IMPOSSIBLY EASY BARBECUE BEEF PIE

Steps:
- Heat oven to 400°F. Grease bottom and side of 9-inch pie plate with shortening. In 10-inch skillet, cook beef, bell pepper and onion over medium heat, stirring occasionally, until beef is brown; drain. Stir in 1/3 cup barbecue sauce. Spread in pie plate. Sprinkle with 3/4 cup of the cheese.
- In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour over beef mixture.
- Bake uncovered 25 minutes. Sprinkle with remaining 3/4 cup cheese. Bake about 5 minutes longer or until knife inserted in center comes out clean. Serve with additional barbecue sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a medium saucepan over medium heat; saute the stew meat for 10 minutes, or until well browned on all sides. Reduce heat to low and add the red wine. Cover and simmer for 15 minutes, allowing the alcohol to cook off.
- Remove cover and add the gravy and vegetables. Stir well and simmer for 10 more minutes. Pour mixture into one pastry shell. Cover with second pastry shell, sealing edges and cutting steam vents in top. Brush edges with egg white. Place pie on a baking sheet.
- Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.

EASY BEEF POT PIE
One day I had forgotten all about a benifit luncheon I had promised to make a dish for. The only thing I had on hand was a large can of Dinty Moore Beef Stew, a can of green beans and makings for a pie crust. So I decided to make a pot pie using what I had on hand. This recipe is the results of that casserole. It was a big hit....

- 1. Put the stew in a large bowl ... taking some of the juice out to blend in the corn starch until it is dissolved. Once dissolved, stir into the stew.
- 2. Open the green beans and peas and drain well .. and mix them into the stew.
- 3. Now put the flour and salt in a bowl .... add the solid shortening and cut it into the flour until it resembles a small pea.
- 4. Add the 10 tablespoons of water and blend with a fork until it forms a ball and leaves the sides of the bowl. Divide into 2 balls. Roll one ball out so that it will fit a large deep casserole dish. Bringing the dough up the sides and over the edge slightly.
- 5. Fill the dish with the stew mixture. Spreading out evenly. Roll the 2nd ball out to fit over the top .. Bring the bottom crust over the top and pinch a scalloped edge around the dish. Cut a couple of slits in the middle for steam to escape.
- 6. Brush the crust with an egg wash. Bake in a preheated 375 degree oven for 45 minutes or until the crust is golden brown. Let the dish set for a half hour before serving.
EASY BEEF AND GUINNESS PIE
This recipe came from Campbell's soup and even though its not the real thing its a great and easy recipe for a cold winters night. I serve with mashed potatoes and vegetables, but would be just as great served on its own.

- Pre-heat oven to 200ºC. Heat oil in a frying pan.
- Add mince, onion & carrotand cook for 5 mins or until meat has browned.
- Add peas, Worcestershire sauce & flour and cook for for 1 min, stirring.
- Add Guinness and stock, bring to the boil, stirring, and cook for 5 minutes until just thickened.
- Season to taste with pepper.
- Divide mince between four 2-cup capacity ovenproof dishes.

- Preheat oven to 400 degrees.
- Dredge beef in flour, brown in oil.
- you do not have to cook beef entirely. Set aside in large bowl.
- Combine all veggies except onions, soups, l cup milk, salt, pepper, basil with beef tips in large bowl. Mix well. Set aside.
- Do not rinse or drain oil from pan, saute onions in same pan with beef juices, aprox. 5-7 mins on medium-high heat. Onions should be slightly opaque and soft. Mix with veggies and beef.
- In a 8X8 baking dish pour veggie mix.
- Combine rest of milk, egg, and biscut mix in another bowl. Combine thouroughly.
- Make sure soup and veggie mixture is evenly smoothed out. Pour biscut mixture over top.
- Bake at 400 degrees for at least 25 minutes Top should be golden and filling completely heated through. Cook an additional 5-10 minutes if you wish for a more golden crust.
- You may need a cookie sheet under baking dish.

- Brown the beef with turmeric. Salt and pepper to taste.
- Drain the beef, using the fat to brown the onion. Add drained onion to beef and mix well.
- Spray 13x9 inch dish with cooking spray or grease dish. Spread beef/onion mixture into dish, then seasoned spinach (salt and pepper to taste).
- Prepare pancake batter according to directions then pour over spinach.
