A Rhode Island exclusive. Kind of like a Sloppy Joe but far superior. Spicy enough to earn it's name, it's best washed down with a good beer. For you non Rhodey people, torpedo rolls are just the long sandwich rolls.

2 pounds ground beef
2 green bell peppers, seeded and diced
1 (1/4 inch x 3 inch) strip red bell pepper, seeded and diced
1 medium yellow onion, chopped
1 medium red onion, chopped
2 (6 ounce) cans tomato paste
1 ½ cups water
1 teaspoon red pepper flakes, or to taste
8 torpedo rolls, split

Steps:

  • Place the ground beef in a large skillet over medium-high heat. Add the green pepper, red pepper, yellow onion and red onion to the skillet, and cook until meat is evenly browned and vegetables are tender. Drain excess grease from the pan.
  • Transfer the mixture to a slow cooker, and stir in tomato paste, water and red pepper flakes. Cover, and cook at the Low setting for at least 4 hours. I usually let it go for 12. The longer it simmers, the spicier it gets! Spoon into torpedo rolls and serve.

2-1/2 pounds ground beef
5 medium green peppers, finely chopped
4 large onions, chopped (6 cups)
1 can (28 ounces) crushed tomatoes in puree
1 can (16 ounces) tomato sauce
1 can (12 ounces) tomato paste
1 cup water
2 tablespoons sugar
2 tablespoons garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried oregano
2-1/4 teaspoons salt

Steps:

  • In a Dutch oven, cook beef over medium-high heat 8-10 minutes or until no longer pink, breaking into crumbles; drain., Stir in all remaining ingredients except buns. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour or until desired consistency and flavors are blended, stirring occasionally. Serve on buns.

These are best cooked on the grill, but you can remove them from the marinade and bake them in the oven at 350 degrees. This marinade is excellent on prime rib, fish or chicken. Serve with a crispy salad and garlic cheese potatoes for a great dinner!

1 cup dark brown sugar
⅔ cup bourbon
1 cup light soy sauce
4 cloves garlic
3 pounds country style pork ribs

Steps:

  • Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Place ribs on grate, and cover. Cook for 45 minutes to 1 hour depending on thickness of your ribs. When finished, the internal temperature of the ribs should be 160 degrees F (70 degrees C) when taken with a meat thermometer.

8 ounces shrimp (buy the #36-40 sized ones)
7 baby carrots, halved lengthwise
1/2 cup water chestnut, sliced
24 snow peas
1 large scallion, white part 1/4-inch minced
1 large garlic clove, minced
2 tablespoons sherry wine
1 1/2 tablespoons sambal chili paste
1/4 teaspoon white pepper
2 teaspoons ground bean sauce
cilantro, chopped (garnish)
1 teaspoon cornstarch blended with 1 ounce water
2 tablespoons soy sauce
2 teaspoons sugar
2 ounces water
2 teaspoons white vinegar

Steps:

  • Assemble sauce ingredients and put aside.
  • Heat a large saute pan, cast iron skillet, or electric wok until smoking. Add oil and baby carrots; saute until the color of carrots brightens. Add shrimp and stir fry until about half way cooked (1 minute). Add water chestnuts, snow peas and garlic. Saute briefly.
  • Add scallions. Add chili paste, ground white pepper, and ground bean sauce. When you smell the "nuttiness" of the ground bean sauce, reduce heat and add sherry.
  • Pour in the sauce mixture and let boil briefly. Add cornstarch slurry and stir until thickened (approximately 30 seconds).
  • Serve along with steamed rice and garnish with cilantro.

DYNAMITE SAUCE FOR SUSHI



Dynamite Sauce for Sushi image

This is my adaptation of a recipe I found at http://www.stickyrice.com . You can use this sauce in spicy tuna rolls, or on a volcano or lava roll. jb4 and I looked EVERYWHERE for this recipe and the Sriracha hot sauce is the secret ingredient. You can be authentic and use "real" Japanese mayonnaise (QP, Kewpie), but good old Hellman's works fine too. If you don't want the roe...leave it out, I think it is mainly for color and texture. If you omit the roe this is especially good for making tuna salad.

