BACON BEAN AND POTATO SOUP



Bacon Bean and Potato Soup image

This hearty Bacon Bean and Potato Soup is extra thick with both beans and potato, plus enough bacon and vegetables to give each bowl plenty of flavor!

1 lb. dry navy beans ($1.79)
6 oz. bacon ($2.00)
2 cloves garlic ($0.16)
1 yellow onion ($0.37)
3 carrots ($0.32)
3 ribs celery ($0.53)
2 lbs. potatoes ($1.44)
6 cups chicken broth ($0.76)
1 8z. can tomato sauce ($0.34)
salt and pepper to taste ($0.05)

Steps:

  • The night before, place the beans in a large bowl and add enough cool water to cover the beans by 2-3 inches. Let the beans soak in the refrigerator over night.
  • The next day, cut the bacon into one-inch pieces. Cook the bacon in a large pot over medium heat until brown and crispy. Remove the bacon to a paper towel lined plate and pour off most of the grease, leaving a tablespoon or two in the pot.
  • While the bacon is cooking, dice the onion and mince the garlic. Peel and slice the carrots, and slice the celery. Sauté the onion, garlic, carrots, and celery in the leftover bacon grease over medium heat until the onions are soft and transparent (about five minutes). Use the moisture from the vegetables to help dissolve the browned bits of bacon from the bottom of the pot.
  • While the vegetables are sautéing, peel the potatoes then cut them into 1/2-inch cubes. Drain the soaked beans in a colander and rinse them briefly.
  • Add the cubed potatoes, rinsed beans, and chicken broth to the pot. Cover the pot and bring it up to a boil. Reduce the heat slightly and let the pot boil gently for one hour, or until the beans and potatoes are very soft.
  • Use an immersion blender to purée about half of the soup, leaving some beans and vegetables whole. If you don't have an immersion blender, remove half of the soup from the pot, let it cool slightly, then use a blender or food processor to carefully purée the warm soup. Return the puréed soup to the pot and stir to combine with the rest.
  • Add the tomato sauce and reserved bacon to the soup. Stir and heat until warm. Taste the soup and add salt and pepper if needed. Serve hot.

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

4 slices bacon, diced
1 medium onion, diced
2 cloves garlic, minced
2 pounds clean red new potatoes, left whole if tiny OR diced if larger
2 cups vegetable broth
3/4 teaspoon seasoned salt (such as Lawry's)
1/2 teaspoon freshly ground black pepper
1 pound fresh green beans, washed and trimmed

Steps:

  • In a large Dutch oven, turn the heat to medium, and add the diced bacon. Cook the bacon, stirring frequently, until it's starting to crisp up and is nearly cooked through, about 5-7 minutes.
  • Using a slotted spoon, remove the bacon from the pan and set aside on a paper towel to drain.
  • Add the diced onion to the pan, and cook, stirring occasionally until the onions are soft and starting to turn golden brown around the edges, about 5 more minutes.
  • Next, add the garlic, saute for 30 seconds.
  • Add the potatoes, stir, and then add the broth, seasoned salt and pepper.
  • Stir everything together very well, and then place the lid on the pot, lower the heat to medium low. Let the potatoes cook for 5-7 minutes, until nearly cooked through.
  • Remove the lid, stir the potatoes, and then add the green beans.
  • Stir the green beans and potatoes together to coat everything evenly, and then place the lid on the pan. Cook the green beans until tender, about 5-7 minutes. Taste a green bean and poke a potato to ensure they're done.
  • Stir the cooked bacon back into the pan, and serve hot.

100g butter , plus extra for greasing
100g smoked bacon , cut into lardons
2kg large potatoes , thinly sliced (a mandolin is ideal)
300g white onions , finely sliced
500ml fresh chicken stock

Steps:

  • Heat oven to 200C/180C fan/gas 6 and grease a large casserole dish. Melt the butter in a large frying pan over a medium heat. Toss in the bacon and season really well. Cook until golden and crisp, about 5 mins.
  • In a large bowl, gently mix the potatoes with the onions, bacon and some more seasoning. Spoon the mixture into the prepared dish and pat it all down, pouring over the stock.
  • Bake in the centre of the oven for 1 hr 45 mins, covering the potatoes after an hour to stop them getting too dark. You should be able to push a knife through the potatoes with little resistance when the dish is cooked.

6 slices bacon, chopped
3 tablespoons butter
1 red onion, chopped
2 pounds fresh green beans, trimmed and snapped
8 small new potatoes, diced
1 large clove garlic, minced
¼ cup chicken broth
1 ½ teaspoons white balsamic vinegar
salt and pepper to taste

Steps:

  • Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
  • Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.
