ALMOND FLOUR CRACKERS WITH TOMATO SHALLOT CHUTNEY



Almond Flour Crackers with Tomato Shallot Chutney image

Number Of Ingredients 15

1 1/2 pounds ripe tomatoes, chopped
1/2 cup apple cider vinegar
1/4 cup brown sugar
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
2 shallots, thinly sliced
1 garlic clove, finely chopped
Kosher salt
1 large egg white
1 teaspoon minced fresh rosemary
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 3/4 cups almond flour
1/2 cup grated Parmesan

Steps:

  • For the chutney: Combine the tomatoes, vinegar, brown sugar, coriander, ginger, red pepper flakes, shallots, garlic and 1 teaspoon salt in a medium saucepan. Bring to a boil over high heat, then reduce the heat to keep at brisk simmer. Cook, stirring often, especially towards the end, until thickened and jammy, 30 to 35 minutes. Cool to warm or room temperature.
  • For the crackers: Meanwhile, preheat the oven to 350 degrees F. Line a sheet pan with parchment paper.
  • Whisk the egg white, rosemary, salt and pepper together in a large bowl until frothy. Add the almond flour and Parmesan. Mix well to form a dough.
  • Flatten the dough into a rectangle and sandwich between 2 sheets of parchment paper. Roll the dough out into an approximate 10-inch square, patching up any cracks with your fingers as you go. Use a sharp knife or pizza cutter to cut the dough into approximate 1 1/2-inch squares. Transfer to the lined sheet pan and bake until golden brown and crisp, 15 to 20 minutes, then transfer the crackers to the cooling rack and cool completely (crackers along the edge may cook faster than those in the center; transfer them to a cooling rack and continue to bake the remaining crackers).
  • Serve the tomato chutney with the crackers on the side. Any remaining chutney can be kept refrigerated in an airtight container for up to 1 week and is delicious with cheese, on burgers or on a sandwich.

2 cups cherry tomatoes or 2 cups grape tomatoes, halved
1/2 small white onion, minced
1 green onion, white and little part of green,chopped
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh flat-leaf parsley
1 jalapeno pepper, minced
2 teaspoons lemon juice
1/2-1 teaspoon salt, to taste

Steps:

  • Add about 2 tbsp. water to halved cherry or grape tomatoes in a sauce pan.
  • Bring to a boil, then simmer until tomatoes are softened and slightly broken up, about 10 to 15 minutes.
  • Remove from heat, and stir in onions, cilantro, parsley, jalapeno, lemon juice and salt.
  • Let flavors meld for about an hour, then serve, preferably at room temperature.

1kg ripe tomato, peeled and chopped
750g cooking apple, peeled, cored and chopped
375g light muscovado sugar
250g onion, chopped
250g raisins
1 green pepper, deseeded and chopped
2 tsp salt
½ tsp ground ginger
350ml cider vinegar

Steps:

  • Put all the ingredients into a large pan and bring to the boil over a medium heat. Stir occasionally until the sugar has dissolved. Boil the mixture, uncovered, for about 45-50 mins until the fruit is tender and thickened. Cool, then transfer the mixture to a sterilised jar and seal.

2 pints cherry tomatoes
1 small white onion, chopped
1 green onion, chopped
½ teaspoon chopped fresh cilantro
2 green chile peppers, chopped
salt to taste
1 teaspoon lemon juice, or to taste

Steps:

  • Place cherry tomatoes in a medium saucepan. Add just enough water to cover the bottom of the pan. Bring to a boil over medium-high heat, and let cook until tomatoes are soft and broken.
  • In a medium bowl, mix together the white onion, green onion, cilantro, and chile peppers. Add hot cooked tomatoes, and mix well. Season with salt, pepper and lemon juice to taste.

10 big fully ripe red juicy tomatoes
2 big onions, chopped
5 dried garlic, peeled
2 teaspoons sugar
salt
1 teaspoon black pepper
2 bay leaves
4 cloves
1 inch cinnamon
1 pinch nutmeg
1 tablespoon oil

Steps:

  • Take a non stick heavy bottom pan and heat the oil.
  • Put bay leaves, cloves, cinnamon first and then add onion, garlic, salt and black pepper powder.
  • Saute for 2 minutes and add chopped tomatoes, salt and sugar.
  • Keep covered and stirring for 10 minutes or until tomatoes are soft.
  • Allow to cool to the room temperature.
  • Add nutmeg now.
  • Put the mixture in the blender and blend till smooth (Remove bay leaves before blending).
  • Fill in a sterilised jar and keep refrigerated.

500g red onion, finely sliced
1kg tomato, chopped
4 garlic cloves, sliced
1 red chilli, chopped (optional)
4cm piece ginger, peeled and chopped
250g brown sugar
150ml red wine vinegar
5 cardamom seeds
½ tsp paprika

Steps:

  • Tip all the ingredients into a large heavy-based pan and bring to a gentle simmer, stirring frequently. Simmer for 1 hr, then bring to a gentle boil so that the mixture turns dark, jammy and shiny. Place into sterilised jars and allow to cool before covering. Will keep for 6 weeks.
