2 teaspoons kosher salt, divided
2 pounds Yukon Gold potatoes, peeled and cut into large pieces
¼ cup butter
2 egg yolks
¼ teaspoon ground nutmeg
¼ teaspoon ground black pepper
1 egg
1 teaspoon heavy whipping cream

Steps:

  • Prepare a piping bag with large open star tip.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Fill a 3-quart pot with 4 inches water and 1 teaspoon salt. Add potatoes; bring to a boil. Reduce heat to low; simmer until tender, 20 to 25 minutes. Drain; return potatoes to the pot.
  • Cook potatoes over low heat until remaining water steams off, about 3 minutes. Let cool, at least 15 minutes.
  • Place potatoes in a food processor and process until smooth. Let stand for 5 minutes. Add butter, egg yolks, remaining 1 teaspoon salt, nutmeg, and pepper. Mix until just combined; spoon into the piping bag.
  • Pipe potato mixture onto the prepared baking sheet into eighteen 2-inch rosettes with a circular motion, finishing with a small peak in the center. Refrigerate until slightly firmer, about 25 minutes.
  • Mix egg and heavy cream together in a bowl; brush mixture onto the rosettes.
  • Bake in the preheated oven until golden brown, 35 to 40 minutes.

500g floury potatoes, chopped
1 large egg, separated
30g soft butter
30g parmesan ,finely grated
grating of nutmeg
vegetable oil, for the tray

Steps:

  • Cook the potatoes in a pan of boiling salted water for 15 mins until really tender when pressed into the side of the pan. Drain well and leave to steam-dry in the pan for 2 mins. Mash the potatoes until very smooth - use a ricer if you have one, or use a masher, then press the potatoes through a metal sieve to ensure they're completely lump-free.
  • Mix the egg yolk, butter and cheese in a large bowl, then add the mash, nutmeg and some seasoning. Mix well with a spatula until the butter has melted and is well incorporated. It will come away from the sides of the bowl, similar to choux pastry.
  • Heat the oven to 220C/200C fan/gas 7. Spoon the mash into a piping bag with a wide star nozzle. Line a baking sheet with baking parchment and brush over a little vegetable oil. Pipe 20 walnut-sized peaked mounds onto the prepared tray, as if you were icing a cupcake. Beat the egg white with a pinch of salt and brush the potato mounds gently, to keep the fluting.
  • Bake the potatoes for 15-20 mins until golden-brown and crisp.

2 1/2 pounds Yukon Gold potatoes (about 10 medium), peeled and cut into 1-inch pieces

3 tablespoons cold unsalted butter, plus more for parchment
3 large egg yolks, divided
1/4 cup plus 2 teaspoons heavy cream, divided
Ground nutmeg

Steps:

  • In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil; reduce to a rapid simmer and cook until tender, 15 minutes. Drain in a colander, let sit 5 minutes, then return to pot. Add butter and, with a potato masher, mash until smooth. Season with salt and pepper. Add 2 egg yolks, 1/4 cup cream, and pinch of nutmeg; stir until combined.
  • Preheat oven to 450 degrees. Line a baking sheet with parchment and lightly butter paper. Dollop mixture in 8 equal portions on sheet, 2 inches apart. Using the back of a spoon, create a small well in the center of each. Freeze until firm, 15 minutes. Whisk together remaining egg yolk and 2 teaspoons cream. 5 pounds russet potatoes, peeled and diced, and boiled until fork-tender
8 egg yolks
1 stick butter, softened
Salt and freshly ground black pepper
Salt and freshly ground black pepper
Nutmeg
1 1/4 cup heavy cream
1 whole egg

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicon baking mat.
  • Lay the boiled potatoes on a baking sheet and place into the oven until slightly dried on the surface, 10 to 15 minutes.
  • Remove the potatoes from the oven and process through a ricer or food mill. Allow to cool in a bowl for about 5 minutes.
  • Add the egg yolks, butter, a couple generous pinches of salt, a generous pinch of pepper, a pinch of nutmeg and 3/4 cup cream. Stir with a rubber spatula to combine. Taste and make sure the potatoes have been adequately salted.
  • Transfer to a large pastry bag and pipe through a large star tip in a circular/upward spiral motion onto the prepared baking sheet.
  • Make an egg wash by mixing the whole egg with the remaining 1/2 cup cream. Lightly brush the piped potatoes with the egg wash. (This is a little easier if you chill the piped potatoes for half an hour or so.)
  • Bake until golden brown around the edges. Serve on a pretty platter!

