2 cups frozen or fresh blueberries
3⁄4 cup maple or pancake syrup
1 teaspoon grated orange peel
1 tablespoon cornstarch

Steps:

  • In a small saucepan combine blueberries, maple syrup and orange peel. In a small cup dissolve cornstarch in 2 tablespoons water. Add to blueberry mixture. Cook, stirring constantly, until mixture boils. Reduce heat and simmer until mixture thickens, about 1 minute.

1 cup warm water
1 cup white sugar
1 teaspoon lemon juice

Steps:

  • Mix blueberries, water, and sugar together using a whisk in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes.
  • Whisk lemon juice into syrup; serve immediately or cool.

1 tbs. butter (don't substitute)
1/2 cup maple syrup (your favorite, real or otherwise)
1 cup fresh blueberries

Steps:

  • 1. Melt butter in medium sauce pan. Add maple syrup and blueberries.
  • 2. Simmer on low until blueberries burst and syrup reaches desired consistency. (Just a few minutes.)
  • 3. Serve with blueberry pancakes, waffles, Belgian waffles or french toast.

Steps:

  • Combine 1 1/2 cups berries and syrup in a small saucepan over medium heat. Cook until berries are slightly softened, about 2 minutes, then mash using the back of a spoon. Simmer until mixture foams up a bit, about 1 to 2 minutes more.
  • Remove from heat, strain to remove blueberry solids, stir in remaining 1 1/2 cups berries, and use to top pancakes, waffles, or French toast.
