I came up with these when I needed something quick and easy to make for supper. Hubby and I enjoy them and I hope you will too!

1 lb ground beef
2 cups pasta sauce
1 cup mozzarella cheese
1 can crescent roll

Steps:

  • Brown hamburger, drain, and add pasta sauce.
  • Press 4 crescent rolls in the bottom of greased 8x8 pan, add meat/sauce mixture, cheese, and remaining 4 crescent rolls on top.
  • Bake in preheated 350F oven for 12-15 minutes and enjoy!

Is it a vegetable side dish or is it corn bread? This recipe comes from The New American Diet Cookbook and is credited to having originated in eastern Oregon. It is deliciously different and goes well with stews, bean soup or chili.

1 large sweet onion, sliced
1/2 cup low-fat yogurt
1/4 teaspoon dill weed
1/4 teaspoon salt
1/2 cup whole wheat pastry flour
1/2 cup cornmeal
1 teaspoon sugar
1 1/2 teaspoons baking powder
3 tablespoons oil
1/2 cup nonfat milk
1 eggs or 1/4 cup egg substitute
1 cup creamed corn
Tabasco sauce
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 450 degrees.
  • Spray a non-stick 9 x 9 inch pan with non-stick cooking spray and set aside.
  • Saute the onion slices in a nonstick skillet until soft and slightly browned.
  • Add yogurt, dill weed and salt; mixing well.
  • In a medium size bowl, combine the flour, cornmeal, sugar, baking powder, oil, fat free milk and egg; mix well.
  • Add corn and a few dashes of Tabasco sauce.
  • Pour the batter into prepared pan, spread with onion mixture and sprinkle with grated cheese.
  • Bake for 25 to 30 minutes or until lightly brown.
  • Cut into 9 squares and serve.

ITALIAN ANTIPASTO SQUARES

There's a whole antipasto tray baked in the tender crust of these crescent squares, served as either an appetizer or main dish. Courtesy of Pillsbury Bake-Off 41 (Hollywood 2004) and presenter was Patti Chialastri from West Haven, Ct. Update 03/2006....I made these again and instead of using American cheese (personal preference) I just doubled the amt of swiss cheese - have also made them with cheddar and they turned out great! Another Update: 01/09/2009....played around with the selection of cheeses and I used Fontina (it was out of sight!) the American cheese - I don't like so have been looking for another cheese that I could use instead - I guess it still is a work in progress! ;) Update: 11/29/2009 used Asiago cheese this time - it was marvelous - if I say-so myself!

2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
1/4 lb thinly sliced salami (used hard salami with pepper)
1/4 lb thinly sliced swiss cheese
1/4 lb thinly sliced pepperoni
1/4 lb thinly sliced American cheese (used cheddar)
1/4 lb thinly sliced cured capicola (italian ham) or 1/4 lb cooked ham (maple cured)
1/4 lb thinly sliced provolone cheese
2 eggs
1/2 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1 (12 ounce) jar roasted sweet peppers, drained
1 (2 1/4 ounce) can sliced ripe olives, drained
1 egg yolk, beaten

Steps:

  • Preheat oven to 350°F.
  • Lightly butter 13x9-inch pan and spray with cooking spray.
  • Unroll 1 can of dough into 1 large rectangle; place in buttered pan.
  • Press in bottom and 3/4-inch up sides of pan to form crust, firmly pressing perforations to seal.
  • Layer all meats and cheese in order listed over dough.
  • In a small bowl, beat 2 eggs, the garlic powder & freshly ground pepper with wire whisk until well blended.
  • Pour over meat and cheese layers.
  • Layer roasted peppers and olives over top.
  • Unroll second can of dough into 1 large rectangle; press into 13x9-inch rectangle, firmly pressing perforations to seal.
  • Place over top of layered ingredients.
  • Pinch edges to seal.
  • Brush beaten egg yolk over dough.
  • Cover with foil.
  • Bake for 30 minutes.
  • Remove foil; bake an additional 15-20 minutes or until deep golden brown.
  • Cool 15 mintes before serving.
  • Cut into squares.
  • Serve warm.

CHEESY SKILLET CRESCENT ROLLS WITH CARAMELIZED ONIONS



Cheesy Skillet Crescent Rolls with Caramelized Onions image

Cast iron gets screaming hot, so it's perfect for giving rolls a beautiful crust.

4 tablespoons salted butter
2 small onions, thinly sliced
1 teaspoon fresh thyme, chopped
Kosher salt and freshly ground pepper
1 tablespoon apple cider vinegar
2 8-ounce tubes refrigerated crescent roll dough, separated into 16 triangles
4 ounces Swiss cheese, shredded

Steps:

  • Preheat the oven to 375˚ F. Melt the butter in a 12-inch cast-iron skillet over medium heat. Add the onions, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very soft and a deep golden brown, 10 to 15 minutes. Stir in the vinegar and cook, scraping up any browned bits, until evaporated, 1 to 2 minutes. Use a slotted spoon to remove the onions to a paper towel-lined plate and wipe the skillet clean.
  • On the wide end of each dough triangle, spoon a scant tablespoonful of caramelized onions and sprinkle with about 1 tablespoon Swiss cheese. Starting at the wide end, gently roll up the dough around the filling; place in the skillet. There will be some space between each roll, but the rolls will puff up and come together when baked.
  • Transfer the skillet to the oven and bake until the rolls are golden and puffy, 25 to 30 minutes. Let cool slightly before serving.

I love those canned french fried onions. Do you? Now you can dress up those little crescent rolls with these onions. They sure are good and very easy to make. I got this out of A Taste of Home book.

1 (8 ounce) package refrigerated crescent dinner rolls
1 1/3 cups French-fried onions (divided)
1 egg
1 tablespoon water

Steps:

  • Unroll the crescent roll dough and separate into triangles.
  • Sprinkle each with about 2 tablespoons of the onions.
  • Roll up each one from the wide end and place on ungreased foil-lined sheet.
  • Curve ends downward to make a crescent.
  • Beat the egg and water together and brush over dough.
  • Sprinkle with remaining onions.
  • Bake at 400 degrees for 10-12 minutes or till golden.
  • Serve warm.
