. Fluff the rice with a fork and serve with salsa or warmed tortillas, if desired.
