QUICK AND EASY BEEF AND RICE NOODLE SOUP
This recipe is my version of Vietnamese beef pho. It's perfect for a weeknight and full of flavor.

Steps:
- Bring the stock to a very light simmer in a large pot, then add the beef base, fish sauce, hoisin, scallion halves, ginger, cloves, star anise, cinnamon stick and 1 tablespoon of the soy sauce. Simmer for 30 minutes.
- Using a spider or strainer, remove all the solids, leaving you with just the broth. Taste and adjust the seasoning with the additional tablespoon of soy sauce if it needs more salt, or hoisin if it needs more sweetness. Bring the broth back to a light simmer.
- Meanwhile, set up your bowls. On the bottom, divvy up the rice noodles, then top with the shaved beef. Pour in some simmering broth. Garnish with the bean sprouts, cilantro, mint, scallions sliced on the bias, jalapenos and lime wedges. Drizzle with extra hoisin if desired.

- Crumble beef into an ungreased 2-qt. microwave-safe dish. Cover and microwave on high for 3 minutes or until no longer pink; drain. Stir in the remaining ingredients. Cover and heat on high for 9-10 minutes or until rice is tender. Let stand for 5 minutes before serving.

SUNDAY NIGHT ROAST BEEF AND GRAVY WITH EASY RICE

- Preheat the oven to 275 degrees F.
- Season the meat on all sides with the Essence, salt, and pepper. Heat the oil in a large Dutch oven and brown on all sides, about 4 minutes per side. Remove the roast from the pan and add the onion slices and thyme sprigs. Place the roast on top of the onions, fat side up. Add the beef broth to the pan and place in the oven, uncovered. Roast until the beef is tender and registers an internal temperature of 130 to 135 degrees F, about 1 1/2 to 2 hours.
- Transfer the roast to a platter or cutting board and let rest for 15 minutes before carving.
- Meanwhile, use a slotted spoon to discard the onions and thyme sprigs. Place the Dutch oven over medium-high heat to heat the beef drippings. Combine the cornstarch and water in a small bowl until dissolved. Add the cornstarch mixture to the beef drippings and bring to a boil. Cook, stirring constantly, until slightly thickened, 2 to 3 minutes. Remove from the heat and carefully transfer to a gravy boat or decorative bowl.
- Carve the beef thinly and arrange the slices on large plates with rice on the side. Drizzle gravy over each portion and serve alongside of the Easy Rice.

- In a 2-quart saucepan, combine the rice, water, butter and salt, and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until all the liquid is absorbed, about 20 minutes. Remove the pan from the heat and let sit, covered, for 10 minutes. Uncover and fluff the rice with a fork before serving.
EASY CHEESY GROUND BEEF AND RICE SKILLET
An easy quick one skillet recipe with lots of taste, which makes this perfect for a weeknight meal, also a great recipe to use up any leftover rice, if you don't have 3 cups leftover cooked rice just add in what ever you have! All ingredient amounts can be adjusted to suit taste. If you really want to intensify this skillet dish even more, omit the seasoned salt and hot sauce in this recipe and add in a couple tablespoons of recipe#186029 I keep this handy to use in many recipes!

- In a large skillet cook the beef with onion, garlic, bell pepper and jalapeno pepper (if using) until the meat is browned drain fat.
- Add in beef bouillon powder; mix to combine then season with seasoned salt and black pepper.
- Stir in the cooked rice, cream of mushroom soup, green chiles and beef broth or water and hot sauce or Tabasco to taste; stir over low heat until combined and heated through.
- Remove from heat and stir in the grated cheddar cheese until melted and combined.
- Top with crushed corn chips just before serving.

- Heat 2 tablespoons oil in a skillet over medium heat. Add rice; cook and stir until browned, 2 to 3 minutes.
- Heat the remaining 1 tablespoon oil in a pot over medium heat. Add onion; cook and stir until tender, about 5 minutes. Add meat and sazon seasoning; cook and stir until beef is hot and slightly pink in the center, 7 to 10 minutes. Add the cooked rice, tomatoes, and water. Bring to a boil. Reduce heat to low. NIF'S EASY KOREAN BEEF AND RICE
This is an easy go-to staple in our house! Spicy and sweet and takes very little time. I'm good at timing meal completion so I start the rice, make this recipe and then prepare veggies while the beef mixture is simmering. This recipe typically serves 4 adults and is a combination of a couple of other recipes. Enjoy!

- Heat a large frying pan over medium heat. Brown ground beef with garlic and ginger in the sesame oil. Keep pan medium heat so sesame oil doesn't burn. Once cooked through, spoon out fat from pan.
- Add brown sugar, soy sauce, salt and pepper flakes to the beef mixture. Simmer for a few of minutes to blend the flavours. This is when I'll set the table and make some quick veggies (Asian cucumber salad, sesame carrots, slaw).
- Serve beef over rice and top with green onion and toasted sesame seeds.