Use only russet potatoes for this, and only butter not margarine! If you do not have a pastry bag, just drop 12 mounds onto baking sheet and swirl with a spoon to create a desired pattern.

3 lbs russet potatoes, peeled and quartered
2 large eggs (or use 2 extra large eggs, or use 3 medium eggs)
7 tablespoons melted butter, divided (no subs!)
1 pinch dried dill
1 pinch garlic powder (optional)
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons grated parmesan cheese
4 tablespoons 18% table cream (you may have to use more cream if needed)
1/2 cup melted butter
1 -2 dash paprika (optional)

Steps:

  • Cook the potatoes in boiling water until fork-tender (about 25 minutes) drain and place in a large mixing bowl.
  • Cool the potatoes for about 20 minutes at room temperature.
  • Add in eggs and 7 tablespoons melted butter, pinch dill, pinch garlic powder, salt, pepper and parmesan cheese; add in 3 tablespoons cream adding in more to achieve desired consistency (you might use up to 7 tablespoons cream).
  • Season with more salt and pepper if needed to taste.
  • Spoon the potato mixture into a pastry bag fitted with a large star tip.
  • Pipe the mixture into 12 mounds onto a large greased baking sheet/s.
  • Melt the 1/3-1/2 cup butter and drizzle over the potatoes.
  • Sprinkle a very small amount of paprika over each mound (this is only optional).

Steps:

  • Place potatoes in a large pot and pour in water to cover by 2"; season with salt. Bring to a boil over medium-high. Reduce heat and simmer until a paring knife very easily slides through potatoes, 25-35 minutes. Drain and let cool slightly.

water (to boil potatoes)
6 large egg yolks, at room temperature
6 Tbsp unsalted butter, cut into 8 cubes, at room temperture
1/4 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/8 tsp ground nutmeg
1/2 cup finely grated swiss cheese

Steps:

  • 1. Preheat the oven to 400°F. Line 2 baking sheets with parchment paper; set aside.
  • 2. Place potato chunks in a large saucepan and add 2 inches of cold water. Bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes or until potatoes are tender when pierced with a fork.
  • 3. Drain water, then return potatoes to pan and mash with a potato masher until smooth and no lumps remain.
  • 4. While mashed potatoes are still a little warm, stir in the yolks, one at a time, and stirring after each addition. Add the butter, cream, salt, pepper and nutmeg. Stir until the butter melts and the potato mixture is smooth and there are no lumps.

1 (24 ounce) package Simply Potatoes Sour Cream and Chive Mashed Potatoes (unheated)
3 eggs
3/4 cup finely shredded cheddar cheese, divided use
1/4 cup fresh chives, cut into 1-inch pieces

Steps:

  • Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. 3 lbs baking potatoes, scrubbed
4 tablespoons unsalted butter, softened
3 large eggs
1/2 cup half-and-half or 1/2 cup milk
1/3 cup freshly grated parmesan cheese, plus
2 tablespoons freshly grated parmesan cheese
freshly grated nutmeg
white pepper
salt
melted unsalted butter, for drizzling over the potatoes

Steps:

  • Bake the potatoes in a preheated 400 degree oven for 1 hour or untilthey are tender.
  • Halve the potatoes lengthwise, scrape the flesh into a bowl.
  • Press through a ricer or sieve into a large bowl.
  • With and electric mixer beat in the butter, 1 tablespoon at a time.
  • Add the eggs, 1 at a time, mixing between.
  • Add half and half and beat the mixture until it is combined well and smooth.
  • Add 1/3 cup parmesan.

