Drunken Chipotle Meatballs image

This a great main dish which I did. It is a little spicy and the whiskey gives it a great taste and makes the meat balls very juicy. (Use your favorite whiskey; my fave, McALBERT, is a Dominican whiskey!)

MARIA'S GREEK DRUNKEN MEATBALLS

Maria's Greek Drunken Meatballs image

Keftedes (Greek meatballs) is a famous Greek appetizer, commonly served as part of a meze platter, along with lemon wedges like in my picture. This picture was taken when we had a few friends over and enjoyed a meze night. Any way you choose to cook these meatballs (fried or baked or grilled) they're always wonderfully delicious...

Categories     Meat Appetizers

Time 55m

Number Of Ingredients 11

2 lb ground beef (orhalf beef & half pork
3 Tbsp ouzo
2 Tbsp vinegar
4 slice day old bread, crusts removed, soaked in water and then squeezed to remove liquids or 1/2 cup breadcrumbs
2 Tbsp parsley, finely chopped
5 Tbsp mint, finely chopped
2 onions, finely chopped or grated
1 large egg, slightly beated
salt & pepper
olive oil for frying
some whit flour for dredging if frying

Steps:

  • 1. In a large bowl add the ground meat and pour the vinegar and ouzo. The vinegar and ouzo break down the meat fibers and soften the meatballs.
  • 2. Make a hole in the center of the mixture. Grate the onion directly into the mixture as it needs all the fluids. Add the breadcrumbs, egg, herbs, salt & pepper
  • 3. Knead the ground meat mixture very well, until there are no lumps..Cover and leave in the fridge for at least30 minutes to an hour. The more you leave it, the more delicious the meatballs will taste. Take 2 Tbsp of the mixture and roll into meatballs. Repeat the process with the rest of the mixture.
  • 4. At this point, you decide to either fry or freeze and then bake or grill.
  • 5. If frying roll the shaped meatballs in flour, make sure to toss off the extra flour and then pan fry or dep fry in batches until well browned. Drain on kitchen paper towel. Serve hot with half a lemon wedge on the side.
  • 6. I usually freeze my meatballs. That way I always have these tasty treats ready to be enjoyed. If you want to freeze place meatballs on a cookie sheet, making sure they don'tstick together cause once frozen it will be hard to separate them.t and freeze. Once frozen take out and separate & place in poly bags & store in freezer.
  • 7. When needed take out of the freezer and bake or grill without thawing or dredging in flour., about 15 minutes. These meatballs can be eaten as a main dish, cooded in tomato sauce with any pasta you like or mashed potatoes.
  • 8. A quick, easy and tasty treat to enjoy with family and friends. Serve with a couple of lemon slices on the side with other mezedes (appetizers) accompanied with Tzatziki dip and Greek Village salad. KALI OREXI: ENJOY!!!

RICOTTA POLENTA WITH DRUNKEN MEATBALLS | SERVING DUMPLINGS

Ricotta Polenta with Drunken Meatballs | Serving Dumplings image

30 minutes. Meatballs simmered in a hearty brown beer gravy with caramelized onions and served over creamy ricotta polenta.

Provided by @MakeItYours

Number Of Ingredients 23

200 g (7 oz) instant polenta
500 ml (2 cups) chicken broth
500 ml (2 cups) whole milk
200 g (7 oz) whole milk ricotta
80 g (2.8 oz) grated Parmesan
2 tbsp unsalted butter
salt and black pepper, to taste
500 g (17.6 oz) ground meat, I used 70% pork with 30% beef
1/2 tsp each: salt, black pepper, sweet paprika, cayenne pepper, garlic powder, onion powder
1/4 tsp nutmeg
1 egg
2 tbsp breadcrumbs
2 medium onions, thinly sliced
3 garlic cloves, minced
250 ml (1 cup) brown beer (use a dark beer with dominant malty sweet flavors)
250 ml (1 cup) chicken broth
3 tbsp olive oil
3 tbsp unsalted butter
1 tsp mild mustard
1 tsp each: black pepper, dried oregano, dried thyme
2 tbsp flour
chopped chives, for serving
salad, roasted broccoli or green beans, for serving

Steps:

  • Let me guide you through the recipe with this step-by-step VIDEO.
  • Combine all the ingredients for the meatballs in a large bowl. Mix until just combined, using your hands. Roll the meat into 2 tablespoon-size balls.
  • In a large non-stick skillet, heat 1 tbsp butter and 2 tbsp olive oil over medium heat. Add the meatballs and brown on all sides, about 10-12 minutes or until they're cooked through, turning them 2-3 times. Transfer to a plate.
  • In the same skillet, add 1 tbsp oil and 2 tbsp butter. Cook onions for 5 minutes over low heat. Add garlic, cook for 2 minutes. Stir in black pepper, oregano, thyme and flour. Allow the flour to cook for 1 minute, stirring constantly. Pour the brown beer and chicken broth, then stir in the mustard. Bring the sauce to a boil.Slide the meatballs back and all of their released juices into the skillet. Add salt and pepper to your own taste. Simmer over low heat while you make the polenta.
  • In a saucepan, bring chicken stock and milk to a boil. Slowly whisk in the polenta, stirring continuously, about 2-3 minutes, over low heat. Turn off the heat. Stir in ricotta, parmesan, salt and black pepper. Add butter and stir to combine. Cover and let stand for 1 minute. If the polenta thickens too much, thin with some additional milk or chicken stock. Add more salt and pepper, if needed.
  • Divide polenta over bowls, top with meatballs and gravy. Serve with chopped chives, a salad or roasted broccoli. Enjoy!
