2 1/2 lb boneless, skinless chicken breast
2 can(s) (10.75 oz. each) cream of chicken soup
2 Tbsp butter
1 c diced carrots
1 c frozen peas
1 onion, minced
1 tsp onion powder
salt and pepper to taste
3/4 c chicken broth
1 - 2 pkg (10 oz. each) refrigerated biscuit dough

Steps:

  • 1. Place the chicken breast on the bottom of a 5 or 6-quart slow cooker. Top with soup, butter, vegetables, onion powder, salt, pepper and onion. ( I sometimes just use 2 cups of mixed frozen vegetables in place of the peas and carrots.) Pour the chicken broth over the soup mixture. The chicken should be covered; if not, add more broth. Place the cover on the slow cooker and turn on high. Cook on high for 5 to 6 hours. Approximately 1 hour before serving, remove the cover and pull the chicken apart in small pieces or shred. Tear the refrigerator biscuit dough into pieces and place it on top of the chicken mixture in the slow cooker. Replace the cover and cook another hour or until the biscuits are done all the way through. ( you can also take the liner out of the cooker and bake at 400 degrees, until biscuits are cooked. I sometimes do this if in a hurry.)

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Steps:

  • Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
  • Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

2 cups cooked chicken
10 3/4 ounces condensed cream of mushroom soup
10 3/4 ounces condensed cream of chicken soup
2 (10 3/4 ounce) soup cans water
2 teaspoons chicken bouillon granules
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/2 teaspoon italian seasoning
16 ounces buttermilk biscuits (8)

Steps:

  • Combine all ingredients in crock pot except biscuits; blend well.
  • Cut biscuits into quarters, stir into mixture.
  • Cover; cook on Low 4 to 6 hours stirring occsionally or until biscuits are cooked.

1 1/2 tablespoons extra-virgin olive oil (divided)
8 ounces sliced baby bella (cremini) mushrooms
1 1/2 teaspoons garlic powder
1/2 teaspoon kosher salt
3/4 teaspoon black pepper
1/4 cup all-purpose flour
2 1/2 cups milk (I used nonfat milk; unsweetened almond milk, 1%, 2%, or whole milk would all work well here)
2 cups cooked and shredded boneless, skinless chicken breasts* (about 8 ounces or 2 small breasts)
1 (16-ounce) bag frozen mixed vegetables (I used a blend of carrots, peas, and green beans)
1 tablespoon chopped fresh thyme
1 prepared Easy Drop Biscuits batter (leave the batter unbaked)

Steps:

  • Preheat the oven to 400 degrees F. Lightly coat an 8x10 or similar 2 1/2-quart casserole dish with nonstick spray. Set aside.
  • Heat a large dutch oven or similar deep, heavy-bottomed pot over medium-high heat. Add 1 tablespoon of the oil to the pan. Once hot but not smoking, add the mushrooms and cook for 8 minutes, until the mushrooms are beginning to brown, stirring occasionally. Add the garlic powder, salt, and pepper. Cook until the mushrooms have browned more deeply, about 3 additional minutes.
  • Sprinkle the flour over the top of the mushrooms. Drizzle in the remaining 1/2 tablespoon oil. Stir and cook until any white bits of flour disappear and the flour looks light golden, about 1 to 2 minutes. The mixture will seem dry. Slowly pour in the milk. Switch to a whisk and stir constantly. Bring to a low, gentle boil, continuing to whisk and scraping any brown bits from the bottom of the pan. Continue to let bubble until thickened and reduced by about half, about 7 minutes, whisking very often. Turn off the heat. Stir in the chicken, frozen vegetables, and thyme. Taste and add additional salt and pepper as desired. Spoon the chicken mixture into the prepared dish.
  • Drop the biscuit dough by rounded spoonfuls over the top, dispersing the biscuits evenly over the surface. Some of the filling will peek through.
  • Bake until the biscuits are golden brown on top and cooked through, 25 to 30 minutes. Let cool a few minutes. Serve hot.

¼ cup water, or as needed
1 teaspoon poultry seasoning
salt and ground black pepper to taste
4 skinless, boneless chicken breast halves
1 (10.75 ounce) can low-sodium chicken broth, divided
1 large onion, finely diced
3 carrots, chopped
4 stalks celery, chopped
2 tablespoons butter
1 (10.75 ounce) can reduced-fat condensed cream of celery soup (such as Campbell's®)
1 (10.75 ounce) can reduced-fat condensed cream of chicken soup (such as Campbell's® Healthy Request)
½ teaspoon dried rosemary
1 (10 ounce) package refrigerated biscuit dough, torn into pieces

Steps:

  • Whisk water, poultry seasoning, salt, and black pepper together in a bowl; add chicken to bowl and turn to coat.
  • Pour 1/2 of the chicken broth into a slow cooker; add chicken and poultry seasoning mixture. Layer onion, carrots, and celery, respectively, over chicken. Dot butter over vegetables; pour celery soup and chicken soup over vegetables and sprinkle rosemary on top.
  • Cook on High for 3 1/2 to 4 1/2 hours. Remove chicken from slow cooker and shred with two forks; return chicken to slow cooker. Add biscuit dough pieces to chicken mixture. Cook on High for 1 1/2 hours.
