GUASACACA SAUCE

1 medium onion, roughly chopped
2 green peppers, seeded, deveined, and roughly chopped
2 ripe avocados, peeled and seeded
2 cloves garlic
1/2 bunch fresh parsley leaves
1/2 bunch fresh cilantro leaves
1/3 cup red wine vinegar
1 tablespoon salt, or to taste
1/4 teaspoon black pepper
1 cup olive oil

Steps:

  • Put everything except the olive oil into a food processor and process until mostly smooth. Add the olive oil in a stream with the processor running and process until smooth. Let stand at room temperature for at least 1 hour for the flavors to blend. Taste and adjust seasoning. Serve sauce at room temperature with meats, fish, or vegetable chips. If made in advance, store, covered, in the refrigerator, but bring to room temperature before serving.

2 tablespoons extra virgin olive oil
1 large sweet onion, chopped
7 ripe mangoes, cored and chopped
1 fresh peach, chopped
⅓ cup honey
15 habanero peppers, stemmed, or more to taste
¼ cup yellow mustard
2 ½ tablespoons salt
2 ½ tablespoons paprika
1 ½ tablespoons ground white pepper
1 tablespoon ground cumin
⅓ teaspoon ground allspice
¼ cup light brown sugar
1 ½ cups white vinegar
½ cup apple cider vinegar

Steps:

  • Heat olive oil in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes.
  • Combine the onion, mangoes, peach, honey, habanero peppers, and mustard in a food processor. Process until smooth; mix in salt, paprika, white pepper, cumin, and allspice. Add brown sugar; continue to process until well combined.
  • Pour mango-habanero mixture into a large saucepan. Bring to a boil. Add white vinegar and apple cider vinegar, stirring frequently until thoroughly combined. Boil until thickened, 10 to 12 minutes. Pour sauce into jars or containers.

SPICY MANGO SAUCE

Do not use a blender or a food processor to mince your mango in this recipe. There is more damage done to the cellular structure in a blender, which can create a noticeably different taste and texture. I'll always believe my spicy mango sauce tastes better because I cut it by hand.

¼ cup seasoned rice vinegar
juice from one lime
½ small Thai chile pepper, minced
1 clove garlic, crushed
1 teaspoon hot chile paste (such as sambal oelek)

  • Stir mango, rice vinegar, lime juice, Thai chile pepper, garlic, and hot chile paste in a bowl until well combined. Cover and let rest 30 minutes. Stir in cilantro.

2-1/2 pounds potatoes (about 8 medium), peeled and cut into 1-inch cubes
8 thick-sliced bacon strips
1 can (14-1/2 ounces) diced tomatoes and green chilies, drained
3 cups shredded Mexican cheese blend
4 green onions, chopped
1/3 cup chopped green pepper
1/3 cup chopped sweet red pepper
1-1/2 cups reduced-fat mayonnaise
2 tablespoons lime juice
1 teaspoon seasoned salt
1/4 teaspoon pepper
1-1/2 teaspoons chili powder
2 tablespoons minced fresh cilantro

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. , In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; set aside., Drain potatoes and transfer to a large bowl; add the tomatoes, cheese, onions and peppers., In a small bowl, whisk the mayonnaise, lime juice, seasoned salt and pepper; add to potatoes and gently stir to coat. Transfer to a greased 13x9-in. baking dish. Coarsely chop bacon; sprinkle over the top. Sprinkle casserole with chili powder., Bake, uncovered, at 350° for 25-30 minutes or until heated through. Sprinkle with cilantro. Let stand for 5 minutes before serving.

4 , ancho chile kimmy
2 tablespoons safflower oil, corn or olive oil
1 pound lean beef, cut into 1/2-inch pieces
1 medium white onion, finely chopped
2 cloves garlic (medium), finely chopped
4 medium tomatoes, peeled and finely chopped
1/2 teaspoon dried oregano (Mexican variety preferred), crumbled
1/4 teaspoon dried thyme
1 (14 1/2-ounce) can beef broth
salt and freshly ground pepper, to taste
lime wedges

Steps:

  • 1. Cut the chiles in half lengthwise. Remove the stems, seeds and ribs and discard. In a dry skillet, over medium heat, toast the chiles, turning and pressing with a spatula, until aromatic, 1 to 2 minutes. Put the chiles in a bowl and cover with hot tap water and soak 20 to 25 minutes. 2. Meanwhile, heat the oil over medium heat in a large heavy saucepan. Add the beef, and cook, stirring, until lightly browned, 8 to 10 minutes. Transfer the meat to a bowl. In the same pan, cook the onion, stirring, until softened, 3 to 4 minutes. Add the garlic, and cook 1 minute. Add the tomatoes, oregano, and thyme. Cook until the tomato juices reduce and the mixture thickens, 4 to 5 minutes. Return the beef to the pan. Reduce the heat to low, cover, and cook slowly while puréeing the chiles. 3. Put the soaked chiles in a blender, discarding the soaking water. Add 1/2 cup of the beef broth and blend as smooth as possible. Add the puree to the beef along with the remaining beef broth. Bring to a boil, then reduce the heat to medium-low, cover and simmer, stirring occasionally, until the beef is tender, about 1 hour. Serve hot with lime wedges.From "1,000 Mexican Recipes." 4 boneless skinless chicken breasts
1 1/2 cups plain breadcrumbs
1 teaspoon seasoning salt
1/4 teaspoon ground black pepper
1 cup milk
1/3 cup tartar sauce (either store bought or recipe of your choice)
4 pieces thinly sliced deli ham
4 slices swiss cheese
1/8 cup vegetable oil (for frying)

Steps:

  • Pound chicken breasts until they are 1/2" thick.
  • Mix spices with plain breadcrumbs; set aside.
  • Dust chicken with breadcrumbs, dip in milk, then dip chicken breast back in seasoned bread crumbs.
  • Heat oil in frying pan.
  • Place chicken in heated fry pan.
  • Fry breast on medium heat until golden brown.
  • Remove chicken breasts and place on heatproof serving tray.
  • Spread each breast with 1 1/2 Tablespoon of tartar sauce.
  • Place ham on chicken followed by a slice of Swiss cheese.
  • Place chicken in oven or microwave just long enough to heat and melt cheese.
  • Serve with you favorite salad or side vegetable.

CHICKEN DURANGO

Not for butter phobes! This is one of the best tasting and easiest dishes you'll ever make. I got the recipe from my friend Cindy but she doesn't know where she got it. I have yet to meet a person who doesn't love this. Serve with a big loaf of crusty bread and/or mashed pots.

1/2 cup butter, melted
2 lemons, juice of
1 teaspoon garlic salt
1 tablespoon paprika
1 tablespoon oregano
salt and pepper
4 chicken breasts, split (or a mix of legs and breasts--your choice)

Steps:

  • Mix together all ingredients except chicken.
  • Place chicken in a baking dish skin up.
  • Pour sauce over chicken and marinate for 3-4 hours.
  • Bake uncovered at 350 for one hour or so.

1 1 1 teaspoon Worcestershire sauce
1 8-ounce 1 8-ounce 8-ounce can (1 cup)tomato sauce Fresh chili pepper (optional)
1 1 1 envelope chili seasoning mix
Parsley sprig (optional)

Steps:

  • In blender container, combine pork and beans in tomato sauce, tomato sauce, chili seasoning mix, water, and Worcestershire sauce. Cover and blend till smooth. Use as taco sauce or baste over meats or vegetables during last 5 minutes of barbecuing. Heat remaining sauce to pass. Makes 2 1/2 cups sauce.
