ITALIAN EASTER PIE

3 large eggs
3 tablespoons cold water
3 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces, plus more for the pan
22.5 ounces full-fat ricotta cheese
1/2 teaspoon kosher salt
Freshly ground black pepper
7 large eggs
1 tablespoon olive oil
1 pound ground spicy or sweet sausage
8 ounces asparagus, sliced 1/2 inch thick
10 thin slices Genoa salami
10 thin slices capicola
8 thin slices provolone cheese

Steps:

  • For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
  • For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
  • Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
  • On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
  • Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.

This recipe was found in a "Cooking with Paula Deen" magazine. In sounded so simular to my recipe #107514 that I thought I would whip it up to compare. This macaroni pie is just as good if not a wee bit better. It certainly needs to be compared side by side to be sure....but then, what would I do with all that pie? This recipe was titled in the magazine "Libba's Macaroni & Cheese"

2 cups uncooked elbow macaroni (for casseroles)
1/4 cup butter
3 3/4 cups shredded cheddar cheese, divided
1 1/4 cups milk
2 large eggs

Steps:

  • Cook pasta, according to package directions; drain well.
  • In a large bowl, combine pasta and butter, stirring until butter melts.
  • Preheat oven to 350 degrees. Lightly grease 1 1/2 quart baking dish.
  • In a small bowl, combine 2 3/4 cups cheese, milk, eggs.
  • Pour over pasta, stirring well. Spoon into prepared baking dish.
  • Top with reserved 1 cup cheese.
  • Bake 40-45 mins, or until set.

1/2 lb elbow macaroni
1 1/2 lbs grated colby-monterey jack cheese
1/2 cup margarine
1 (12 ounce) can evaporated milk
2 eggs
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350. Grease inside of 9x13 baking dish with stick of margarine. Cook elbow noodles til they are half cooked. Drain and rinse in cold water. Layer noodles and cheese in baking dish alternating between cheese and noodles. In mixing bowl combine evaporated milk, eggs, salt, and pepper. Mix well, pour evenly over macaroni and cheese. Use stick of margarine and put 1 TBSP at each corner and in middle of macaroni and cheese. Push down slightly. Bake at 350 for about 35 minutes or until lightly golden and bubbly on top.

5 oz elbow macaroni
1 Tbsp butter
1/2 c onion, finely chopped
1 tsp flour
1 c milk
1 c shredded Swiss cheese
1/4 tsp ground nutmeg
pinch cayene
salt and pepper to taste
2 c diced cooked ham
1 c thawed frozen peas

Steps:

  • Preheat oven to 400 degrees F 1. Cook elbow macaroni al dente, per package instructions, drain, set aside. 2. Melt butter in a saucepan over med heat. 3. Add onions, cook 2 minutes. 4. Stir in flour and cook 2 minutes, stirring constantly. 5. Gradually stir in milk, cook 1 minute or until thick enough to coat the back of a spoon, remove from heat. 6. Add Swiss cheese, stirring until melted. 7.Stir in nutmeg, cayene and salt and pepper. 8. Add ham, pasta and peas to sauce, stir. 9. Scrape into a greased 1-quart baking dish and bake about 20 minutes, or until bubbly.

3 eggs
3 cups milk
4 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.

Spaghetti/Marinara sauce {I use my homemade recipe here}
a splash of milk or cream

Steps:

  • Obviously this isn't an *actual* recipe. You just eyeball it. You can't go wrong. All you do is heat your marinara sauce - either homemade or jarred will work just fine but I have a loving relationship with my homemade. :) Once the sauce is hot, add in some milk or cream to make it creamy. I usually cook enough pasta and sauce for four people and I add in between a 1/2 to 1 cup of half and half. You can also toss in some parmesan cheese if you have some. Pour the sauce over the noodles and toss. Serve immediately with a slice of garlic bread. Mmmm.

½ cup butter
2 (12 ounce) cans evaporated milk
1 tablespoon ground black pepper

1 teaspoon salt
4 cups shredded Cheddar cheese
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

1 lb linguine, cooked al dente
1/2 lb soppressata, sliced thin
12 large eggs
1 cup milk
1 cup parmesan cheese, grated
salt

Steps:

  • Preheat the oven to 350 degrees. Oil a 9 by 13 by 2 inch baking pan.
  • In a large bowl, combine the cooked pasta with the soppressata and transfer to the baking pan.
  • In a bowl, whisk together the eggs, milk, 3/4 cup of the cheese. Add salt and pepper to taste. Pour over pasta. Sprinkle remaining cheese on top.
  • Bake the pie for 20-25 minutes or until eggs are set. If you want it slightly golden on top, broil until desired color is reached. (If you don't have soppressata, or don't want to use it, you can substitute with pepperoni.).

1 strip turkey bacon
1 small onion, finely chopped
1 tsp salt
1/2 tsp pepper
2 garlic cloves, finely chopped
3/4 pound 95% lean ground beef
1/2 tsp oregano
Pinch of cinnamon
28 oz can of tomatoes, with juices
1/4 cup chopped parsley
1 package whole grain spaghetti (13 1/4 oz)

Steps:

  • 1. Bring large pot of salted water to a boil for the pasta. 2. In a medium skillet over high heat, cool the oil and bacon for about 2 minutes, until the bacon begins to brown and crisp. Add the onion, salt, and pepper. Cook until onion is beginning to soften, about 3 minutes. Add the garlic and cook 1 minute more. 3. Add ground beef to the pan, along with the oregano and cinnamon. Cook breaking up the meat with a wooden spoon, until no pink remains, about 5 minutes. 4. Add tomatoes and parsley. Simmer the sauce on medium-high heat, stirring occasionally, for 15 minutes or until the sauce is slightly reduced and has turned a deep red color. 5. Meanwhile, add the pasta to the boiling water and cook according to the package directions. 6. Drain the pasta well, place it in a serving bowl, and top with sauce. Sprinkle with more parsley and serve.
