This easy no bake cheesecake dessert is full of fresh berries with a vanilla wafer crust. It's the perfect summer dessert recipe!

35 vanilla wafer cookies (1 1/2 cups), (plus more for the top)
5 tablespoons Challenge Unsalted Butter (melted)
8 ounces Challenge Cream Cheese (softened)
1 cup powdered sugar
1 teaspoon vanilla extract
2 8 ounce containers whipped topping (thawed)
1-2 pounds fresh berries ((strawberries & blueberries or your favorite))

Steps:

  • Place cookies in a large resealable gallon size bag. Seal all but 1" of the bag (so air can escape) and crush with a rolling pin.
  • Stir cookie crumbs and melted butter with a fork. Press into an 8-inch or 9-inch square pan.
  • Add cream cheese, powdered sugar, and vanilla to a large mixing bowl. Mix with a hand mixer until smooth, then mix in one container (8-ounces) of whipped topping. Reserve other container for topping.
  • Slice berries as desired.
  • Assemble the dessert: spread half the cheesecake mixture on top the crust. Spread half the berries on top. Cover with the remaining cheesecake mixture and top with remaining berries.
  • Top the dessert with about half the remaining whipped topping. Crush more cookies and sprinkle on top, if desired. Chill for about an hour before serving.
  • Store in refrigerator for 1-2 days.

3 cups fresh or frozen mixed berries (blueberries, raspberries and sliced strawberries)
2 Tbsp. sugar
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3-1/2 cups milk
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
70 vanilla wafers (about 4 cups)
1 oz. BAKER'S Semi-Sweet Chocolate, coarsely grated

Steps:

  • Combine berries and sugar in medium bowl. Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mixes; mix well. Blend in COOL WHIP.
  • Line bottom of 9x13-inch pan with half of the wafers. Top with half each of the berry and pudding mixtures. Repeat all layers; sprinkle with chocolate.
  • Refrigerate 3 hours.

1-1/2 cups graham cracker crumbs
3/4 cup sugar, divided
1/2 cup butter, melted
1 package (8 ounces) cream cheese, softened
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 can (21 ounces) blueberry pie filling
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press into a greased 13-in. x 9-in. baking dish. In another bowl, beat cream cheese and remaining sugar until smooth; stir in eggs and vanilla. Pour over crust., Bake at 350° for 15-20 minutes or until set. Sprinkle with cinnamon. 1 pint good quality Greek style plain whole milk yogurt
4 to 5 pieces crystallized ginger, grated
1/4 to 1/3 cup honey, look for orange blossom, clover or sage, plus some for drizzling
1 orange zested
2 pints blackberries

Steps:

  • In a bowl combine the yogurt, grated crystallized ginger, honey and orange zest. Let the yogurt mixture sit for about 5 minutes, the flavors will meld together a bit. Divide the blackberries between 4 dessert bowls, top with a large dollop of the yogurt mixture and then give each dollop a drizzle of honey for a sweet finish.
