1 tablespoon extra-virgin olive oil
2 1-pound balls prepared pizza dough, at room temperature
2/3 cup canned crushed tomatoes
3/4 teaspoon red pepper flakes
1 1/2 cups shredded mozzarella cheese or Italian cheese blend
1/2 pound sweet Italian sausage, casings removed, crumbled
1 green bell pepper, sliced into rings

Steps:

  • Preheat the oven to 450 degrees F. Drizzle the olive oil in a 10-by-15-inch baking dish or on a rimmed baking sheet. Place the balls of dough side by side in the baking dish and pinch the edges together to make one large piece of dough. Press and stretch the dough so it fills the dish. (If using a baking sheet, press and stretch the dough into a 10-by-15-inch rectangle.) Spread the crushed tomatoes over the dough, leaving a 1-inch border around the edge. Top with the red pepper flakes, cheese, sausage and green pepper. Bake the pizza until the crust is golden brown and the sausage is fully cooked, 25 to 30 minutes. Let cool slightly, then cut into squares.

1 large Spanish onion
3 tablespoons vegetable oil
2 confit duck legs
7 ounces prepared pizza dough
Semolina flour, for dusting
1/2 cup grated fontina cheese
1/2 cup crumbled goat cheese
1/4 cup pine nuts, toasted
Freshly chopped rosemary leaves
Extra-virgin olive oil, for drizzling

Steps:

  • Cut the onion into very thin slices. Put the vegetable oil and onions into a large skillet and place it over medium-low heat. Cook, stirring frequently, until the onions become golden brown and caramelized, about 30 minutes.
  • Place a pizza stone onto the floor of the oven and preheat the oven to 450 degrees F.
  • Remove the bones from the duck legs and shred the meat; set aside. Place the dough on a floured surface. Flatten it slightly, sprinkle with more flour, and roll it into a 10-inch disk. Sprinkle a wooden pizza paddle with flour and transfer the dough to the paddle. Shake the board a little to make sure the dough doesn't stick. Spread the caramelized onions to within 1/2-inch of the edge of the dough and top evenly with the cheeses, pine nuts and rosemary. Drizzle with extra-virgin olive oil and transfer to the pizza stone. Bake until the crust is brown around the edges, about 10 to 15 minutes.

1 tablespoon extra-virgin olive oil
2 garlic cloves, minced
1/8 teaspoon dried crushed red pepper
1 10-ounce fully baked thin pizza crust (such as Boboli)
1 1/2 cups (packed) grated mozzarella cheese (about 6 ounces)
1/2 cup chopped tomato
1/2 teaspoon dried oregano
2 smoked duck, chicken or turkey sausages, sliced
1/3 cup finely chopped green onions
1/2 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
Minced fresh parsley

Steps:

  • Position rack in center of oven and preheat to 450°F. Mix olive oil, minced garlic and dried crushed red pepper in small bowl. Place pizza crust on rimless baking sheet. Sprinkle grated mozzarella cheese over all but 1-inch border of crust. Top mozzarella with chopped tomato, then oregano, sliced sausages, chopped green onions and grated Parmesan, in that order. Drizzle garlic-oil mixture over pizza.
  • Bake pizza until crust edges are crisp and brown and cheese melts, about 15 minutes. Sprinkle pizza with minced fresh parsley. Cut pizza into wedges and then serve immediately.

1 1/4 cups all-purpose enriched flour
1 1/2 teaspoons active dry yeast
1 teaspoon salt
Vegetable oil cooking spray
Topping
1 pound red and yellow cherry tomatoes, halved
1/2 pound turkey sausage, cooked and thinly sliced
1 cup grated part-skim mozzarella
1 tablespoon chopped fresh basil
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon red pepper flakes

Steps:

  • Mix flour, yeast and salt in a bowl. Gradually add 1/2 cup warm (110°F) water until a soft dough forms. Divide dough into 4 portions. Using hands, roll dough into balls. Coat with cooking spray, cover with plastic wrap and set aside to rise, 30 to 45 minutes. When ready to cook, place each ball of dough on a piece of wax paper and flatten into a 4-inch circle. Coat grill with cooking spray and heat on high. Gently place dough onto grill and cook until dough puffs and underside stiffens (about 30 seconds); flip and reduce heat to low. 1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 teaspoon olive oil
1/2 pound whole-wheat pizza dough
3 tablespoons hoisin sauce
1 cup baby spinach, chopped
1/2 cup shredded part-skim mozzarella
1/2 red bell pepper, cored, seeded and diced
4 scallions, thinly sliced
2 tablespoons black sesame seeds

Steps:

  • Heat oven to 400°F. Sprinkle duck with five-spice powder, salt and pepper. Heat oil in a medium skillet over high heat. Cook duck until browned, 4 to 5 minutes per side. Transfer skillet to oven; bake duck until outside is cooked but inside is rare, 8 to 10 minutes. Cool 4 to 5 minutes. Thinly slice on the diagonal into 8 pieces, then cut each in half. Set aside. 1 pound bulk Italian sausage
1 cup pizza sauce
4 cups shredded part-skim mozzarella cheese
1 medium red onion, sliced
