3 eggs
3/4 cup milk
3/4 cup flour
1/2 teaspoon salt
1/2 cup butter
2 ripe bananas, peeled and sliced
1/2 lemon, juice of
powdered sugar, as needed

Steps:

  • Preheat the oven to 450°F
  • Beat together eggs and milk until well blended. Add the flour and salt; stir with a fork until just combined. The batter will be a little lumpy.
  • Melt butter in an oven-proof 12-inch skillet, preferably seasoned cast iron. When the butter sizzles, add the banana slices. Pour the batter on top.
  • Place in the oven and bake for about 20 minutes, until the pancake is puffed up and golden.
  • Drizzle the lemon juice over the top, then sift powdered sugar over all. Serve immediately.
  • Variation: You may substitute 2 sliced peeled tart apples for the bananas. Saute the apple slices in the butter and season with 3 tablespoons sugar, 1/4 teaspoon cinnamon and 2 tablespoons lemon juice before adding the batter.

A variation of an original Alton Brown Recipe. This breakfast pancake is served with syrup. A 10-12 inch cast iron pan is pretty important. I pre fry up the bacon in batches and freeze in "snack size" zip locks for quicker time to the plate.

4 slices bacon, chopped into quarter inch pieces
2 tablespoons butter
1/2 cup flour
1/2 cup milk or 1/2 cup half and half milk
3 tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs
syrup, for serving

Steps:

  • Preheat oven to 400 degrees F.
  • If not already fried, fry bacon pieces until almost crispy and set on paper towel to drain. Discard bacon fat or save for another use.
  • Place butter in 10-12 inch cast iron fry pan and place in oven until just melted and then remove.
  • Combine remaining ingredients, except syrup, and mix well but do not over beat. Stir in bacon pieces.
  • Pour into the cast iron pan with the melted butter and bake in the oven for 20 minutes.
  • Remove to cutting board and cut into 4 wedges.
  • Serve with syrup.

Soufflé Pancake Recipe - (4/5) image

3 eggs separated
1/2 cup half and half
1/4 cup flour
1 pinch salt
1 1/2 tablespoons butter, melted
1 tablespoon Grand Marnier (or whatever liquor you want)
1/2 cup strawberries + 1 T. sugar (or whatever fruit you want)

Steps:

  • Preheat broiler. Beat two of the egg yolks with the half-and-half (reserve the third yolk for another purpose). Add the flour slowly, stirring just enough to combine. Stir in the sugar, salt, melted butter and Grand Marnier. Beat the separated egg whites until they form soft peaks. Fold them into the batter and gently stir in most of the berries, reserving a few to place on the pancake just before it goes under the broiler. (Bette didn't put any berries into the batter until it had cooked some; she said otherwise they sink and stick to the bottom) Heat a lightly greased 8-inch nonstick ovenproof skillet, or a heavy cast-iron skillet, over moderately high heat or until oil bubbles. Pour the batter into the pan. Reduce the heat to medium and cook until bottom of the pancake is browned and bubbles appear around the edges, for 5 to 8 minutes. Arrange the remaining berries gently on top of the batter. Place the pan 4 to 5 inches below the broiler and cook until the top of the pancake is brown and the center is just set but still soft. Gently slide the pancake onto a warmed serving place, dust with powdered sugar and whisk it to the table. Serve with more sliced strawberries and raspberries.

This is a great tasting muffins that is wonderful served with any meal. They are easy to put together and are a nice alternative to ordinary bread. Sometimes I just make them plain cheese without the dill.

3 1/2 cups flour
3 tablespoons sugar
2 tablespoons baking powder
2 teaspoons dill weed (optional)
1 teaspoon salt
1 cup shredded cheddar cheese
1 3/4 cups milk
2 eggs, slightly beaten
4 tablespoons melted butter or 4 tablespoons margarine, cooled to room temperature

Steps:

  • Preheat oven to 400.
  • In large bowl, combine flour, sugar, baking powder, dill, salt and cheese; set aside.
  • In medium bowl, blend milk, eggs and butter.
  • All at once, add to dry ingredients; stir just until moistened.
  • Spoon batter into well greased muffins pans (batter should fill muffin cups to top).
  • Bake 20 minutes or until muffins are golden.
