EASY BLACK BEAN CHILI



Easy Black Bean Chili image

We love chili for its rib-sticking deliciousness, and this meatless version is no exception. Just because it's made with beans, and no meat, doesn't mean it's not filling. Cumin, chili powder and chiles add heat, while fire-roasted tomatoes, black beans and sweet corn give it extra flavor.

1 tablespoon vegetable oil
1 large onion, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
4 cloves garlic, finely chopped
2 fresh jalapeño or serrano chiles, seeded, finely chopped
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cans (14.5 oz each) Muir Glen™ organic fire roasted or plain diced tomatoes, undrained
1 1/2 cups water
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon coarse (kosher or sea) salt
1 cup Cascadian Farm® frozen organic sweet corn
Sour cream or plain yogurt, if desired
Shredded Cheddar cheese, if desired
Chopped fresh cilantro, if desired

Steps:

  • In 4-quart saucepan, heat oil over medium heat. Add onion, bell pepper, garlic and chiles; cook 5 to 7 minutes, stirring frequently, until tender.
  • Stir in black beans, tomatoes, water, chili powder, cumin and salt. Heat to boiling. Reduce heat; cover and simmer 30 minutes, stirring occasionally. Stir in corn. Heat to boiling. Reduce heat; simmer uncovered 5 minutes longer.
  • Top each serving with remaining ingredients.

1 tablespoon canola oil
1 pound lean ground chicken
1 onion, chopped
3 cups sweet potato, peeled and diced
3 cloves garlic, minced
3 tablespoons chili powder
1 pinch ground cinnamon
½ cup water
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes, drained
1 (10 ounce) can CAMPBELL'S® Condensed Roasted Red Pepper & Tomato Soup
½ cup fresh cilantro

Steps:

  • Heat oil in a large heavy bottom saucepan over medium-high heat. Add ground chicken and onion; cook, breaking up chicken with a spoon, until no pink is visible and onion is tender, 6 minutes. Drain any fat.
  • Add the sweet potato, garlic, chili powder, and cinnamon; cook, stirring, 1 minute. Add water and bring to boil. Reduce the heat to simmer; cover and cook, stirring once, 5 minutes.
  • Add the black beans, diced tomatoes, and the soup. Simmer, uncovered, on medium heat, 7 minutes or until desired thickness. Garnish with cilantro.

Jessica's Easy Turkey and Black Bean Chili image

Who doesn't love a bowl of hot chili on a cold fall day? My friend whipped this up in less than a half hour after a quick trip to the grocery story and I was AMAZED by how good it was. The most amazing part is that groceries themselves cost less than $10. Served best with a bit of shredded cheese and a dollop of sour cream and some corn tortilla rounds.

1 tablespoon vegetable oil
2 cloves garlic (minced)
1/2 large onion (coarsely chopped)
1 lb ground turkey
1 (1 1/3 ounce) package chili seasoning mix (generic/store brand worked great for us)
2 (8 ounce) cans tomato sauce
1 (15 ounce) can black beans
1 (14 1/2 ounce) can diced tomatoes (we used diced tomatoes with green chillies)
chili powder, to taste
cayenne pepper, to taste

Steps:

  • In a large pot, over medium-high heat, saute garlic and onion in oil until onions become slightly tender.
  • Add ground turkey, stir occasionally until cooked throughout.
  • Once cooked add remaining ingredients (be sure NOT to drain canned items), stirring after each item is added.
  • Reduce heat and simmer for 15 minutes or so, until heated through and flavors are well blended.