2 pounds halibut, cut into bite size pieces
1 cup mayonnaise
1 teaspoon fresh lemon juice
¾ teaspoon chile-garlic sauce
½ teaspoon white sugar
½ teaspoon soy sauce

4 cups thinly sliced mushrooms
2 cups thinly sliced onions
1 lemon, cut in half
Kosher salt, to taste
1 tablespoon sesame seeds
¾ cup sliced green onions

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Set an oven rack into the center of the oven.
  • Line a baking sheet with aluminum foil and a layer of cooking spray.
  • Arrange halibut pieces on the prepared baking sheet so that all pieces are touching.
  • Mix the mayonnaise, lemon juice, chili garlic sauce, sugar, soy sauce, and sesame oil in a bowl; fold the mushrooms and onion into the mayonnaise mixture.
  • Spread the mushroom mixture over the halibut pieces.
  • Squeeze one lemon half over the mushroom mixture; sprinkle with Kosher salt.

2 dozen frozen mussels on the half shell, thawed
1 1/2 tablespoons half-and-half
1 cup japanese mayonnaise, Kewpie brand
1 -1 1/2 teaspoon sriracha sauce or 1 -1 1/2 teaspoon chili-garlic sauce
1 1/2 tablespoons masago smelt roe
instant dashi stock, pellets
fresh lemon, for garnish

Steps:

  • Pre-heat your broiler or toaster oven to 350 degrees.
  • Detach mussels from the shell and replace back. Arrange them in the same way on the baking pan. Set aside as you prepare the sauce.
  • To prepare the sauce, first drop a pinch of the Hon Dashi pellets in a medium bowl and dissolve completely with the half and half.
  • Then add the Kewpie mayo. Combine the mixture with a spoon until smooth. Add the Sriracha or chili sauce and fully incorporate it into the sauce.
  • Do a taste test here. If you would like the sauce to be hotter, add a little more Sriracha or chili sauce. If you want it to be milder, add a few squirts of Kewpie mayo. If you think you've added too much mayo, you can thin the mixture slightly with a few drops of half and half.
  • The consistency of the sauce should be like pancake batter or a softened milk shake.
  • Once you've reached this stage, add the roe and stir slowly to distribute it evenly into the sauce. Spoon the sauce over each mussel. Put just enough to cover the meat completely.
  • Place the mussels under the broiler or toaster oven to cook.
  • Check frequently and rotate the pan occasionally to even out the browning. Cook until the sauce bubbles and gets golden brown with a few dark spots forming. The total cooking time should not exceed 15 minutes.
  • Serve immediately, squeeze some lemon juice on each as you are eating them. ENJOY!

2 tablespoons chili powder
2 (5 ) packages all beef wieners
2 packets instant chicken-flavored broth
2 cups carrots, diced (about 1/4-inch cubes)
2 medium green peppers, seeded and diced (about 1/2-inch)
2 cups celery, diced (about 1/4-inch cubes)
2 cups eggplants, diced (about 1/2-inch cubes)
2 cups canned tomatoes, crushed
2 cups tomato puree
1 cup water
1/2 cup Burgundy wine
hot pepper sauce
1 cup canned kidney beans, drained
2 cups enriched rice, cooked
3/4 cup cheddar cheese, Grated
6 tablespoons onions, minced

Steps:

  • In a large saucepan, saute onion and garlic in oil until onion is transparent. Add chili powder; cook for 1 minute. Add instant broth, cover the pan, and Simmer for a few minutes.
  • Next add carrots, green peppers, celery, and eggplant; cook for 5 minutes, stirring frequently.
  • Add crushed tomatoes and tomato puree; bring mixture to a boil.
  • Add water, burgundy, and hot pepper sauce; stir to combine. Cook 15 minutes.
  • Stir in kidney beans.
  • Cook the chili at least 45 minutes to an hour, or until the vegetables are tender.
  • (The longer you cook the chili, the better it will taste.) If necessary, adjust consistency by adding a small amount of water.

