2 ripened bananas
1 ¾ cups instant oats
¼ cup semisweet chocolate chips
¼ cup walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mash bananas in a medium bowl. Stir in oats, chocolate chips, and walnuts.
  • Drop dough by rounded teaspoonfuls onto the prepared baking sheet.
  • Bake in the preheated oven for 15 to 20 minutes.

This recipe is a good not overly sweet healthy breakfast or anytime treat. It got a thumbs up from my boys & husband. Nice way to use up ripe bananas, and each cookie (this recipe makes 9 cookies) is 186 calories. You can leave out the sugar & it brings down the calorie count to 143 per cookie.

3 overripe bananas, peeled & mashed
2 1/4 cup(s) old fashioned oats (do not use quick cooking kind
1/4 cup(s) frozen mini chocolate chips
1/4 cup(s) crunchy peanut butter
1/2 teaspoon(s) vanilla
1 pinch(es) kosher salt
2 tablespoon(s) sugar

Steps:

  • Add all ingredients to a large bowl.
  • Mix well with a fork making sure all the mixture is well coated.
  • Scoop into a well greased baking pan with large scoop into 9 big cookies. Wet your hands and using your palm press the cookies down into a cookie shape.
  • Bake in a 350 degree or heated oven for 11-15 minutes or until slightly browned & a little firm and drier on top when touched. Remove from oven and let cool for a few minutes, remove & place on wax paper to cool and harden completely. Store cookies in a covered container in the fridge. Enjoy
