1 (16 ounce) carton Cool Whip
1 can Eagle Brand Condensed Milk
1 (20 ounce) can chunk pineapple, packed in its own juice
1 can pie ready cherries
1 can mandarin orange, drained
1 cup pecan pieces

Steps:

  • Mix all ingredients except mandarin oranges and fold them into mixture last.
  • I usually wait and add the nuts right before serving this dish.
  • Sometimes I even serve the nuts on the side.

1 can(s) fruit cocktail drained (we like chunky tropical) drained, 15 oz.
1 can(s) crushed pineapple (small can, drained, 8 oz.)
1 can(s) cherry pie filling, 21 oz.
2 bananas sliced
1 can(s) sweetened condensed milk, 14 oz.
8 oz sour cream
1 pkg Cool Whip, 8 oz. (thawed)

Steps:

  • 1. Mix together Cool Whip, sweetened condensed milk and sour cream.
  • 2. Add the fruit cocktail, pineapple, cherry pie filling and bananas.
  • 3. Cover and refrigerate for at least four hours.
  • 4. Serve.

1 can(s) eagle brand milk
1/2 c coconut flakes (optional)
1/2 c miniature marshmallows (optional)
1 medium container cool whip

  • 1. Mix together cherry pie filling, drained pineapple, eagle brand milk, and coconut flakes.
  • 2. Fold in cool whip and mix well with previous ingredients, then mix in marshmallows.

1 (8 ounce) container Cool Whip Lite, frozen and thawed
1 (13 ounce) can Eagle Brand Condensed Milk (I use low-fat)
1 (30 ounce) can fruit cocktail in light syrup, drained
1 (10 ounce) can unsweetened crushed canned pineapple
2 bananas, thinly chopped, rubbed with lemon juice
1/2 cup pecans, coarsely chopped

Steps:

  • Fold together condensed milk and Cool Whip.
  • Add drained fruit cocktail and crushed pineapple.
  • Stir in sliced bananas with lemon and mix well. Add pecans and stir.
  • Chill for one hour or overnight and serve cool.
  • FOR VARIATION: you can add 1/2 cup of small marshmallows and 1/2 cup shredded coconut if you like.

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Evelyn.

1 can(s) eagle brand sweetened condensed milk (not evaporated milk)
1 pt grapes, peeled and seeded
1 can(s) crushed pineapple, drained
1/2 c pecans
1 c whipped cream or whipped topping

Steps:

  • 1. Caramelize the sweetened condensed milk: Immerse unopened can of Eagle Brand Sweetened Condensed Milk in a deep heavy pot (with a heavy lid that fits snuggly to avoid evaporation), with enough water to cover the top of the can by an inch. Bring water to boil, lower the heat and cover the pot. Continue to simmer 1 hour and 30 minutes after it begins to boil. Check the pot every 20 minutes or so, adding more boiling water if the water level becomes lower than the height of the can. Leave can in the pot of water until it cools. DO NOT open can until it has completely cooled, it will ooze out and make a mess. This can be done several days in advance.
  • 2. Mix caramelized sweetened condensed milk, grapes, pineapple and pecans. Stir in whipped cream or topping.

FROZEN STRAWBERRY SALAD

My daugher came home with this recipe when she was in High School. It has become one or our favorite cool to taste recipes for summer. She still loves it and will request it as does her friends. So easy to make and so easy to eat and enjoy on a hot summer day!

12 oz tub of cool whip
1 can(s) eagle brand milk - sweetened condensed
1 c chopped pecans
1 can(s) medium - crushed pineapple - drained
1 pkg frozen sliced strawberries, slightly thawed - don't drain

Steps:

  • 1. Mix above ingredients together, put in oblong glass dish 9 X 13. and freeze. Cut into squares. Eat as is or you can put on top of lettuce.
  • 2. If I have fresh strawbrries I will slice them and add a little sugar to make syrup and put in the refrigerator ahead of time to soften up and make their own syrup. This can be used or subbed for the above frozen ones.
