1 tablespoon olive oil
2 medium zucchini, coarsely chopped
1 cup fresh baby carrots, halved lengthwise
1 cup fresh or frozen corn
1 small red onion, cut into thin wedges
1 cup cherry tomatoes, halved
2 garlic cloves, minced
1 package (4.8 ounces) Pasta Roni angel hair pasta with herbs
1/2 cup chopped walnuts, toasted
1/4 cup shredded Parmesan cheese
Coarsely ground pepper

Steps:

  • In a large skillet, heat oil over medium-high heat. Add zucchini, carrots, corn and onion; cook and stir until carrots are tender, 10-12 minutes. Stir in tomatoes and garlic; cook 1 minute longer., Meanwhile, prepare pasta mix according to package directions. Add to vegetable mixture; toss to combine. Sprinkle with walnuts, cheese and pepper.

1 large zucchini, cubed
8 oz sliced white mushrooms
2 large shallots, quartered
1 small onion, rough chop
1 can(s) sliced black olives (4-6 oz can)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika, sweet mild
1 tsp garlic salt with parsley
1/4 tsp black pepper
4 Tbsp olive oil
1 lb angel hair pasta
3-4 c favorite pasta sauce
shaved 3 cheese mix of Parmesan, Romano and Asiago

Steps:

  • 1. Chop all vegetables into big chunks. In a large skillet heat about 4 tablespoons of olive oil. Add the chopped vegetables. Sprinkle with garlic powder, onion powder, garlic salt with parsley, pepper, and paprika. Stir and fry until liquid cooks off and the vegetables are tender. Set aside.
  • 2. While vegetables are cooking, heat your favorite spaghetti sauce or marinara. Cook angel hair according to package directions. Drain.
  • 3. To serve place a big scoop of cooked pasta on a plate. Top with vegetables and pour sauce over vegetables. Sprinkle with shaved cheese to taste. Enjoy!

This recipe is such a yummy way to use up odds and ends from the garden! I almost hate to post it b/c it is basically just a pasta primavera, but it is too yummy to not share and there is nothing better than eating a meal that you helped grow :). It is also nice that this takes about as long to make as boiling pasta. Use any pasta (I always use a "plus" variety to get more protein) and feel free to switch up the veggies as your garden or farmers' market provides. 8 ounces angel hair pasta (or whatever you have on hand)
1 cup snow peas
1 cup mushroom, sliced
1 cup carrot, sliced
1 cup green pepper, sliced
1/3 cup fresh basil
2 garlic cloves
2 tablespoons olive oil
2 teaspoons cornstarch
1 cup vegetable broth (or chicken broth)
1/4 teaspoon salt
3 medium tomatoes, chopped
1/4 cup parmesan cheese
crushed red pepper flakes, to taste (optional)
black pepper, to taste (optional)
pine nuts (optional)

Steps:

  • Cook pasta according to package directions.
  • Saute veggies, basil, and garlic in oil over medium-high heat.
  • Combine broth, starch, and salt, then stir into vegetables. Bring to a boil.
  • Reduce heat, then cook and stir 3-5 minutes.
  • Remove from heat and stir in tomatoes.
  • Top pasta with veggie mix or stir all together, then top with parmesan cheese.
  • Sprinkle individual servings with red pepper, black pepper, or pine nuts, or just leave as is!

3 tablespoons extra-virgin olive oil
4 cloves garlic, chopped
1 pint cherry tomatoes, halved
Kosher salt
8 ounces angel-hair pasta
8 cups chopped escarole, kale and/or Swiss chard
1 pound medium shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
Freshly ground pepper
1/2 cup fresh basil, chopped
Grated zest and juice of 1/2 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the greens to the water. Drain and rinse under cold water; transfer to a large bowl.
  • Combine the shrimp, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until golden, about 1 minute. Add the shrimp and cook until pink, about 3 minutes per side. Add the tomatoes and cook, stirring often, until slightly softened, about 2 minutes.
  • Add the shrimp mixture to the bowl with the pasta along with the basil and lemon zest and juice; toss to combine.

If you've got to eat your broccoli, this is a great way to do it. A beautiful side dish of broccoli and angel hair pasta with red pepper flakes is so delicious and so aromatic.

1 ½ pounds broccoli
2 tablespoons olive oil
¼ cup butter
6 cloves garlic, minced
1 teaspoon red pepper flakes
3 cups chicken stock
salt to taste
1 pound angel hair pasta
½ cup freshly shredded Parmigiano-Reggiano cheese, plus a little more for garnish
1 pinch red pepper flakes for garnish, or to taste

Steps:

  • Hold a sharp knife at a 45-degree angle and cut the florets from the broccoli stems into a bowl. Chop remaining stems into small pieces and transfer stems to a separate bowl.
  • Heat 2 tablespoons olive oil with butter in a skillet over medium heat and cook garlic in the hot oil-butter mixture, stirring often, until garlic is soft but not browned. Sprinkle in 1 teaspoon red pepper flakes and salt. Pour chicken stock into skillet and bring to a simmer. Stir broccoli stems into the stock mixture and simmer until tender, 10 to 12 minutes. Add a little water or stock if mixture starts to dry out.
  • Stir broccoli florets into skillet and cook broccoli sauce until florets are bright green and slightly tender, 3 to 4 minutes.
  • Bring a large pot of salted water to a boil and stir in angel hair pasta. Cook, stirring occasionally, until pasta strands are almost tender, about 4 minutes. Drain and transfer to a large pot.
  • Pour broccoli sauce over pasta, stir with a wooden spoon, and mix in 1/2 cup Parmigiano-Reggiano cheese. Cover pot with a lid and let stand until pasta absorbs excess liquid and finishes cooking, about 2 minutes.
  • Serve in bowls and sprinkle each serving with a dusting of Parmigiano-Reggiano cheese and a pinch of red pepper flakes.
