1 (32 ounce) jar spaghetti sauce
10 lasagna noodles (uncooked)
1 1/2 lbs uncooked lean ground beef
1/2 cup onion, chopped
9 slices mozzarella cheese
1/2 cup parmesan cheese
3/4 cup hot water

Steps:

  • Layer in a 9X13 pan as follows:.
  • 1 cup sauce on the bottom of the pan.
  • 5 noodles on top of sauce.
  • 1/2 of raw ground beef, broken up.
  • onion.
  • 1 1/2 cup sauce.
  • 5 noodles.
  • layer of mozzarella cheese to cover.
  • the rest of the ground beef.
  • the rest of the sauce.
  • water.
  • Layer with the rest of the mozzarella and sprinkle with parmesan cheese.
  • Bake at 350 F for 1 hour covered.
  • Uncover and bake 30-40 minutes more.
  • Cool 5 minutes before cutting.

8 -10 regular lasagna noodles (not the no boil noodles!)
40 ounces spaghetti sauce
24 ounces small curd cottage cheese
2 eggs
4 cups mozzarella cheese
1 lb hamburger

Steps:

  • Preheat oven to 350°F.
  • Brown hamburger and drain.
  • Mix hamburger with spaghetti sauce.
  • Beat eggs and mix into cottage cheese.
  • Spray 9x13 pan with non-stick spray.
  • Spoon 1/4 cup meat mixture on bottom of pan and spread around.
  • Place four (or 5) lasagna noodles (uncooked) on top of sauce.
  • Layer half of cottage cheese mixture on noodles, then half of meat mixture and half of cheese.
  • Place remaining noodles on top of cheese.
  • Layer remaining cottage cheese, meat mixture and cheese.
  • Cover lasagna with foil and place in oven.
  • Bake for 60 minutes.
  • Remove foil and bake for 15-20 minutes more, until cheese is melted and bubbly.
  • Let sit for about 10 minutes before serving.

This is my adaptation of a recipe from the Busy People's Low-Fat Cookbook by Dawn Hall. She uses ground meatless in hers, fat-free cheeses and Healthy Choice Super Chunky Mushroom pasta sauce. I like to use two 8x8 inch pans and put one in the freezer.

2 (23 ounce) jars chunky pasta sauce (I use Prego Chunky Garden Combo)
1 -1 1/2 lb ground turkey, cooked
4 -8 ounces oven-ready dry lasagna noodles (I like American Beauty brand)
16 ounces low fat cottage cheese
16 ounces lowfat mozzarella cheese

Steps:

  • Preheat oven to 375 degrees.
  • Spray baking dish with non-fat cooking spray.
  • In large bowl, mix together the pasta sauce and ground turkey.
  • Line bottom of prepared dish with 1/3 of the pasta sauce mixture.
  • Lay strips of uncooked lasagna noodles on top of pasta sauce.
  • Spread 1/2 of the cottage cheese over noodles and sprinkle one half of the mozzarella cheese over the cottage cheese.
  • Start with 1/3 of the sauce again, and repeat layers one more time, ending with the last third of the sauce.
  • Cover with foil and bake at 375 for 1 hour.
  • Note: To avoid a mess with the lasagna bubbling over, place dish on a cookie sheet or sheet of foil.

1 jar (26-28 ounces) spaghetti sauce
1 can (14 1/2 ounces) diced tomatoes with basil, garlic & oregano (do not drain)
1/2 cup water
1 ounce fresh parmesan cheese, grated (1/4 cup)
1/4 cup snipped fresh parsley
1 egg
1 carton (8 ounces) part-skim ricotta cheese
10 uncooked lasagna noodles
3 cups (12 ounces) shredded mozzarella cheese

Steps:

  • 1. Preheat oven to 400°F. In Classic Batter Bowl, combine spaghetti sauce, undrained tomatoes and water with Mix 'N Scraper® and set aside. 2. Using Rotary Grater, grate Parmesan cheese. Place parsley in a small, deep bowl and snip using Professional Shears. 3. In Small Batter Bowl, mix egg with Stainless Whisk. Add ricotta cheese, Parmesan cheese and parsley and mix well with scraper. 4. To assemble lasagna, spread 1 1/2 cups of the sauce over bottom of Rectangular Baker. 5. Arrange 5 of the uncooked noodles in single layer over sauce by placing 4 noodles lengthwise and 1 noodle crosswise to cover bottom of Baker. (Break off and discard ends of noodles, if necessary, so that noodles will fit flat in the Baker.) Press noodles into sauce. 6. Spread all of the ricotta chese mixture over noodles using All-Purpose Spreader. Sprinkle with half (1 1/2 cups) of the mozzarella cheese. 7. Top with 1 1/2 cups of the sauce and remaining 5 uncooked noodles, breaking noodles to fit. Press noodles into sauce. Spread the remaining sauce over noodles. Cover Baker with aluminum foil. (At this point, lasagna can be refrigerated for several hours or overnight.) 8. Bake 45 minutes (55 minutes if lasagna was refrigerated) or until noodles are tender. Using Oven Mitts, remove Baker to Hot Pad/Trivet. Uncover carefully and sprinkle with remaining mozzarella cheese. Cover loosely with foil; let stand 15 minutes. Cut into squares.

This is a truly simple lasagna recipe. The original recipe calls for 2lbs. of hamburger, 15oz Golden Grain marinara, and an entire box of noodles. I have always tried to tweak it just enough to make dinner for four. The secret is somewhere in the stand time, the longer the better for the noodles. This is an excellent make ahead and reheat dish. My husband says its even better the next day and I agree.

3/4 cup water
26 ounces Prego spaghetti sauce
6 ounces cheddar cheese
6 ounces monterey jack cheese
1/4 cup parmesan cheese
1 teaspoon salt
1 cup cottage cheese
8 lasagna noodles

Steps:

  • Brown beef and strain fat. Add sauce, water and salt, bring to boil.
  • In a 2-qt baking dish, layer sauce, uncooked noodles then cottage cheese and shredded cheeses. Repeat layers ending with sauce on top. Cover tightly with foil and bake at 375°F for 1 hour. Let stand for 10 minutes then garnish with parmesan cheese.
