Easy Avocado Feta Dip. Less than 10 ingredients, and quick to make. Loaded with avocado, tomatoes, red onion, feta and parsley (or use cilantro!). This dip is a must for any occasion and is always a hit with friends and family.

2 ripe medium avocados, fleshed and diced
4 ounces feta (block will yield best taste and texture)
3 medium Roma tomatoes, seeded and diced
1/3 cup diced red onion
2 cloves garlic, minced
1/2 cup chopped parsley (or cilantro)
1 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar (or white vinegar)
1/2 teaspoon fine sea salt, or to taste

Steps:

  • Make sure your avocados aren't too soft so they hold their texture better.
  • 4oz block of feta into cubes.
  • In a medium bowl add diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley or cilantro, extra virgin olive oil and vinegar. Sprinkle with salt.

  • Transfer dip to serving bowl, serve with crackers, chips, flatbread or on its own.

2 whole avocados (skin and pits removed)
3/4 cup feta cheese, crumbled
2 -3 tablespoons fresh lime juice (start with 2 tablespoons and increase by 1/2 tablespoons)
1/4 cup white onion, chopped
2 whole garlic cloves, minced
1/2 jalapeno pepper, seeds and stem removed (more or less to taste)
2 tablespoons olive oil
1/2 teaspoon coarse sea salt or 1/4 teaspoon kosher salt
1/2 teaspoon black pepper
chopped cilantro, garnish (optional)

Steps:

  • In a food processor, pulse avocado, feta, onion, garlic, cilantro and jalapeno.
  • Scrape down the sides of the bowl, add lemon and olive oil. Pulse again until smooth.
  • Garnish with chopped cilantro, if desired, and serve with veggies and pita bread or tortilla chips.
