I have never tried a dish at East Side Mario's that I did not enjoy. Found this one out surfing the net and tried it. It was a nice alternative to a traditional Chicken Parmesan, and the sauce would also taste lovely over grilled chicken. *If you would like to spice this up a bit, add the optional crushed red pepper. *(Spicey option added based on Sam#3's review July 2008)

1 (14 ounce) can tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4-1/2 teaspoon crushed red pepper flakes
2 teaspoons oil or 2 teaspoons butter
1 garlic clove, smashed
4 boneless skinless chicken breasts
2 tablespoons fresh parsley, chopped
1/2 cup mozzarella cheese, shredded

Steps:

  • Pour tomatoes into blender or food processor.
  • Add basil, tarragon, salt, pepper and crushed red pepper.
  • Puree until smooth.
  • Melt margarine in large frypan.
  • Saute garlic over medium heat 1 minute.
  • Add chicken breasts, saute, turning once or twice until golden on both sides.
  • Turn chicken fleshy side down and cover with tomato mixture.
  • Bring to a boil, reduce heat and simmer 15 minutes until tender.
  • Remove chicken and place fleshy side up, in a warm oven proof dish.
  • Stir parsley into sauce and spoon over chicken breasts.
  • Sprinkle with Mozzarella.
  • Place under heated broiler 1 minute just until cheese melts.

I LOVE their dressing, and since we moved to Manitoba, I have been looking for a copycat of that dressing. This is pretty close. I found the basic recipe on another site, and modified it slightly

1 cup vegetable oil (Olive is a little too strong)
1/2 cup white vinegar
1/2 cup lemon juice
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon oregano, crushed
1/2 teaspoon garlic powder
1/8 teaspoon thyme

Steps:

  • Combine all in a measuring cup, and mix with an immersion blender.
  • Pour into a container and refrigerate.
  • The longer it sits, the better it gets.
  • Prep time is cooking time.
  • To make this truly authentic, make the salad with iceberg lettuce, rounds of red onion, hot pickled peppers (we don't like them, but the salad comes with two), croutons and oodles of grated parm cheese- the fresh stuff, not out of a can.

1 1/2 lbs chicken breasts
3 tablespoons cajun seasoning
3 tablespoons red pepper flakes
1/2 cup all-purpose flour
2 tablespoons extra virgin olive oil
1 (16 ounce) can diced tomatoes
10 ounces angel hair pasta
1/2 cup green pepper
1/2 cup red pepper
1/4 cup onion
4 garlic cloves
1 (11 ounce) can button mushrooms

Steps:

  • Pound chicken until 1/2 - 3/4 inch thick.
  • Mix cajun seasoning, red pepper flakes and all purpose flour.
  • Preheat large frying pan with Olive Oil.
  • Dredge chicken breasts in seasoning mixture insuring an even coating.
  • Brown chicken breasts 4-5 minutes both sides.
  • Remove chicken breasts.
  • Add Onion and garlic and saute for 3-4 minutes or until lightly browned.
  • Add green and red pepper saute for an additional 3-4 minutes.
  • Return chicken and add tomato allow to simmer for 8-10 minutes.
  • Prepare angel hair pasta and serve chicken over top.

1 1/2 lbs vegetables, julienne cut*
1 1/2 lbs angel hair pasta
1 cup extra virgin olive oil
2 tablespoons fresh garlic, chopped
1/2 cup chicken stock
4 tablespoons fresh basil, julienne cut
3 tablespoons sun-dried tomatoes, finely chopped
2 tablespoons fresh parsley, chopped
2 1/2 ounces parmesan cheese, grated
2 teaspoons lemon zest
1 sprig fresh parsley, washed (garnish)

Steps:

  • Heat a large pot of water over a medium heat until water boils. Place vegetables in steamer and steam until cooked al dente.
  • While vegetables are steaming, cook pasta as per instructions from manufacturer.
  • Place a large saute pan over a medium heat. Once pan is hot add olive oil and garlic. Gently saute garlic. Add a good quality chicken stock to the pan and bring to the boil.
  • Strain pasta and vegetables and add to saute pan. Add fresh basil, lemon zest, parmesan cheese, sun-dried tomatoes and parsley. Toss pasta thoroughly. Garnish with a sprig of parsley.
  • *Primavera vegetables: fresh snow peas, zucchini, red bell peppers, broccoli, carrots.