  • 1. Place potatoes in a large pot and fill with cool water. Add 1 teaspoon salt. Bring to a boil over medium heat. Reduce and simmer until very tender. The potatoes should fall apart when pierced with a fork or knife. Drain very well. Place drained potatoes back on the stove over medium low heat for 2-3 minutes to finish cooking any moisture out. Stir often so they don't burn to the bottom of the pan.
  • 2. Mash potatoes very well with a handheld potato masher. Add 1/2 teaspoon salt, butter, cream, pepper, Parmesan and cheddar; stirring well to combine. Let mixture cool for 5-7 minutes.
  • 3. Quickly stir in the egg yolks mixing just until combined. Don't overdo it.
  • 4. Scoop the mashed potatoes into a large piping bag fitted with a large star tip. Pipe 12 (about 1/2 cup) mounds of the mixture onto large baking sheet covered with parchment paper leaving room between them.
  • 5. Refrigerate for 30 minutes.
  • 6. Preheat oven to 425 degrees. Beat egg and water until combined. Lightly brush over the potatoes. Bake for 18-20 minutes or until golden brown. Garnish with grated parmesan and chives.

12 medium potatoes, peeled
1 cup milk
1/2 cup butter
1/2 teaspoon salt
1 dash pepper
4 eggs, beaten

Steps:

  • Cut potatoes into large pieces if desired.
  • Heat 1 inch water to boiling in Dutch oven.
  • Add potatoes.
  • Cover and heat to boiling; reduce heat.
  • Cook whole potatoes 30 to 35 minutes, pieces 20 to 25 minutes, or until tender; drain.
  • Shake pan gently over low heat to dry potatoes.
  • Heat oven to 425ºF.
  • Grease cookie sheet.
  • Mash potatoes until no lumps remain.
  • Beat in milk in small amounts.
  • Add 1/2 cup butter, salt and pepper.
  • Beat vigorously until potatoes are light and fluffy.
  • Add eggs; beat until blended.
  • Drop potato mixture by 12 spoonfuls into mounds onto cookie sheet; or place in decorating bag with star tip and form rosettes or pipe a border around meat or fish.
  • If cooking now, brush with melted butter and bake about 15 minutes or until light brown.
  • If making ahead, do not add the melted butter until ready to bake; cover and refrigerate up to 24 hours; bake 20 to 25 minutes or until light brown.

  • 1) Preheat oven to 350°. 2) Peel, chop and boil potatoes. Drain water from potatoes. Add butter and salt, and mash until lumps are gone. 3) Beat together cream cheese and sour cream. 4 tablespoons unsalted butter
3/4 cup low-fat sour cream
2 egg yolks
1/2 cup fresh chives, chopped

  • Preheat oven to 400F degrees. Coat baking sheet with cooking spray.
  • In large pot, add potatoes and enough water to cover them. Bring to a boil. Reduce heat to medium, and cook 10 minutes, or until soft. Drain.
  • Mash until smooth (I like using my mixer to do this). Stir in butter and sour cream. Add egg yolks and chives. Season to taste with salt and pepper.
  • Scoop potatoes into a pastry bag fitted with a star tip. Pipe 8 swirled ovals into the prepared baking sheet.
  • This can be refrigerated at this point until ready to bake.
  • Bake 25-30 minutes, or untl the edges start to brown.

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain.
  • Over very low heat, stir potatoes for 1-2 minutes or until steam has evaporated. Press through a potato ricer or strainer into a large bowl. Stir in the egg yolks, milk, butter, salt, pepper and nutmeg.
  • Using a pastry bag or heavy-duty resealable plastic bag and a large star tip, pipe potatoes into six mounds on a parchment paper-lined baking sheet. Brush with beaten egg. Bake at 400° for 20-25 minutes or until golden brown. Yield: 6 servings.
