CRANBERRY BREAD WITH DRIED CRANBERRIES

Here is an easy recipe for cranberry bread with dried cranberries. Dried cranberries tend to be sweeter than fresh or frozen cranberries so this recipe helps to create a delicious sugary cranberry bread.

2 Cups Flour ((all purpose flour))
1 1/4 Cups Light Brown Sugar ((packed cup))
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder ((aluminum free))
1/2 Teaspoon Salt
8 Tablespoons Unsalted Butter ((melted))
2 Large Eggs ((lightly beaten))
1 Cup Cranberry Juice ((or you can use milk if you do not have any cranberry juice))
1 Teaspoon Vanilla Extract
1 Cup Dried Cranberries

Steps:

  • Preheat oven to 325 degrees F.
  • Grease bread pan, line the bread pan with baking parchment paper or use a good nonstick bread pan in order to prevent the cranberry bread from sticking to the bread pan during the baking process.
  • Stir dry ingredients (flour, sugar, baking soda, baking powder & salt) together in a large mixing bowl
  • Soften butter in a microwave.
  • Lightly beat eggs.
  • Mix the butter, eggs, milk & vanilla extract together in separate mixing bowl.
  • After mixing the wet ingredients, add them into the large mixing bowl with the dry ingredients. Stir with a large spoon or whisk until the batter is fully mixed.
  • Add the dried cranberries after the batter has been completely mixed. Stir them into the batter with a wooden spoon. Make sure the cranberries are evenly spread throughout the batter.
  • Pour finished batter into the bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 65-70 minutes.
  • Take out of oven and let the cranberry bread cool down in the bread pan for 10 minutes. Do not remove the cranberry bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the cranberry bread from the bread pan. Use oven mitts. Place the cranberry bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the cranberry bread and the bread pan walls if the cranberry bread is stuck in the pan.

1 1/2 cups boiling water
2 bags (5 oz each) dried cherries
1 cup packed brown sugar
1/2 cup butter or margarine, softened
2 eggs
1/2 teaspoon almond extract
1 3/4 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups slivered almonds
1/2 cup powdered sugar
1/4 teaspoon almond extract
1 to 2 teaspoons milk

Steps:

  • In medium bowl, pour boiling water over cherries; let stand 20 minutes. Drain. Heat oven to 325°F. Spray 9x5-inch loaf pan with baking spray with flour.
  • In large bowl, beat brown sugar and softened butter with electric mixer on medium speed until well blended. Beat in eggs and 1/2 teaspoon almond extract until mixture is smooth. Stir in flour, baking powder and salt just until dry ingredients are moistened. Stir in almonds and cherries; mixture will be thick. Spoon into pan.
  • Bake 60 to 70 minutes or until toothpick inserted in center comes out clean and top is dark golden brown. Cool 10 minutes on cooling rack. Loosen sides of loaf from pan; remove from pan, and place top side up on cooling rack. Cool completely, about 1 hour.
  • In small bowl, mix glaze ingredients until smooth. Drizzle over cooled bread. Wrap tightly; store at room temperature. Cut loaf into 12 slices; cut each slice in half.

1 ½ cups cranberry juice cocktail
1 cup water
1 cup light brown sugar
1 cinnamon stick, broken in half
¼ teaspoon ground allspice
6 ounces dried cherries
1 (12 ounce) package fresh cranberries

Steps:

  • Stir the cranberry juice cocktail, water, brown sugar, cinnamon stick, and allspice together in a saucepan; bring to a boil. Add the cherries to the cranberry juice mixture; cook another 2 minutes. Add the cranberries; continue cooking, stirring occasionally, until the cranberries pop, about 10 minutes. Remove from heat and chill in refrigerator 8 hours to overnight. Remove and discard cinnamon stick before serving.

Plan ahead - the cherries need to soak at least three hours or overnight. NOTE: If you prefer, you can use cherry or orange juice instead of using the liqueur.

1 cup dried cherries (or dried cranberries)
1 1/2 tablespoons cherry flavored liqueur (such as Kirsch or Grand Marnier) or 1 1/2 tablespoons orange-flavored liqueur (such as Kirsch or Grand Marnier)
1 tablespoon hot water
plain breadcrumbs, for dusting pan
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3 ounces cream cheese, softened
1/2 cup light brown sugar, firmly packed
2 tablespoons granulated sugar
1 lemon, zest of, finely grated
2 large eggs

Steps:

  • Place cherries (or cranberries) in a container with a very tight fitting lid.
  • Pour liqueur and hot water over the cherries, seal the lid tightly, and shake to coat cherries well with the liquid.
  • Set aside 3 hours or overnight so cherries will absorb the liquid.
  • Preheat oven to 350 F (or 325 F for a pan with a black surface).
  • Grease a loaf pan and lightly dust with plain dry breadcrumbs, shaking out excess.
  • Sift together the flour, baking powder, and the salt.
  • In another bowl, cream the butter and the cream cheese until smooth.
  • Add the sugars, and the finely grated lemon zest and beat until well combined and pale yellow.
  • Beat in eggs, one at a time.
  • Add the flour mixture, beating on low speed, just until the flour is combined.
  • Stir in the cherries and any liquid still in the soaking container.
  • Pour batter into the pan and smooth top with a rubber spatula.
  • Bake in the center of the oven for 45-60 minutes- or until a toothpick insterted in the center tests clean, checking as early as 40 minutes into the baking time- if it is getting too brown, cover loosely with foil and continue baking until the toothpick tests done.
  • Expect the top of the loaf to crack.
  • Let cool in the pan 15 minutes, then remove from pan and set onto a wire rack to cool completely.
  • Wrap in plastic and let set overnight before slicing.
  • For extra decadence, drizzle a little more liqueur over the crack before wrapping in plastic- don't pour too much or you'll soak the bread.

I was looking for a muffin or quick bread recipe that called for yogurt but all were a bit too wholesome for me so I dreamed up this dried cherry bread. But at least I kept the oats! I am sure this batter could be used to make muffins too. A streusel topping or powdered sugar glaze would be extra naughty and extra good too but I didn't want to be too naughty.

½ cup dried cherries
2 eggs
¾ cup white sugar
½ cup vegetable oil
¼ cup melted butter, cooled
¼ cup buttermilk
1 (6 ounce) container cherry vanilla-flavored yogurt
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 cup instant oatmeal
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup white chocolate baking chips, lightly dusted with flour

Steps:

  • Pour boiling water over dried cherries in a bowl and let sit to plump up for 15 minutes. Drain.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Beat eggs lightly in a bowl. Add sugar, oil, butter, buttermilk, yogurt, and vanilla extract. Whisk well.
  • Combine flour, oatmeal, baking powder, baking soda, and salt in a separate, larger bowl. Whisk well. Add egg mixture, white chocolate chips, and cherries. Stir just until combined. Don't overmix. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 minutes to 1 hour, checking at 35 minutes to account for different ovens. If bread begins to brown too much, lightly cover the top with aluminum foil. Let set for 5 to 10 minutes in the pan before inverting loaf onto a wire rack to cool completely.

1 12-ounce package cranberries
1/4 teaspoon (generous) ground cloves

Steps:

  • Bring cider to simmer in heavy, large saucepan. Remove from heat. Add cherries and let stand 8 minutes. Mix in sugar, then cranberries and cloves. Cook over medium-high heat until cranberries burst, stirring occasionally, about 9 minutes. Refrigerate until cold, about 4 hours (sauce will thicken as it cools). (Can be prepared 4 days ahead. Cover and keep refrigerated.)