1 tablespoon oil or 1 tablespoon bacon drippings
1 onion, sliced

1/3 cup dry red wine
16 ounces tomatoes, whole drained
2 tablespoons chili powder
jalapenos or 1/2 green pepper, seeded chopped

1/3 lb beef stew meat, 1/2-inch cubes

Steps:

  • Combine Water and Beans inches.
  • medium saucepan and bring to bOil over medium high heat.
  • Reduce heat and simmer until tender, about 1 hour.
  • Heat Oil in large skillet over med-high heat.
  • Add Onion, Green Pepper, and Garlic.
  • Saute until tender.
  • Transfer to Dutch Oven and set aside.
  • Add Pork and Beef to same skillet.
  • Brown well.
  • Stir into vegetables in Dutch Oven.
  • Add Beans and their liquid along with Tomatoes and seasonings.
  • Mix well, cover and simmer 1 hour.
  • Add Wine and cook, uncovered, 30 minutes.
  • Season with Salt and Pepper.
  • If mixture is too liquid, stir in some of the tortilla flour paste to thicken.

KEIKO'S SPICY DYNAMITE EDAMAME

DH and I tried this last night while making sushi. We really enjoyed it and agreed it would make a great party appetizer. It was also really easy! We used canola oil and frozen edamame, microwaved per the package's directions.

black pepper, to taste
2 tablespoons sugar
4 tablespoons vinegar, white balsamic
1/4 cup oil
6 drops Tabasco sauce (we like some zing)
2 tablespoons chopped fresh parsley
1/2 cup sliced almonds
3 tablespoons sugar
1 (12 ounce) bag mixed greens
2 green onions, chopped
1/8 cup sliced red onion
1 (15 ounce) can mandarin oranges, drained

Steps:

  • For dressing, combine first seven ingredients (from salt through parsley). Whisk until well blended.
  • For glazed almonds, combine almonds and sugar in a small skillet. Heat on low and stir constantly until sugar is dissolved and almonds are well coated. Sugar can caramelize quickly and burn--watch closely.
  • Pour onto waxed paper to cool.
  • Once cooled, break into small pieces.
  • To serve the salad, combine greens, onions and mandarin oranges into a large salad bowl. Pour dressing over the salad and toss to combine.
  • Sprinkle glazed almonds on top and serve.

Fresh wild salmon, rinsed and patted dry, chopped
into about 1" pieces (1 ½ c. chopped)
Fresh bay scallops, rinsed, and patted dry (1 ½ cups)
½ c. mayonnaise, I use Best Foods
¾ t. fresh lemon juice
½ t. sugar
¼ t. toasted sesame oil
¼ t. soy sauce, I use low sodium
½ t. chili garlic sauce
3 pinches of Hon-Dashi (bonito fish soup stock granules), optional
1 ½ c. minced yellow onion
3 ½ c. thinly sliced and roughly chopped portabella mushrooms
1 t. kosher salt
*1 ½ t. cornstarch (use only if making for an appetizer)

Steps:

