CREAMY BACON PASTA BAKE
Creamy bacon sauce makes this pasta bake a delicious, comforting dinner. This is the perfect recipe to make-ahead and feed a crowd.

- Preheat the oven to 180°C/350°F.
- In a large, oven-proof pan, fry the bacon until it starts to crisp. Remove from the pan and set aside. Drain off the bacon fat and reserve for cooking with.
- In the same pan, melt the butter and add the onion. Allow to cook until soft.
- Add the garlic and sage and cook for a minute before adding the flour.
- Stir the flour into the butter then whisk in the milk and cream. Reduce the heat and allow to simmer for 5-7 minutes until the sauce is thick and creamy. Remove from the heat then stir in the bacon, Parmesan and half of the grated cheese. Season to taste.
- Add the cooked pasta and some of the pasta cooking water. Stir to coat the pasta in the sauce. At this stage, the sauce should look quite thin. The pasta will absorb more sauce as it cooks so if it looks too dry at this stage, add more pasta cooking water.
- Top with the remaining cheese and more sage leaves if desired then place in the oven.
- Allow to bake for 15-20 minutes until the cheese is golden brown.
- Remove from the oven, allow to cool for 10 minutes then serve.

- Preheat the oven to 350°F (180°C).
- Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.
- Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.
- Once cooled, cut the potatoes vertically, scoop out the inside, and transfer to a bowl.
- In the bowl with the scooped out potato, add the cheese, scallions, ½ cup (110 g) of bacon, sour cream, butter, milk, and pepper, and mix well.
- Scoop the potato mixture back into the hollowed-out potatoes and top with cheddar cheese and remaining ¼ cup (55 G) of bacon bits.
- Bake an additional 15 minutes until the cheese is melted.
- Serve warm with sour cream and chives.

EASY BACON PASTA BAKE (USING POTATO BAKE SAUCE)
I rarely have leftover pasta to make pasta bakes, so this recipe is an easy way to make an easy-to-prep meal using store bought potato scallop sauce and uncooked pasta. You can adjust the amount of bacon you use, I just find it an easy flavouring to throw into the dish. This pasta bake can be very rich and although I serve it as a main in my household (its a bacony treat for us) so serve with lots of fresh tomato or as a side to barbecued meats.

- Preheat oven to 180C. In a large baking dish pour in 2 cans of potato bake sauce. Add the milk and a quarter of the water. Stir well.
- Mix in the pasta, bacon and half the grated cheese.
- Place a sheet of tinfoil over the top of the mixture and press the sides down until covered and foil is kept in place.
- Bake in oven for 30 minutes then stir mixture from bottom to top. You can add more water at this point but add in small amounts until you're satisfied there is enough liquid for pasta to soak up. Return to oven and continue baking for another 15 minutes until last step.
- For the last 15 minutes add grated cheese to top and bake uncovered until topping is golden and crisp. Serve with fresh tomatoes and salad.

- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. - Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large saucepan or skillet, add onion, bacon, salt, and pepper. Cook until bacon is crispy and onion is soft. Drain fat. Pour in tomato soup and stir; bring to boil. Reduce heat to low; add 1 cup Cheddar cheese and the milk. Stir until cheese is melted.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- Cook pasta as directed on package. Reserve 1/2 cup pasta cooking water. Drain pasta; return to stockpot. Add cream; toss. Set aside.
- Spray 12-inch sauté pan or skillet with cooking spray; heat over medium heat. Add bacon; cook until crisp. With slotted spoon, remove bacon from pan to plate; set aside.
- Add onions, salt and pepper to bacon drippings in pan; cook and stir 4 to 7 minutes or until translucent. Add mushrooms; cook 6 to 10 minutes longer or until browned and liquid evaporates. Add spinach and reserved pasta cooking water; cook and stir 1 minute.
- Pour mushroom mixture over pasta; toss to coat. Pour into baking dish. Top evenly with both cheeses. Cover dish tightly with foil.
- Bake 20 minutes. Remove foil; top with reserved bacon. Bake uncovered 5 minutes longer.