  • Heat oven to 350. Spray nonstick pan and sauté onions and mushrooms over medium heat. Mix together 1 cup of cooked onions/mushroom mixture, and the rest of the ingredients. Set aside. (You will have leftover cooked onion/mushroom mixture). Spread in a 7 ½" x 12" baking dish. Sprinkle with kosher salt. Bake on center rack until salmon is still a little raw. Maybe about 12- 15 min. Broil on hi on top rack for approx 5 minutes until golden brown. * Serve over buttered rice. * Serve on top of Sesame Rice Medallions for Appetizers Sesame Rice Medallions Makes 8 Cakes Combine: 3 cups cooked jasmine rice 1 T. sugar 1 T. rice vinegar 1 t. cornstarch 1 t. kosher salt 2 t. sesame seeds ( just sprinkle to coat!) Olive Oil Combine rice, sugar, vinegar, cornstarch, and salt. Scoop and press rice into an 1/8 cup or ¼ of a cup coated with non-stick spray. ( I prefer the 1/8 cup when using with the Dynamite Fish Recipe . And the ¼ of a cup when using with dips of any kind) Fill up to desired thickness. Tap cake out onto a parchment lined baking sheet. Sprinkle sesame seeds over tops, and gently press in. Heat Olive Oil in a large nonstick skillet over med.-high heat. Add rice medallions, seed side down and saute about 5 minutes. Saute both sides until golden brown. Add additional oil if needed. * Serve Dynamite Fish on top of Sesame Rice Medallions for Appetizers. Delicious with a side of any kind; seafood, soup, etc. Also great with dips, aioli sauces, spicy mustards, wasabi and soy sauce, etc. We love it with this aioli! Mmmmm.... 1 (15 ounce) can of your favorite chili
8 ounces sour cream
1 1/2 cups shredded sharp cheddar cheese
1/2 cup chopped tomato
1/4 cup chopped green onion
sliced black olives (optional)

Steps:

  • Place chili in a medium saucepan and bring to a boil.
  • Reduce heat to low and slowly stir in sour cream and cheese.
  • When cheese is melted, stir in tomatoes and onion.
  • Place in a serving dish and garnish with black olive slices, if desired.
  • Serve warm with tortilla chips.

5 Large Red Potatoes, cubed & boiled
4 Strips of Bacon, fried & chopped
1 Small Yellow Onion
1¼ Lbs. Cooked, Flaked Haddock
1 Egg, Lightly Beaten
1 Cup, Plain Bread Crumbs
2 Tablespoons, grated Parmesan Cheese
3 Cloves Garlic, Finely Diced
Sea Salt & Ground Black Pepper
3 Tablespoons Of Canola Oil

Steps:

  • Mash Potatoes in a large glass bowl. Cook Bacon & Onion in oil. Add Bacon & Onion to Potatoes. Mix in the cooked Haddock. Mix in Beaten Egg, Salt & Pepper. Cover and Chill for 2 hours. Mix Parmesan Cheese and Bread Crumbs in shallow bowl. Press Fish Mixture into 6 round patties. Heat the oil over Medium-High heat. Fry the cakes for 1 to 2 minutes until golden brown

Crust:
Crumbs from 16 graham crackers (appx 1.5 cups or 350g)
1/2 stick butter (60g)
1 tbs honey
1 tbs flour
Filling:
16 oz cream cheese (455g)
1/3 cup sugar
4 eggs
1 tsp vanilla
1 lemon: juice and grated rind
Topping:
1 pt sour cream (2 cups or 460g)
1/2 cup suger
1 tsp vanilla

Steps:

  • Crust: Mush up crust ingredients with fingers and press firmly into bottom of spring-form pan. Filling: Blend filling ingredients until smooth and creamy. Pour on top of crust and bake for 25 mins or until set at 375F (190 C) Topping: Blend topping ingredients. Pour on top of cooled filling and bake at 375F/190C for 5-8 mins. Cheesecake must set in refrigerator of AT LEAST 12 hours before it will be firm enough to slice well. If you get impatient and cut before it is completely set, the top will be runny.

salt and pepper
2 tablespoons mayonnaise
1 tablespoon maple syrup
1/2 cup Special K® Cinnamon Pecan, crushed

Steps:

  • Preheat the oven to 425 Degrees F. Line a rimmed baking sheet with foil.
  • Place the salmon on the baking sheet and sprinkle with salt and pepper. In a small bowl, stir together the mayonnaise and maple syrup, then spread on the tops of the fillets. Press the cereal on top of the mayonnaise.
